Chipotle Salsa Lentils with Mixed Vegetables

After a tear-jerker post about a deceased relative I miss

…and a post about Va-ja-jays and ta-ta’s

…it’s time to get back to some regularly scheduled programming.

Here’s a one pot, gluten free, vegan meal recipe that is ready in less than 30 minutes, makes planned leftovers, costs next to nothing, and is hearty and satisfying.  How’s that for killing seven two birds with one stone?

Chipotle Salsa Lentils with Mixed Vegetables

Ingredients

1 c dry Lentils

1.5 c Salsa (I used a small jar of Pace)

1 Tbsp Chipotle seasoning (I used Mrs. Dash)

1 Tbsp Sugar (optional)

1 c diced Vegetables (I used carrots and broccoli stalks)

Directions

Cook 1 cup dry lentils with 2 cups water on stovetop (Bring the lentils and water to a boil, then cover and reduce heat).  Simmer for about 15 minutes, or until about 85% of the water has been cooked off.

Add the remaining ingredients.

Stir, cover, and cook for another 10-15 minutes.

Serve.

Here’s a visual guide of the process

Add everything else, stir, simmer (covered) for 10-15 minutes

Plate & Serve

This was easy, fast, cheap meal when served next to a fresh green salad.  Filling, hearty, satisfying.  30 Minute Meals anyone?

The salsa was a nice way to season the lentils because on their own, I find lentils to be quite bland and can even be “earthy” tasting.

Scott had no idea he was eating lentils.  His comment, “Whatever that was that you made was actually good.”  He grew up a meat and potaotes guy so the fact that he dines on nooch (15 recipes here), raw vegan chocolate mousse made with avocado, and lentils, well, he’s come a long way.  I’ll take an “acutally good” any day.

If you’ve never cooked with lentils before, just make sure to not overcook them.  Red lentils cook very fast and can turn to mush easily and you can end up with (unplanned) lentil soup on your hands, quickly.

Green and black lentils take longer to cook, but this whole meal, from start to finish, was done in 30 minutes.

The added veggies gave some color, a bit of extra texture and crunch, and more fiber.  Not that the lentils on their own are hurting in the fiber department.

And planned leftovers are music to my working mommy ears.

From my last post about going to the doctor, specifically going to the gyno, thanks for chiming in about your own experiences with going and with monthly self-breast exams.  Not exactly on the top of everyone’s to do list, but as I mentioned, it’s one aspect of staying healthy.  Being proactive about our health and preventative care just makes sense to me given how much we all care about other aspects of healthy living like food and exercise choices.

Maybe you’d like to wash your lentils down with brownies.  I know some people who’ve tried beans or lentils in their brownies.  I haven’t gone that far, yet.

Raw Vegan Brownies are as far as I’ve gone.

Questions:

1. Do you like lentils?

I used to love buying lentil salads at WFs.  Haven’t wasted money like that done that in years, though.  I just make my own now.

2. Favorite way to prepare them?

I don’t cook with them that frequently but I need to start using them more because this was a fast, family-friendly, cheap, vegan meal.

Christine has been sprouting them.  That’s next on my to-try list.

3. Anything fun or exciting happen for you today?

I got a package in the mail I was waiting for.  Will be posting about it, soon.

    One-pot meals are the best! They make student life so much easier:) Slash lentils are one of my favorites, I love making a big pot of them and storing them in the fridge (plain) and then doing single servings when I want them and mixing with salsa, marinara sauce, applesauce, or balsamic vinegar and then mixing with a grain and some raisins. It’s my favorite combo!:)

    Haven’t had lentil salad in ages; now I want one. So expensive to buy pre-made, but so cheap and easy to fix at home. Must do.

    Usual Thursday schedule for me: Boot-camp this morning, some time at home, then work this afternoon. Which may or may not be fun and exciting; we’ll see!

    I’ve only made lentils once, haha. Yeah, I suck. Soaking/cooking things for that long both intimidates and bores me…I’ve heard you can get them canned though? Maybe I should try that…

    YESTERDAY I had something exciting to me…dinner at Candle. Can never have too much dessert from that place!

      I didnt soak. I opened a package, poured them into the water, boiled, and in 30 mins, the entire meal was ready!

    I love lentils too, but always seem to forget about them when I think of something to cook, thanks for the reminder sounds yummy!! I don’t think I have tried mexican flavors. I tried your vegan slaw dressing it reminds me so much of broccli salads which I no longer eat bc of the bacon and non vegan dressing.

    I cooked lentil burgers a few years back. They took hours from start to finish and were less than delicious. I should try again some time with a different recipe.
    This 30-minute meal of yours looks wonderful. My husband is a lot like your husband. He threw me for a loop last night–He thought “risotto” was an ingredient that goes IN the risotto. haha We gotta love those meat-loving guys for all their effort! :-D

      yes super fast.

      nothing like making lentil or bean burgers which ive tried in the past….they take forever and the taste was sub-par for the hubs and for me, i dont like burgers enough to care :) we’re on the same wavelength with the burgers.

    You know, I’ve NEVER made lentils…gasp!

    Ill have to put this on my “To Do” list :) But – I did make the mango dish last night for dinner….YUM! My (almost) 8 year old gobbled it up…but my 4 1/2 year old didn’t really touch it. Getting her to eat a more vegan diet has been a challenge. But, I’m sure when she’s 100 years old with the energy of a 30 year old, she’ll thank me :)

    Oh and something exciting about today? (Just in…) My 4 1/2 year old showed me that she finished her spinach, mixed berry, and banana smoothie :) THAT’S exciting :)

    I got a package too! I’ve been a good girl and didn’t splurge on January sales, I bought just a couple of real practical el cheapo items (patting my own back) so I got a 50% reduced bag from the internet. Leather, should last a while, and in the cheap end even before reductions, so I’m ok with that. Plus I found a place that sells most of the health stuff I buy, like ghee and tofu, which I usually pick up from all over the place, plus they ship for free if I order more than a pretty small amount, so double whammy in the mail! Groceries delivered to the door plus something I’ve waited for years to buy = thursday bliss.

    Big event at work today, so I’ve been here for a couple of hours and staying until tonight. Right now it’s quiet before the storm…

    Love lentils! I just can’t tolerate them right now, so I prefer not to think about my favorite way of eating them, haha ;-)

    one pot meals = a big hit for me! :-)

    i love lentils. i used red ones in soups (my apricot lentil soup is a hit with my husband) and the green and brown ones in cold salads. I have to, have to try a warm brown/green lentil dish. Mama Pea posted her lentil sloppy joes recently and OMG they look AMAZING!

    here’s a neat saying: instead of “kill two birds with one stone” say “feed to birds with one scone”. ;-)

    anything exciting happen to me today? well, it’s still to early to tell! yesterday was awesome: spent the morning outside in the sun (trudging through a foot of snow and -20C weather) but saw mini horses, which made me SMILE!

    I’m not super into lentils. I like the red ones that get all mushy. BUt, I am way into chipotle and southwestern anything and everything. I need that Mrs. Dash!

    I loved your post on the gyno FYI. I go every year, and I was shocked a ouple yrs ago when they told me that they don’t do breast exams anymore! WHAT?!?!?! Nope – not for women under 30. Stupidest thing I have ever heard.

      these are NOTHING like red. I hate red b/c i hate mush and i think red turns to mush in a heartbeat.

      the recommendations for paps and breast exams have been altered and changed so many times in recent yrs. There was a huge bru haha over pap and breast (both mammogram and self check) recommendations. Just about the time women were truly getting on board with it all…20+ yrs in the making of advocating screenings, they said….we dont need to do it as often. Major set back IMO…common sense must prevail!

    I’ve only ever had & cooked red lentils. But I would be willing to try the other kinds.
    Haven’t tried sprouting them, but do sprout other things, so that seems like it would be good to try.

    HI! I’ve missed your posts! This looks totally delicious! I love using salsa as a sauce and seasoning device for bean or bean and rice dishes! This looks fantastic!     I’ve never cooked lentils but I actually just bought the same bag you have pictured. I bought them for a recipe of ‘snobby joes’ but, I may be more inclined to try your one pot meal instead! I def don’t like mush foods, so that makes me a touch nervous.

    I love one-pot meals; Phil doesn’t though. I love to sprout lentils: it’s so easy to do, they love to sprout! Even if you’re cooking them, I think it’s worth doing–makes the nutrients more available, removes the phytase-inhibitors, they cook faster, etc…

    Being Middle-eastern, lentils are totally up my alley–unfortunately, I think they may hurt my my tummy last few times I’ve tried (cooked anyway–sprouted raw seems ok, but not as tasty)–but black beans, white beans, etc, are great.

    That’s cool that you can insert a ‘printer friendly’ version right into your blog post!

    This looks like a great fast meal, lentils are one of my fave ingredients for busy weeknights. Awesome job! True on leftovers, I had my leftover lentil stew for lunch today.

    1. Yes, very much so because they’re so cheap and versatile.
    2. Thanks for the shout out, sprouting them was fun. :-) Also in stews and I’ve yet to try them in homemade lentil burgers.

    Lentils!!! Yum! I love them….and your salsa/chipotle idea….I have some Chipotle Mrs. Dash in my cupboard…I like to use it in my raw dehydrated crackers…
    I like green, red or brown lentils….I just ate some tonight using Sue Gregg’s recipe for Lentil Rice Casserole..find it here..http://kitchenmixers.com/blog/?p=4
    I just leave out the cheese…
    I like to make a salad sprout mix with red and green lentils, alfalfa, broccoli and radish sprouts. I just make a mix of them in keep it in a ball jar in the fridge…One T. sprouts about 1 1/2 c. sprouts.
    I sprout the green ones and make a recipes from The Complete Book Of Raw Foods for Lentil Salad.
    The red ones are mushy but I like them and make a soup with them…I add 2 cans of green chilies, red bell peppers, shredded carrots, onion, garlic, salt…and some brown rice pasta for the last 8-10 mins of cooking~you could use brown or green ones with this recipe.

    This was delicious! I really enjoy lentils but haven’t had any recipes that were very exciting. This was full of flavor and the hubs really liked it too!
    I am a little bummed because I was going to make the carribean PB rice dish but made this one instead because I couldn’t find the carribean citrus mrs dash at the grocery store (I went to about 5 different places none the less!). I now will have to wait since I think I will have to order the mrs dash onlilne!
    I also made the raw vegan chocolate chip cookie dough balls – love them! No one could have just 1.

      So glad you made this and really enjoyed it and also the cookie dough balls, too! Yay for two successes!

      As for the arribean citrus mrs dash…don’t go out of your way for it, seriously. ANY SEASONING blend will do. Really, it’s not a biggie. The original Mrs. Dash or really any garden-variety McCormick’s, TJ’s 21 Salute seasoning, or any seasoning blend that’s not ridiculously potent with garlic or onions (and don’t pick an Indian seasoning, i.e. no curry) but aside from that, just use whatever. Don’t let the seasoning stand in your way of making the recipe!
