If there’s one piece of kitchen equipment that is mandatory, it’s a good knife.

Trying to cook, chop, slice ‘n dice, and simply be productive and efficient in the kitchen is impossible without a proper knife. Lightweight, flimsy, and dull knives are intolerable and I won’t use them.

When I am in the kitchen, I tend to put one (big) knife in my hand and keep it there until everything is chopped, sliced, minced, quartered, cut, and ready. Paring knives and smaller knives have their place, but I prefer bigger knives, in general.

Don’t be scared of the Big Guns.

From cleaning and slicing pineapple

to cleaning and chopping heads of lettuce

to cleaning and slicing watermelon

To dicing the Snickers bars for Snickers Bar Stuffed Chocolate Chip Cookies

Or chopping the candy for 3 Musketeers Marshmallow Candy-Stuffed White Chocolate Cupcakes with Fluffy Vanilla Buttercream

…Not a day goes by where I don’t have my knife and cutting board out and in use. Repeat x17 times. Before noon on most days.

These Mercer knives are built solidly, feel nice in my hands, are heavy enough but not too heavy, and most importantly, they get the chopping job done.

  7. It’s embarassing to admit that out of the dozen knives in our utensil drawer. Only ONE works on most foods. The others are just a hazard to even attempt with.

  12. It sounds terrible, but all I have is a little pairing knife that I try to use for everything. It makes for some interesting looking food! Real knives that are sharp would be amazing to use!

    I have a Cuisinart Chef’s knife that I use a lot and I mostly cut up vegetables daily.

  17. I have several large santoku knives, my favorite being the Kitchenaid brand.

    I’m constantly using my knives, especially for fruits and veggies for snacks/meals.

  24. my favorite knives are my kenkel and kuhn rikon knives, they both sharpen easily and stay sharp forever! i use them to prepare food for my family and friends!

  28. My wife and I use out very basic set of Kitchenade knives almost every day. It was a wedding present from my cheap-o brother… I think the set of 12 (including 6 “steak” knives) ran something like $30. They function, but we have to sharpen and hone them weekly. I’m just waiting for a knife to break and then it’ll be time to get a “real” set.

    My favorite knive as of right now is basic brand chopping knife. I use it for everything for veggies and fruit. thanks

  44. Mercer is definitely some of the best knives I’ve come across. I own one standard Mercer chef’s knife and I just refuse to use anything but that one. German steel is the best kind!
