Summer Fresh

I hope your Monday has been going well.  Mine has been busy!

Moving along to all the green and fresh food I’ve been eating.

I didn’t actually eat the entire grocer’s case of green produce and plants.  Yet.

But I have been grooving on steamed edamame.

Sometimes plain is good as well as sprinkling them on salads.

Other times I sprinkle stevia on them or nooch (I get both from iHerb and use code AVE630 to save $5)

Or sometimes I dip them in vegan slaw dressing

I’ve been going to town on nontoxic raw green beans

And I’ve had many trips to TJ’s recently where I usually buy some sort of fresh produce

Sugar Snap Pea Lovin’

Coffee, Coconut Milk, and Chili Lime Spiced Nuts with other produce purchases

The Hummus and the Wall of Dips trip where watermelon was also in full force

And clearly I have my priories straight with this recent stash from the weekend.

After all that fresh produce consumption, I needed some chocolate chips to balance out my diet.

There’s only so many plants a girl can crunch before it’s all about the chocolate.  Just sayin.

Speaking of chocolate, thanks for the compliments on the Chocolate Chip Cookie Dough & Marshmallow Stuffed Rice Krispie Bars from my last post.

Foodgawker liked them.  Small miracles.

I hope you make them.  Super easy and so good.  How could cookie dough, marshmallows, and chocolate not be good though?  Really.

2. What fresh summer foods have you been enjoying?

There is so much great, fresh produce in the grocery stores and farmers markets right now!

My eyes are bigger than my stomach!

I have to remind myself about what we can comfortably consume before it spoils or trying to scramble and use things up before they go bad but there is just so much!

Cherries, watermelon, peaches, nectarines, pineapple, mangoes, avocados, and so much more.  I love this time of year!  I wish we could save and bottle this time of year for say January.

    nothing makes me happier than fresh seasonal produce! Loving this post! Lately I have been going to town on organic strawberries, blackberries, cherries, and plums – SO good. I’ve also been noming on brussels sprouts and carrots like there’s no tomorrow. I seriously think I eat about 8 pounds of produce every day. I could have worse addictions…..

    Totally thought of you when I was in TJs today and walked by the chili lime spiced nuts. My sister and I looked at each other and said, “Averie loves these”. It’s funny – every time I’m in WF or TJs I’m continually thinking of certain bloggers who love certain foods. Even though I’ve never met most of you, I feel like I know you guys…or at least your food preferences. Love it :-)

    haha, your so funny! Balancing out your produce with chocolate chips; looks like your priorities are in line. I know just how you feel, purchasing way more than you can eat at the market during the summer. I am really into the fresh peas and the mangoes myself right now!!

    I went to the La Jolla TJ’s today and picked up the (in?)famous lime & chile mixed nuts- so uniquely delicious! I was able to restrain myself though- most of the bag is left!

    I can’t get enough bell peppers lately. I’ve been eating 1-2 daily. Roasted, grilled, sliced and dipped in salsa or hummus…everything. I have even been known to munch on one like an apple. :D

    best thing I ate was pizza and a tomato mozz salad from one of my new favorite restaurants in Boston!! It was AMAZING beyond belief…no fake stuff…HUGE chunks of tomato and frsh mozz on the thin, crispy flatbread crust it was out of this world!!

    I am also loving farmers markets, the fruit and veggies these days is amazing! fresh cherries have been a big hit and also black plums!

    the eddamame hummus from TJS…oh its so good!

    I’ve been loving summer squash. Of course, I love pretty much all squash so no surprise. If animals would stop eating my veggies, I’d also be enjoying Japanese eggplant and tomatoes.

    Edamame is soooo yum!

    Our garden is going crazy. We’ve had tomatoes, zucchini, cucumber, potatoes, greens, strawberries, green beans, peas, onions. It’s insane. I’ve also been nom-ing blueberries. And mango. Mmmm.

    First – your KILLING me with the watermelon pictures! I wish I wasn’t allergic!

    My favorite part of the weekend was being at Chuck E Cheese with my brother to celebrate his 37th birthday…he has Down syndrome…and one of his best qualities is his “forever young” attitude!

    Best thing I ate over the weekend — we went to Khan’s Mongolian BBQ so you know that was my favorite. I just love that place. I also made your choc chip dough balls last night and they were so good! We ate them all before I could take pictures. They are amazing.

    Best thing I ate: A veggie pizza topped with pistachio pesto, red sauce, kale salad, and balsamic portabello mushrooms. It was fantastic!

    Fresh summer foods: TONS of kale! And fruit smoothies!

    I enjoy a lot of fresh berries at the moment, and melons! And just yesterday I found RED sweet potatos :O Never seen them before, but Im tasting them in a short while!

    I have been enjoying lots of GREAT zuchinni’s from my mother’s garden. As well as fresh raspberries, peas, cucumbers and lettuce. I go crazy at the farmer’s market on the weekends as well… oops! I decided to pickle some of my finds and they turned out AWESOME!

    I love watermelon! It is so refreshing.. I love to eat vegetables but I’m not really a vegetarian.. I want to make cookies now looking at this blog full of deliciousness!! all are so yummy!!
