These brownies are the best thing to come out of my kitchen thus far in 2012.

I know we’re only two months into the year, but I assure you, these take the cake take the brownie.

Let’s talk about what’s going on in them. First there is an incredibly dense, rich, and fudgy brownie base layer. I adapted my own Fudgy Nutella Brownies, which are my favorite brownie recipe of all time, and I’ve sampled one or two brownies over the years. It’s the best-tasting (and easiest) brownie-from-scratch recipe I’ve ever tried because the resulting brownies are incredibly fudgy, dense, and not at all cakey or dry.

To the brownie batter for the base layer, I added a dozen crumbled Cool Mint Oreo Cookies (Layer 1)

I also made a green minty marshmallow mixture, comprised of Marshallow Fluff, peppermint extract, and green food coloring, and I swirled half of it through the brownie batter along with the crumbled Oreos.

To say this green mixture is “pretty good” is an understatement: white chocolate chips + buttercream frosting + Marshmallow Fluff + peppermint extract = Dive In and Don’t Come Up For Air.

I would like to have this stuff on hand for mental health days because a spoonful of it is guaranteed to put a smile on your face. Rich, sweet, decadent, minty, yet still fluffy.

While the brownies were baking I made the next layer (Layer 2):

melted white chocolate chips

made a batch of buttercream frosting

combined the white chocolate chips + buttercream frosting + the remaining half of the green minty marshmallow mixture

After spreading the Green Goddess over the cooled brownies and because there wasn’t enough going on already, I crumbled a dozen and a half more Cool Mint Oreos over the top (Layer 3)

This recipe below looks long because I gave instructions for how to make both brownies and frosting from scratch.

Use a boxed brownie mix and a can of frosting if that’s what it takes for you to make these.

Yes, there are a few stages and steps but it’s all worth it, I promise. Really you’re just making brownies, making a green minty marshmallow mixture, and crumbling Oreos everywhere. Not hard at all and no electric mixer is necessary.

I cannot convey to you how good these are:

The brownies themselves are so rich, and the mint Oreos crumbled in the batter add a crunchy minty surprise.

The green minty marshmallow mixture that is swirled throughout the brownie batter add a sweet soft surprise.

(I’m all about contrasting flavors and textures)

The top layer of green minty marshmallow mixture, with melted white chocolate chips, vanilla buttercream frosting, and more crumbled Oreos…

Heaven-sent. Or Saint Patrick sent.

PMS? Bad day? Child not cooperating? Husband not cooperating? Your dog ate your homework? Your favorite lip gloss has been discontinued? You typically don’t celebrate St. Patrick’s Day? You just got a parking ticket? Your boss is mean? Your best friend forgot your birthday? Your husband forgot your birthday?

Not a problem. Have one of these.

Mint Oreos, chocolate, and green food will cure whatever ails you. And by green food, I do mean one of these and not a kale salad.

Triple Layer Fudgy Mint Oreo Brownies

These layered brownies are loaded with rich textures and flavors, from the dense fudgy brownies layer, to the soft, fluffy minty layer, with oodles of crushed Mint Oreos throughout. Use regular Oreos if you can’t find Mint Oreos and possibly add a touch more mint extract to the filling. As a shortcut, feel free to use your favorite boxed brownie recipe for the brownie layer, and to use 1 cup to 1 can of storebought vanilla frosting for the frosting and topping layer. They're rich, decadent, and everyone loves these!

Yield: 9x13-inch pan, 18 to 24 brownies

Prep Time: 30 minutes

Cook Time: about 23 to 25 minutes

Total Time: about 1 hour, for cooling

Ingredients:

Filling

one 7-ounce jar Marshmallow Fluff

1/8 teaspoon mint extract*

8 drops+ green food coloring, or until desired shade of green is reached

1 batch of brownies – see ingredients below in step 2 (or use 1 box of brownie mix – make according to directions on the box by adding the water, oil, eggs)

Brownies

4 ounces baking chocolate (I used 9 squares of TJ’s 72% chocolate bar or use 4 squares Baker’s Chocolate, semi-sweet)

3/4 cup unsalted butter, melted (1 1/2 sticks)

2 cups granulated sugar

3 eggs

1 teaspoon vanilla extract

2 tablespoons espresso or brewed coffee, optional

1 cup all-purpose flour

12 Cool Mint Oreo Cookies, hand-crumbled

Frosting and Topping

1/2 cup butter or margarine, softened

3 to 4 cups powdered sugar

1 teaspoon vanilla extract

splash of milk, if necessary for consistency

3/4 cup white chocolate chips, melted

18 Cool Mint Oreo Cookies, hand-crumbled

Directions:

1. Preheat oven to 350°F. Line a 9×13-inch pan with foil and spray it with cooking spray.

2. Filling - In medium bowl, stir together marshmallow fluff, mint extract* (be very careful and do not use more than this unless you love mint; a little bit of mint goes a very long way), 4 drops of food coloring, or until light green is achieved; set aside.

2. Brownies - Microwave chocolate and butter in large microwave-safe bowl for 90 seconds or until butter is melted. Stir until chocolate is completely melted. Stir in sugar (it will seem very granular, this is okay). Stir in eggs and vanilla. If adding espresso or coffee, add it now. Stir in flour until just combined, do not overmix. Hand-crumble 12 Oreos over the bowl and fold them in.

3. Spread brownie batter in prepared pan.

4. Drop about 1/2 cup of green filling mixture onto brownie batter and reserve the remainder. Gently pull a table knife through the batter in S-shaped curves for a swirled design.

5. Bake 23 to 25 minutes or until brownies are set, taking care not to overbake. (Some people’s ovens and taste preferences may require 25-30 minutes, bake until brownies are done and to your liking) Cool completely, about 1 hour, or put the pan into the freezer for 10 minutes if you’re rushed.

6. Frosting and Topping - While brownies are cooling, make vanilla frosting by whisking together the butter, confectioners' sugar, vanilla, and milk as needed until smooth and fluffy, or beat with an electric mixer. Optionally use 1 cup storebought vanilla frosting – or use entire can if you want a thicker final green layer.

7. In another small microwave-safe bowl, melt the white chocolate chips (microwave on high for 30 seconds; stir and microwave 30 seconds longer; stir until smooth, taking care not to scorch it as white chocolate scorches easily).

8.Add the melted white chocolate chips and the vanilla frosting to the reserved green minty marshmallow mixture.

9. Stir in 4 drops+ food coloring, or until light green color is reached, and spread over cooled brownies.

10. Sprinkle with 18 hand-crumbled Oreo Cookies, slightly pressing them into the green mixture. Allow top layer to set fully before slicing and serving. I prefer these bars chilled and I store them in the refrigerator in an airtight container for up to 10 days or in the freezer for up to 6 months.

Not only are these brownies perfect for St. Paddy’s Day, but they would also be wonderful for Christmas and winter holiday parties.

They are going on my 2012 holiday baking list. It’s never too early to start thinking about holiday baking season, 8 months in advance.

Do you like mint-flavored foods?

I do, but a little mint goes a long way and once you add it, you cannot un-do it. I learned that the hard way when I once made creme de menthe bars that tasted like I was eating a bottle of Listerine, so easy does it when adding mint.

      i had to bake mine a tad longer than the recipe stated. I just kept a very close eye on them after 22 minutes. Mine took maybe 27. But they were perfect! Not the least bit overbaked!

      It could be oven temp variance…as I emailed you, bake until done. For me, this is usually at about 24 minutes, but bake til done…could need up to 30 minutes but test with a toothpick and a little gooey is fine; it may not come out perfectly perfectly clean.

    I made these last night for my daughter & husband and they loved them! I don’t care for chocolate, so these aren’t my thing, but they certainly are beautiful! I followed your recipe to the letter and made both your brownies & vanilla frosting. Thank you for such detailed directions!
    My MIL is in the hospital and we visited her today and smuggled in one of these for her & my FIL, too. They thought this was much better than the green jello that was on her tray!
    A definite make again from my family!!!

      So yes, you guessed correctly. LMK how they turn out! You’ll be the 5th person (that I know of) who will have made them if you do! I’d love to hear feedback! Bake until brownies seem done, that’s my only advice. Oven times and temps vary. For me, this is 24 mins, but for others, it’s 26-28. I am a gooey brownie girl though, too.

    Um YUM!!!! I love mint chocolate anything!! Except, for the really overly sweet peppermint patties. But mint in any other form with chocolate is delicious! And those Vegan thin mint fudge balls look Delicious too! Now I have to go make something with chocolate and mint.. :)

    This recipe was an absolute hit! Made a batch to give as a gift at St Patty’s day, but ended up needing to make a 2nd batch because the first pan is gone! I did add a little more mint to the marshmallow mix, and to the “frosting” mixture) but overall this was perfect!

    I made these today to take to my moms group tomorrow, and it’s a good thing I have a plan to share them, because they are so good I could eat them all myself! Well, not really, but I would want to. :)

    I was cautious on the mint extract, but I think I would actually use a little more than 1/8 tsp next time. The mint flavor was just a little too mild for my taste; maybe I should have taken a taste of the frosting as I was mixing it. Oh, and my Target in WI doesn’t have mint oreos, but thankfully the grocery store did. Thanks for the recipe – it’s a keeper!

    Averie! I am just finishing up making these! I’m so excited to bring them to work tomorrow! It’s TWO of my coworkers bdays on St. Patty’s Day, so I just HAD to make these when I saw them! LOL You have to pay attention because there are alot of steps and half of this, use the remainder of that, but it’s all worth it…and even if it’s a little flubbed with exactly what you did…no doubt, there is nothing bad that can happen with all that chocolate and mint and chocolate chips and oreos.

    I made these for my husband’s work potluck. Couldn’t find mint oreos so I used Grasshopper cookies instead. Absolutely fantastic dessert! I’m glad he took most of them with him, otherwise I would have never been able to keep out of them. They were wildly popular with his co-workers and he had several recipe requests. Bravo!

    I couldn’t get the picture of your brownies out of my head for like a week, so I finally made them! I knew they’d be delicious and perfect for St. Patrick’s Day. I used mint extract as opposed to peppermint, and I’m wondering how different they are? I love love the cool mint Oreos, they’re the best part! And the green frosting layer is really good too. They’re very rich! I took a couple plates of the brownies to an auction at my church and they were sold for the scouting program. :) thanks for the recipe and amazing pictures!

      I’d say peppermint is a bit stronger, harsher, more “bitey” than mint, which tends to be a bit smoother. I’d liken it peppermint gum vs spearmint gum. I find peppermint is stronger. Not bad, just stronger. It also depends on the quality of extract used. Some extracts are going to be stronger than others, no matter what you use. Anyway…thanks for reading and making these!

      Just melt enough marshmallows to yield about 1 1/2 cups melted runny marshmallow-ey liquid. How marshmallows look when melted before you make rice krispy bars, that’s what you’re looking for. Soft and fluffy, gooey, runny. 7 ounces worth, about 1 1/2 cups but not an exact science :)

      I would not use mint filling personally with strawberry cookies and pureed strawberries – I just think it would be too much going on personally even though I know real mint and strawberries do pair well together but in this application – not sure. But everyone’s taste buds are different and try whatever floats your boat!

    I made these using the boxed brownies & canned frosting. They were wonderful! Everyone at worked loved them. The only problem was, the next day (well about 36 hr later) the green frosting on top started to look bad. Maybe I should’ve refrigerated them??

      Yes I think that would be best and I indicate that in the recipe section of the post, that I store mine in the fridge. Anytime I’m using butter in a frosting, I just think that’s best; I know some people don’t refrigerate their buttercream style frostings but I do.

      They’ll be fine overnight in the freezer. I actually successfully froze these for *months*. Long story, forgot about them in the back of the freezer and 6 mos later pulled them out and they were as good as new…or 95% as good as new. But overnight, should be just fine.

    Happy Valentines Day with these brownies!! I am going nuts over here. I’ve looked at the picture probably 20 times in a minute. I am 4 months pregnant and chocolate minty chewy gooey brownies is exactly what I need tonight! Hope my husband likes them, but if not…more for me. I absolutely love mint and chocolate anything. Thank you for sharing these delightful brownies with everyone!

      They are CRAZY good. I was actually thinking about them yesterday b/c St Paddy’s Day is a month away and I was wondering what I could make to top those…and really, nothing. I am going to have to do in a whole other direction b/c as mint brownies go, those are the best I’ve ever had and super decadent. Enjoy them!! :) LMK how they work for you!

    these look so amazing! I want to eat them straight from the computer!!
    I just wanted to know if the marshmallow fluff is neccesary for the recipe?
    Can I leave it out? or will it ruin the recipe?

      Well to make that middle layer you need it; the recipe won’t be ‘ruined’ without it; but if you skip it, you won’t have created the finished product you seem to be drooling over on the screen :)

      They’ll keep for weeks like I wrote in the post (most fudge does) so feel free to make a day or two in advance. Enjoy!

    These look beyond amazing and I can’t wait to make them tomorrow for our family’s St. Patty’s Day festivities!! I’m seriously drooling just thinking about them! Do you have any suggestions for making them at altitude? I know if I can manage to nail this recipe they will be a massive hit. Can’t wait

      I bake at sea level (San Diego) so really don’t know a thing about altitude baking. I would just follow similar protocols with adjusting the baking time maybe 5 mins like you normally do? Just use common sense and bake til done…hard to screw up brownies :) LMK how they go!

    Hi Averie,
    This is a long shot and I know you can’t really know what I have done but I thought I’d ask: I’m making these brownies right now and am on the frosting section. I’ve mixed the softened butter, vanilla, and the powered sugar but the result is a bowl full of small round pellets. Some of the butter was melted before I added it, could that be the problem? Or do I just need to add milk? I completely understand if you can’t help but I thought I’d ask. A run to the grocery for canned frosting might be in order!!

    Hello,

    In step 4 it says:

    4. Drop about 1/2 cup of green filling mixture onto brownie batter and reserve the remainder.

    I might have missed it, what do you do with the remaining filling mixture?
