24 Hours of Peanuts Cookbook and Prize Pack Giveaway

Nearly a year ago, the National Peanut Board approached me and wanted to know if I could submit some peanut butter recipes for an upcoming cookbook they were publishing.

I’m the peanut butter queen and this was no problem for me.

    Peanut butter stuffed dates make a great pre-workout snack, and chocolate + peanut butter anything is perfect for dessert. I’m also guilty of just eating spoonfuls from time to time.

    I don’t cook with peanuts all that often, mostly because I forget to buy them and use them. Love adding them into stir fry though. I use PB pretty much every day. Love adding it to my oatmeal for both flavor and texture but also the healthy fats. And I love your collaboration here!

    One of my favorite ways to use peanut butter is for 3 ingredient Peanut butter cookies (1 egg, 1 cup sugar, 1 cup peanut butter). Bake at 350 for about 8 minutes (you just want the bottoms to start to turn to golden brown and then I let them rest for about a minute on the pan outside of the oven. I always make them small so that they can be bite size cookies and the batch usually makes about 4 dozen.

    the real question is what i don’t put peanut butter on.
    i really do love simple PB&J’s, but i also add peanut butter to so many types of sandwiches. Tempeh sandwiches, Tofu Sandwiches, I made sweet egg scrambles with peanut butter, i LOVE simple peanut butter cookies. Really I could go on. I think I might have a problem.

    This cookbook sounds amazing! I love getting new ideas and would love to see what else I could make with peanut butter :)
