Low-Fat, Low-Calorie Mozzarella Cheese Sticks

The words “skinny” and “cheese sticks” normally don’t go together. Except here they do because these cheese sticks are only 110 calories each!

Rather than being fried, they’re baked, and yes, there’s only two ingredients. Eggroll wrappers and low-fat mozzarella string cheese.

They’re crispy on the outside, soft and gooey on the inside. It’s impossible to say no to luscious melted cheese.

Ingredients for Healthy Mozzarella Sticks

You’ll need just two ingredients to make homemade low fat mozzarella cheese sticks: low-fat mozzarella string cheese sticks and egg roll wrappers.

Egg roll (or wonton) wrappers are usually kept in the refrigerated area of the produce department of most grocery stores.

You’re looking for wrappers with flour as the first ingredient, not to be confused with shelf-stable rice paper wrappers, for making fresh spring rolls, usually found in the ethic foods aisle on a shelf.

Want Extra Crispy Mozzarella Sticks?

To help them brown up and get a bit crisper, spray the wrappers with a fine misting of olive oil. Just a teeny tiny bit. Olive oil cooking spray or something like the Misto Olive Oil Sprayer work great, and you can keep the calories and fat way down with either option. Alternatively, brush them very judiciously with olive oil. You don’t want to submerge these skinny sticks with an oil slick and defeat the purpose.

How to Make Baked Mozzarella Cheese Sticks

This is hardly even a ‘recipe’ because it’s so fast and easy. Just roll up your string cheese in a wrapper and bake for about 15 minutes!

  1. Place a cheese stick about 1 inch from the margin of the egg roll wrapper, fold the sides in, and roll up as tightly as possible. Place the bundle seam side down on a baking tray.
  2. Optionally spray or brush with olive oil.
  3. Bake for 10 to 12 minutes.
  4. Optionally, spray with additional olive oil and flip the cheese sticks over.
  5. Return to oven and bake for another 5 minutes, or until golden brown all over.

Recipe FAQs

Can rice paper wraps be used instead of egg roll wrappers?

I think rice paper would be really thin, and you’d have to use a few to wrap them up or the cheese will try to ‘explode’ when it gets warm and expands. So, rice paper might work but I can’t say for certain.

What dipping sauce is best for healthy mozzarella sticks?

Use either pizza sauce or marinara sauce (I’ve linked my two homemade recipes, but store-bought works fine too!).

Can the low-fat mozzarella sticks be made in an air fryer?

Possibly, but I’ve only ever baked this recipe so I can’t say for certain. However, I have an air fried mozzarella cheese stick recipe on my site that you can make! It’s a traditional breaded version but the air fryer keeps the cheese sticks lighter.

Why did the cheese ooze out of the egg roll wrappers?

If the mozzarella keeps oozing out of its wrapper in the oven, it’s likely that your wonton wrappers were a little on the skimpy side. I was sure to really bundle mine up, wrapping them like logs, around and around, with the wrapper. If the wrapper isn’t doubled up, the cheese will come out.

Recipe Tips

Take care to wrap the cheese sticks really well with the egg roll wrappers. The wrapper should be doubled up around the cheese stick to prevent the cheese from oozing out as it bakes.

I’m a dip fanatic and I always need an extra. Here I used marinara sauce, but pizza sauce works too. It’s really just pulverized tomatoes so it isn’t a caloric lead balloon, especially when I can eat a quarter cup per stick.

For built in portion control, prepare only as many sticks as you need at once, even if that’s only 1 or 2. The extra cheese and eggroll wrappers will keep for weeks in the fridge so you can always make more later on.

Healthy Mozzarella Sticks

Ingredients  

  • 1 eggroll, or wonton wrapper (56 calories)
  • 1 low-fat mozzarella sting cheese stick, 50 calories
  • olive oil cooking spray, Misto-sprayed olive oil

Instructions 

  • Preheat oven to 400F.  Line a baking sheet with a Silpat or spray with cooking spray; set aside.
  • Place cheese stick about 1 inch from the margin of the wrapper, fold the sides in, and roll up as tightly as possible. Place the bundle seam side down on baking tray.
  • Optionally, very lightly spray or brush with olive oil.
  • Bake for 10 to 12 minutes and remove tray from oven.
  • Optionally, spray/brush with additional olive oil and flip stick to ensure it browns evenly on both sides.
  • Return to oven and bake for about 5 to 8 additional minutes, or until golden brown or done to taste. Of the 8 sticks I made, 1 stick had cheese burst through the center of the wrapper, a little ‘explosion’ from the internal pressure as the temperature rose and the cheese melted. Keep an eye on your sticks in the final moments of baking, and if you notice any leaking or bursting, remove from oven immediately.

Notes

Sticks are best warm and fresh; serve immediately. I served with marinara sauce; use your favorite dipping sauce or none at all.

    I made these and all the cheese oozed out. I’ll try this again and try to seal the ends tighter. I hope that’ll be the trick because they tasted good wrapped in the oozy cheese and dipped in marinara

    I wanted to make something different for our neighborhood Halloween party tonight and these have been a huge hit (there is one left)! I just used Kroger brand string cheese and only had a couple leak. I did run a damp finger along the seam to help it seal. These were so good!

  5. sadly all the cheese oozed out of the wrappers so the wrappers were empty. Before anyone asks yes I folded in the sides. Great idea but no good for me.

  7. Not sure how these are ‘skinny’. Nobody would make these and then just eat one, and at 110 calories that will add up fast. Granted, they are not as unhealthy as fried, but ‘skinny’ they are not.
