Trader Joe’s Cookbook Giveaway

I recently received this new cookbook which is being released in a few weeks.

The I Love Trader Joe’s Vegetarian Cookbook: 150 Delicious and Healthy Recipes Using Foods from the World’s Greatest Grocery Store

The book is your guide to turning healthy ingredients into inexpensive, mouth-watering, vegetarian meals for any day of the week. A few of the recipes include:

Pineapple Upside-Down Pancakes

Herbed Garlic Polenta Fries

Tuscan Tomato Soup

Tempeh Tacos

Pumpkin Spice Cobbler

There are 150 delicious vegetarian (and vegan) options from breakfast to dinner and everything in between. This cookbook has plenty of recipes and ideas to help you prepare easy and tasty vegetarian meals using ingredients from Trader Joe’s, and of course ingredients from other grocery stores may be substituted because although I love Trader Joe’s, I know not everyone has access to their stores.

I was a contributing author in this Trader Joe’s cookbook, which was just released last month, so between that cookbook and this one, I’m always cooking up something with TJ’s products. Here are a few of my favorite vegetarian or vegan recipes that can be made using Trader Joe’s ingredients:

Vegetable Lasagna Casserole (vegan, GF) – Non-traditional noodle-less lasagna that’s make with grated zucchini and carrots, which is baked to form the ‘noodle’. Trader Joe’s salsas and sauces work wonderfully to layer in the middle of this lasagna

Cheesy Taco Casserole – Gluten-free, vegetarian, and can be kept vegan. Like tacos, with rice and beans, in casserole form

Double Melted Cheese and Red Pepper Dip (GF) – Make in the microwave in 5 minutes. Fast, easy, and my new favorite dip. The Trader Joe’s green chilis add just a hint of heat to the dip and are only 99 cents

Spinach Artichoke and Roasted Red Pepper Cheesy Squares (vegetarian, with vegan & GF options) – Like spinach and artichoke dip, but baked into squares. Trader Joe’s frozen spinach, frozen artichokes, and marinated red peppers are the stars of the show

Spicy Baked Eggs and Hash Brown Casserole (vegetarian, GF) – Eggs, frozen hash browns, and frozen spinach make this meal easy , fast, and very budget-friendly

Chips and Cheese Chili Casserole (vegetarian/vegan, GF) – Tailgating dreams come true. Or make it for an easy weeknight meal that makes planned leftovers. Trader Joe’s has so many varieties of chips, any of which would be perfect baked into this dish

Mango Basil Personal-Sized Tortilla Pizzas (can be kept vegan & GF) – I love Trader Joe’s frozen mango chunks and am never without them or their frozen pineapple chunks, for smoothies to pizza

Pumpkin Spice and Peanut Butter Chocolate Chip Granola (vegan, GF) – Trader Joe’s pumpkin pie spice, pumpkin puree and dried cranberries are perfect for this fall-inspired granola. Year round I am never without their raisin medley with golden raisins or their semi-sweet chocolate chips

    My favorite trader joes products are definitely the chocolate covered almonds with turbinado sugar and sea salt, cookie butter, and their mango chicken sausage!

    i’m from austin and i don’t think the trader joe’s has been built yet, but when i was in california, i remember buying lots and lots of their coffee. i still have the little containers as keepsakes so that if i ever went back, i would know which to get. can’t wait until the one in austin is supposed to open.

    I love Trader Joe’s and I’m a vegetarian; perfect giveaway! I do a majority of my shopping at Trader Joe’s so here’s a short list of my favorite products:
    -sausage less Italian sausage
    -gauacamole with pico on top
    -wheat+corn tortillas
    -apple cider
    -pumpkin ice cream
    -no salt creamy peanut butter
    -nonfat vanilla Greek yogurt
    -nonfat pumpkin Greek yogurt
    -chicken less orange chicken!!!
    -veggie burgers
    -trail mix (s)

    I love Trader Joe’s . . . I just recently “reviewed” a new chocolate that I found: Stone Ground Dark Chocolate. omg . . . it’s one of the best chocolates I ever had. I also buy a lot of their spices . . . they are so affordable and taste great.

    oh my gosh! You know I”m obsessed! My favorite products? Their chocolate chips (that you brought to my attention), almond meal, any of their hummus varieties, their pre-cooked chicken (great for Kay in a pinch or for me to throw on a salad), their unsweetened almond milk…gosh- I could go on!

    I have sooo many favorite TJ goodies. Their Mediterranean hummus, mushroom ravioli w/ truffle sauce, firecracker shrimp, their soups, i could go on and on. I would love this cookbook!!

    Micro brown rice
    balsamic veggies
    garlic naan bread
    parmesan pastry pups
    veggies sausage patties
    veggie enchiladas
    orange chicken
    potstickers/gyoza
    artichoke hearts

    Cans/ Jars/ boxes
    habenero sauce
    vodka marinara sauce
    EVOO
    Sundried tomatoes in oil
    olives
    mac and cheese
    red pepper tomato soup
    Joe’s O’s
    Ginger Snaps
    wild rice

    Dairy-
    Chimichurri sauce
    Hummus
    Spinach dip
    pizza dough

    Breads-
    Rosemary baguettes

    And of course, cookie butter!!!

    Thanks for this opportunity, how fun! But it’s really hard to narrow down my favorite products! Guess I’ll start with TJ’s organic tempeh, almond milk, snack mixes, great selection of frozen produce, and their variety of hummus.

    TJ’s is like my version of Disney World. Some of my favorite products are their frozen/pantry meals…makes an easy dinner for a busy day! I particularly like Organic Shells with White Cheddar, Sweet Potato Gnocchi, Polenta Provencale, and any of their frozen pizzas.

    I love TJ’s fleur de sel caramel sauce–stuff is legit! But really, everything I’ve tried is good. The fact that I can’t make a package of their hummus last more than a day is proof of that statement.

    The list goes on and on…especially now that it is pumpkin season! I think that their cookie butter is unbelievably good and I keep many of their frozen foods in my freezer! I just tried the meatball…delish…maybe I will make them for dinner tonight : ) I can’t wait to see the cookbooks!
