Did a 20 minute at home workoutAnd went for a chilly run.  Brr, it got chilly again here!

Ran errands, including a trip to TJ’s to replenish some produce…

And I made another Cheezy Vegetable Bake
This time I used some 99 cent store brand soup + a 1/2 can of water
I added Brussels spouts in addition to the other veggies
I baked it at 400F for 60 minutes
And it worked perfectly.   And a shoutout to Jenny who just made and enjoyed her version of my original recipe.  Thanks chica!

Cheezy Vegetable Bake

 

Can of Lite Italian Style Vegetable Soup
 I am all about using what I have on hand that’s taking up space in my cupboards.  Or things in the refrigerator produce drawer that need to be used up.

After an hour at 400F, here was the cheezy goodness

The liquid at the bottom sort of “absorbs” into the veggies in anything that becomes leftovers.

This recipe does make leftovers.  Planned leftovers that can be reheated in the micro are a working mom’s saving grace.

And I imagine you could freeze these in single serve containers in the freezer and thaw/reheat as needed.  Better than a TV Dinner, for sure.

As long as you’re roasting veggies, you could always roast some Roasted Peanut Butter Coconut Ginger Carrots

From my last post, thanks for letting me know if you’re good at remembering birthdays or not.  And if anyone special has ever forgotten yours.

And it was great to hear the nice stories about your friends and connections you’ve made over the years.  Sometimes friends come into our life right when we need them, or they need us, and those bonds are deep, special, and always treasured.  I loved hearing your stories.

Questions
1. Do you like the feeling of being productive and checking things off your to-do list?
I do!  I love it, actually! 

Accomplishing things and being productive is just the way I am wired.  To do otherwise is just against my nature.  No grass grows under me.

2. Do you keep or write to-do lists?  And on paper or electronically?
I see many bloggers share their to-do lists on their blog.  I never write a to-do list down.  I keep it all filed upstairs.  Which may or may not be the best way, but so far, so good, and it works for me.

And I also never, ever would be able to get into having an electronic to-do list, i.e. on an iphone, blackberry, computer, etc. 

If I were to make a list, it’s the old fashioned way with a pen and paper.  I don’t have time to type a list or enter into int a digital device.  That just seems like more work to cross off the list…haha!

3. What’s made you smile today?
Seeing Skylar happy always makes me smile.

  1. I love being productive, it takes my stress away :) Yes I have a million to do lists and I have to combine them b/c that drives me crazy too. I smiled today becase I took a 1/2 day off of work! AHHH..that made room for some productivity!
