24 Hours of Peanuts Cookbook and Prize Pack Giveaway

Nearly a year ago, the National Peanut Board approached me and wanted to know if I could submit some peanut butter recipes for an upcoming cookbook they were publishing.

I’m the peanut butter queen and this was no problem for me.

    you had me at: hello… peanut butter!

    love peanut butter in just about any form or fashion. but something that has stuck in my memory for years, even though i have not done this recently, is a comfort breakfast that i had every morning while on the road vacationing through the west… arizona and utah and colorado. every morning, i would take a plain bagel, slice it in half, slather it in peanut butter and then cover that with slices of bananas. SO delicious. and somehow it seemed like such a healthy breakfast. gave me tons of energy for the day. of course, it didn’t hurt that i washed it down each time with a nice cool frappucino on a hot summer morning.

    would LOVE this book. love your blogs. came here via a friend who hosted a clothing trunk show and served your amazing gluten-free, flour-free chocolate peanut butter cookies. they were so incredible, i had to ask her for the recipe. that’s when she sent me here!! now i’m a subscribed faithful reader!

    Peanut butter and banana on homemade banana nut bread with a heavy drizzle of honey, its my go to lunch. It is extremely satisfying and the bread I make is quite nutritious. I do add chocolate but substitute greek yogurt and applesauce for the sugar and oil.

    We eat it on toast in the mornings ( peanut butter, that is) and I put a dollop in a smoothie! Sometimes I can’t help but it peanut butter straight from the jar on a spoon! Especially when I make my own from your recipe! Delish!!

    Wraps – 1/4 cup peanut butter, 2 Tbs. soy sauce, 2 Tbs. water, hearty squeeze of Siracha, whisked. Spread on tortilla with thinly sliced veggies. I am more savory than sweet when PB is involved.

    I’ve been making the Peanut Noodles from Jane Brody’s Good Food Book for more years than I can remember! I add veggies and tofu now, but it’s still my go-to recipe for a fast, easy, healthy dinner, and favorite use of peanut butter.

    I love putting peanut butter on just about anything–bananas especially. Recently I’ve been making peanut butter s’mores. But I also top my thai or asian-inspired foods with peanuts to add an extra crunch.

    My favorite way to eat peanut butter:
    1 plop peanut butter in mig
    Add either 1 plop nutella or 1 handful chocolate chips
    Microwave 30 seconds
    Add coconut
    Stir
    Add milk

    EAT!

    I use peanut butter for a quick pick me up between meals, I will have an apple, cut into slices, each slice has a dab of peanut butter–this boosts my energy in the afternoon. The other thing I like to do with peanut butter is to take a 1/2 cup of peanut butter to 1/2 cup of chicken broth & I add a tsp. of curry powder—heat it up in the microwave for 1 minute & stir, heat for another 30 seconds, stir & if thickened & smooth–you’re done, if not, give it another 30 seconds in the microwave. It is a great sauce for thai pizza or to have on noodles, with chicken & more.

    I’ve been eating this salad of Romain lettuce, arugula, carrots (grated), cucumbers (very thin, made with a carrot scrapper), purple cabbage, Trader Joe’s Spicy Peanut Salad Dressing, roasted chicken and diced roasted unsalted peanuts almost every day! I love it and it’s very filling and gives you energy for a long time.

    You my dear are the queen of peanuts though; and no corporate skinny recipe book will measure up to yours I am sure.
