Sugar Snap Pea Salad with Tahini Dressing & Choc Coconut Snowballs

How are you doing today?  Who’s enjoying their Hump Day?  Sorry Sarah! 

I am going to be taking the little precious one to a Mommy & Me Pottery Class.  Admittedly, I kinda burned out on the peppy soccer moms & “Mommy & Me” type scene by the time Skylar was about a year old, but this event looked too cute to pass up so we’re going to make some pottery handprints and whatever else the teacher wants to do to keep a roomful of 2-3 year olds engaged.  But first, I am going to take a yoga class early Wednesday morning at the studio I may be teaching at!  Yay!!!

But to recap yesterday’s food action, glad you enjoyed my little rendition of drunk ice cream, aka Banana Bourbon Vanilla DairyFree Softserve.  Good stuff no doubt!

And the Strawberry Protein Softserve was music to Skylar’s tummy.  Pink dessert?  So of course she said, “More Please, Mommy!”

And of the little purple roasted taters were cute and yummy too!  Pinkish & purple potatoes?  Pink softserve?  Who knew I could get so many girlie colors in one meal!

Most of all, thanks for telling me all about your Green Habits & Eco-Friendly Choices that you make in your life.  I loved hearing what you do to be kinder to your body and the Planet!

So I promise I am not being paid to plug all my TJ’s shopping finds, but in that stash of groceries I told you about,  I also picked up a bag of sugar snap peas.  I forgot how much I adore them.  And I decided to make a raw salad.

For the salad, combine whatever veggies suit you.  I used greens, romaine lettuce, brock, cauli, tomatoes, cukes, and of course sugar snap peas.

Seems everyone’s been on the Tahini bandwagon lately from MamaPea to Heather to Gena and I needed to use up some tahini in a jar that I had already opened so this dressing recipe of mine came to life.  Alot of those lovely ladies have been making This Version, but because of they garlic, tamari, and salt, I pretty much had to steer clear of that one.  None of those ingredients agree with my system, at all.

For Averie’s Creamy (Raw) Vegan Dressing I combined:
2 Tbsp Tahini
2 Tbsp Agave
2 Tbsp Veganaise (Optional and if you are avoiding all soy and want it to be truly a raw dressing, then omit)
2 Tbsp ACV (Apple Cider Vinegar is Optional but I enjoy it and used it)
1/2 Tsp Ground Ginger
S & P to taste
Whisk to incorporate


Dress & Toss your Salad!

And in 7 minutes, Dinner is served!  The dressing is creamy & smooth, and adds some good fat to your diet with the tahini (which is ground sesame seeds in case you’re not sure).  I dig the pop of sweet and sour with the agave and the ACV contrast.  And the Ginger adds a lil’ heat!

Earlier in the day Skylar and I split a LaraBar.  The Tropical Fruit Tart FlavorGood flavor but it was kinda crumbly.  Actually, alot crumbly, but it sure tasted good.  Anyone else have Crumble Fumbles with this flavor?  Skylar was kinda wearing her half of the bar.

But things got waayyyy better because for Dessert I made a batch of Raw Vegan Chocoalate Coconut Snowballs.

Check the link for exact measurements of: Maple Syrup, Vanilla Extra, Coconut Oil, and Cocoa Powder, & Coconut Flakes
For all those who’ve asked what kind of coconut flakes I use: Sometimes it’s sweetened coconut flakes from the baking aisle of the regular grocery and sometimes it’s the high end unsweetened raw flakes, just depends.

And if you want dark chocolate snowballs, why here you go.

Stir everything together

Put the Choco-Coconut Goodness into the Freezer

Skylar couldn’t understand why we couldn’t just dig into the Good Stuff, immediately?

And loved every last delicious, rich, chocolate-juice-and-coconut-oil infused bite.

At the top of the post I talked about the Pottery Class Skylar and I are going to, and as a sidebar, I love making pottery.  When I was in high school, college, and my early 20s, I always knew where the nearest pottery studio was and throwing a hunk of clay on the wheel & creating was therapeutic to me.  Now, it’s a hunk of raw nuts & raw dough in the Vita-Mix, but the net result of creating something from scratch is the same.  How about you, do you like to create or would you describe yourself as a creative person?
