I love tomatoes and so many recipes can benefit from the pop of color, nutrients, and the flavor of tomatoes. Here are a few favorite recipes you could use the tomatoes in:

Vegetable Lasagna Casserole (vegan, GF) – Non-traditional noodle-less lasagna that’s make with a giant grated zucchini and carrot noodle-like pancake

Cheesy Taco Casserole – Gluten-free and can be kept vegan. Tacos, with rice and beans, in casserole form

Double Melted Cheese and Red Pepper Dip (GF) – Make in the microwave in 5 minutes. Easy and my new favorite dip

Spinach Artichoke and Roasted Red Pepper Cheesy Squares (vegetarian, with vegan & GF options)

Spicy Baked Eggs and Hash Brown Casserole

Chips and Cheese Chili Casserole (vegetarian/vegan, GF) – Tailgating dreams come true. Or make it for an easy weeknight meal that makes planned leftovers

Mango Basil Personal-Sized Tortilla Pizzas (can be kept vegan & GF)

My favourite way to eat tomatoes is in a Portuguese dish called “tomatada”, with tomatoes and poached eggs, served with fries.

I am a huge canned tomato fan. I recently discovered TJ’s has whole peeled san marzano tomatoes in puree. Very exciting! I’ve already made a sauce using them. When not using san m tomatoes, I really love the muir glen products. I feel like their products are far less acidic that other canned tomatoes. Would love to win this! Thank you for hosting!!

This is one of the best dishes I’ve ever eaten! I used the Muir Glen fire-roasted tomatoes to make it, actually!

    Averie, please count me in.

Regarding my favorite recipe: I love simple, yet beautiful and delicious dishes. As i spend most of my summer vacation time in the South of France, I love all things ‘tomatoes’. Preferably fresh from the market in salads, or roasted. And with cheese (I’m a big fan of goat cheese).

My most favourite tomatoes+goat cheese recipe (for the time being) is this one:
    http://deliciousdishesrecipes.com/roasted-tomato-and-goat-cheese-crostini/
    It makes a great appetizer!

For over-roasted tomatoes, I use the recipe of David Lebovitz:
    http://www.davidlebovitz.com/2012/05/oven-roasted-tomatoes-tomato-recipe/

For the famous La Salade Nicoise, here is my favourite (I got it from the Gardian newspaper while on my way to France):
    http://www.guardian.co.uk/lifeandstyle/2001/sep/02/foodanddrink.recipes

And regarding sauces, nothing can beat (in my experience) the Pioneer Woman’s sauce:

    Thank you!
