I’m a fan of breakfast bars, snacks, and goodies that use oats.  And peanut butter and chocolate never hurt either.

For instance my Microwave Banana Oat Cakes are a great breakfast or portable snack option.

Vegan, GF, microwaveable and ready in less than 5 minutes.  And topped with PB.

Or try my Microwave Chocolate Peanut Butter and Oat Snack Bars

Vegan, GF, microwaveable and ready in less than 5 minutes.  And have chocolate and PB in them.

But if you don’t feel like making your own breakfast bars or snacks, and want to jump on the Erin Baker’s products, then you can enter to win a sampler pack of your own!

My favorite healthy breakfast food at the moment happens to be Swiss Oatmeal. It’s just 1 cup soymilk mixed with 1/2 cup dry plain oatmeal, and then I add either 1/3 cup Ocean Spray Craisins or I chop up half of a banana and layer it with some crushed cocoa roasted almonds. Put it all together the night before, let it sit in the fridge overnight (stir it once or twice before you go to bed), and you’ve got oatmeal ready to go in the morning (or you can heat it up in the microwave real quick, but I like mine cold).

Also, I liked you on Facebook.

I’m with you on the brownie preference! The richer and fudgier, the better! But they have to have an extra “special” ingredient, like nuts, peanut butter, or mint extract! I’ve never liked anything plain, as far as desserts go!

My usual breakfast is breakfast bars. So now vegan cookies and brownies are finally becoming readily available. Your breakfast mini cookies look delicious so I will try them in place of my breakfast bars.

My favorite healthy breakfast (this week) is what I call an ABJ (Almond Butter and Jelly) Smoothie. Almond Milk, Protein Powder, Blueberries, Acai Berries, almond butter and steiva, because it must be sweet! Delicous and filling. My favorite dessert would be cream cheese brownies. I’ve been meaning to try your recipe. :)
