Eating the Rainbow Recipes
Eating the rainbow does a body good. At least that’s what they tell us. Here are some rainbow themed recipes.
Orange: Roasted Sweet Potato Fries
Yellow: No-Bake Peanut Butter Chocolate Chip Protein Bars (Vegan, GF)
The recipe uses mashed ripe bananas which seem to get ripe so fast in the warmer months.
Green: Cheater’s Guacamole
Blue: Microwave Blueberry Banana Oat Cakes
3 minutes to make, vegan & GF.
Purple: Ginger Roasted Potatoes
Brown: Yes, brown is in my rainbow.

And speaking of Rainbows, I am excited because Pride in San Diego is in mid-July which will be here before I know it. It’s such a fun weekend!
From my last post Knock It Out & Pileups, it seems that most of you dislike the feeling of letting tasks and chores accumulate and pile up as much as I do. It seems to invoke stress and anxiety in most of us when there’s more tasks and items to accomplish than time in which to do them. But, such is life and the best we can do is try to remain calm.
I’m glad you’ve been knocking out some items from your to-do list lately, though.
Questions:
1. Do you try to eat the rainbow?
Plants have so many vitamins, nutrients, minerals, and trace elements in them and I just feel so much better when I am eating an abundance of fresh, mostly raw, fruits and veggies. I can just feel the goodness entering my cells.
If I am low on eating my rainbow-colored foods and am eating more, ahem white or brown foods, I definitely feel a difference in my energy, moods, and just the overall vibe and am reminded to get back to eating more rainbow-colored foods.
2. What rainbow-colored food or recipe have you enjoyed lately? What color is your favorite to eat?
I think reds and greens are my favorite colors to eat. From juicy red fruits like strawberries and watermelon to red pepper and tomatoes, reds rock.
Greens are probably the most beneficial color for our bodies, in my opinion. Everything from greens leafies, lettuces, kale, chards, cucumbers, broccoli, peas, green beans, sugar snap peas, peapods, and so many more; the green family is probably the biggest and the best for us.
3. Any non-rainbow colored foods or recipes you’ve enjoyed lately?

I love this! I always try and incorporate color in all my dishes, like tons of different veggies :) I really love green foods right now like grapes, spinach, kiwi etc..but also red like watermelon and strawberries and raspberries! Summer fruits for sure!

Ah, my favorite way to eat the rainbow would HAVE to be roasting all sorts of vegetables together. Not only are they delicious and healthy but they look beautiful and pick up the flavors of each other so well. My perfect mix?
Yellow squash, zucchini, red tomatoes, red peppers, green peppers, and eggplant.
Yellow, green, red, purple… all colors I love, and even more, all I love to eat!!

I always end up throwing everything in the fridge in my salads so they turn out pretty rainbowy! Lately I have been loving blueberries though and those oat cakes look like a great breakfast or post-yoga snack :)

I like to eat a big salad for lunch that incorporates as many colors of the rainbow as possible. I call it a bucket salad because it is usually enormous. :) But I agree that I always feel more energetic if I eat colorful foods.

yes, i’m definitely always trying to eat the rainbow ~ purple cabbage, red bell peppers, green olives, white fennel, red beets, just to name a few! and yes, i definitely don’t always succeed with eating rainbow colors, i tend to eat a whole lotta brown {chocolate!} for one ;) ;) all in moderation, all in moderation. . .

I definitely feel the difference also. My favorites are red also, especially with all the fresh fruit lately. And purple beets, grapes, and sweet potatoes (well I haven’t tried those yet but I’m sure I’d love them).

I don’t attempt to eat the rainbow every day, but there are some days when I do! Strawberries, sweet potatoes or carrots, bananas, romaine and spinach and blueberries — I eat those things most days! I do love brown foods too — chocolate, peanut butter, those are staples!

I don’t think I follow the food rainbow, I just eat whatever seems delicious to me! I do think I try to be generous with a variety of colours, but I do eat a lot of green!

These look delicious! I need to go get some bananas so I can try those blueberry banana oat cakes! I love colorful recipes! It’s so much more fun to eat when your food looks so pretty.

I eat very colorfully – especially my greens. it’s funny, some of my photo galleries (ts + fg, etc) when you look at them all at once there is a lot of green! :)

i love salad beasts/throw everything but the kitchen sink in a bowl-type salads, so they end up pretty colourful. i likely eat a lot of reds and greens for fruit and veg favourite picks….
cereals are mostly white! that is to me what your “brown” is to you! :)
i betcha it’s as warm as san diego here today – lovin’ it!

Similar to you, when I think of rainbow meals I think of red and greens and yellows, too: tomatoes, fresh raw corn sliced off the corn and finely chopped basil all together in a lovely bowl. Mmm, summer rainbow salad!

Hmmm. Either green or orange are my favorite–mangoes (the skin AND the inside, woo woo) + sweet potatoes are tied ;)

I love trying new veggies, and I generally eat a pretty varied diet, so I guess you could say I’m a “rainbow eating believer”. ^_^’ I always see your posts about those sweet potato fries and I really *must* make them. They are CALLING TO ME.

“Eating the rainbow” – I love that phrase! And that’s what I’m trying to do every day. In my opinion, variety is very important for healthy eating. Luckily I like almost every veggie.
My favorite food color is probably orange, as I’ve been eating a ton of carrots lately. I just love them raw as a snack, dipped in peanut butter or hummus.

I always try to have a lot of color on my plate. It just doesn’t feel right otherwise! I go through phases where I gravitate toward certain colors—green and orange in particular, sometimes yellow. Weird, but hey, whatever works!

Great recipe inspiration, I adore the colors or fresh ingredients.
1. Sure, my smoothies are always different colors. :-)
2. Lots of salads and bright stir fries with a variety of veggies.
3. I guess the BBQ tempeh I had last night was non-rainbow.

i LOVE eating colorfully (if thats a word!) haha…I also just added frozen avocado to my chocolate smoothie and it made me think of you and your banana avocado smoothie (which I majorly need to try like asap, I just have no bananas right now!)
I am always enjoying TONS of fresh veggies on my salads. I just picked up these orange peppers thta are SO bright orange, theyre gorgeous!! I also love hybrid veggies like purple cauliflower–so much more fun to eat when your food is purple, right?!
the gay pride parade is in boston this weekend! should be loads of fun :)

I try to eat the rainbow! Whether or not that actually happens every day is a different story. :-P I figure it’s good enough to be colorful most days. My favorite rainbow foods: summer tomatoes (winter tomatoes are so blah!), sweet potatoes, bananas, brussels sprouts, & blueberries.

I don’t really pay attention to colors as much the actual veggie. I am pretty sure I eat an overabundance of green though. From salads, kale, green beans, peas, zucc, cuke, brussels, broccoli, etc. Those are my staples. And then there are the peppers, eggplants, and tomatoes. I guess I’m low on the oranges. I’m not too worried though.
Oh and I definitely eat my share of browns.

i don’t really consciously try to eat by the rainbow, but i’m sure I eat pretty close to it! I love GREEN foods and orange foods, but especially green because it’s such a gorgeous color. :-)

I try to eat a rainbow, It is not that hard if you have a plan of action. :) Purples are what I have the least of…only because I am not that stocked up usually. But they aren’t that hard to incorporate at all, eggplant, cabbage, etc. SO this is a good reminder for me!

I LOVE stiry -fry because you can make it as many colors as you want. And with brown rice as a back-drop, you can’t go wrong :) I LOVE berries…so reds, purples, and blues <3

I love eating the rainbow! The more colorful the food, the better it tastes! I love me some vibrant fruit! Today I cut open the ripest papaya; it was beautiful :)
P.s. rainbow or not, those half white half dark peanut butter cups should be in everybody’s diet

I love trying to get as many colours in one meal as possible (I like to have 3 different ones at least!). It just looks so much more appealing and better with more colours…maybe that’s why I always cook up a monster-storm of veggies when I am cooking them! haha

You bet I eat the rainbow! My favorite color to eat though, is purple. The darker the veggie/fruit, the better! Plus purple is just so beautiful.

YES, we do!!! That is the whole basis to my business (Color Wheel Meals) we eat like the color wheel!!! I go around teaching others to do the same!!! LOVE THIS!!!

I eat/drink a lot of green in my green smoothies and salads. Also enjoy the punch of colour & dazzle that reds, yellows & oranges give to my plate.

YES, I most certanly eat from the rainbow. I dont think too much about it though, since I eat so much fruits and veggies it just comes natuarly.
My favorit is brown- chocolate and almond butter are both daily eaten :D And I love it!
And you ginger roasted potatos looks so good!!

I try to eat the rainbow, although I’m not the best at getting a wide variety within the colors. I tend to pick the same things for green foods, the same for red, etc. I just like what I like and the ones that I don’t like, I REALLY don’t like. My tastebuds apparently don’t understand moderation. lol
I’m the best at getting red, most definitely. I love salsa, red bell peppers, strawberries, watermelon, red is delicious!

we definitely try to eat the rainbow….i keep track of our rainbow eating everyday….but one day it was all orange, nectarines, papaya, mango, carrots–didn’t mean it to be that way….but at least we consumed all of these fruits….i also try to include one leafy green and one cruciferous veggie a day…it’s a tall order, but doable!
