Hi Gang!  What’s shaking?  Well this week has flown by for me!  How about for you?  Is it too early to be thinking about the weekend?  This weekend for me will consist of training for my show which is just 2 weekends away and packing for the move.

I have resisted packing until absolutely necessary.  Prior to moving to Phoenix 9 months ago, I went on a major material possessions donation spree.  Salvation Army and Goodwill used to send trucks to my house to pick up all my cast-offs.  De-cluttering and re-homing items that I will never use is such a freeing feeling!  I hate clutter and cannot function with a mess around me.  Which is part of the reason I haven’t started packing.  The minute the boxes come out, it’s visual chaos and I hate even looking at chaos but it’s time to get over it, and get going on the packing!  Literally there are things like 25 pairs of shoes and my grandma’s antique tablecloths that are still in boxes that I never even opened or unpacked when we got here.  If not unpacking fully wasn’t a telling sign that Phoenix wasn’t going to be for me, I don’t know what is!

Well, all I needed to do mention that my blog was more than just recipes, and I’ve been a kitchen superstar whipping up new creations the past few days.  Not to pat myself on the back or anything!

Danielle told me she’s going to try these on her reluctant veggie eating little brother and Gabriela and many others of you told me you’re going to make these.  Let me know if you do and how they turn out!

And I can’t believe how many of you told me you can hang with burnt or very well done food.

I asked if you’re good at Saying Goodbye or not.  I liked what Evan said:

“I guess it helps to think of things as never truely goodbye, but just so long for now.”

Well said, you very wise old young man!   

And for those of you who were concerned after Skylar’s fall yesterday, she seems fine.

Kids are resilient, but of course, I had a minor heart attack when I her the thud of human bones on hard concreteYikes.  But, Crisis diverted!  Her bones are apparently strong from not drinking milk.  See here if you missed my post on Dairy: Calcium, Myths, and why Milk can Actually Leech Calcium from the BonesI know, it’s heresy for many but it works for us.

Moving On…
As I said, I have been really creative in the kitchen the past few days.  I impress myself sometimes…haha!

He’s not a vegan.  So he will eat cheese of all kinds: goat, cow, soy, vegan “nooch” cheezeNot picky.

Not raw, but who cares.  I surely don’t.  The irony of making Raw Vegan Taco Nut “Meat” and then putting it in the microwave is not lost on me, rest assured.

He loved it and it keeps dinner’s new and “exciting” and although I wound up with two different meals:  

Raw Vegan Taco Salad for me

I didn’t feel like a Short Order Cook, because we had a common ingredient to the meal.  But more importantly, we honored our different eating paths and each enjoyed what we ate.  As I said here, eating is more than just feeding our bodies; you must leave the table mentally and emotionally nourished, too.

I also roasted corn using Susan’s Method:
Leave it in the Husk and Just Roast It.  I usually don’t buy fresh corn because vats of boiling water that take 20 minutes just to come up to a boil and then waiting more and wondering when it’s done…not my thing.

But I just Popped The Corn into a 425F Oven for about 40 Minutes and That was It.  I didn’t even flip it.

I wish I had corn holders, but I didn’t.  So I sliced the corn off this perfectly roasted ear with a knife

And Vegan “Buttered” It Up and added a little Salt (for Scott) and Pepper

While I was roasting the corn, Skylar got her plastic play-food ear of corn and started “eating” it.

I thought it was cute she went and grabbed “her” corn.  And she’s never seen me make corn, ever.  Kids, their minds are always growing and connecting the dots!

Questions
1. Have you ever tried roasting corn in the husk?
That was a new one for me and much easier than boiling it.  Corn just got worked into our summer repertoire because although some raw foodies enjoy raw corn, it’s just meh for me, and boiling a huge kettle of water is not only time consuming, it freaks me out having a small child and huge kettle of water boiling.  Even if I place it far back on the stove, I have a neurotic fear I guess.  Have you roasted anything good lately?

2. Do you donate items you don’t want, use, or need anymore?  Is it easy or hard for you to let go of “stuff”?
I love to donate things, and I hate clutter.  That’s a match made in donation heaven!  I have a rule that if I haven’t worn it or used it in 6 months, off it goes.  No matter what I paid for it.  Most of the time, it’s easy to keep this rule.  There are a few random shirts or outfits that I remember paying top dollar for but at this point, where am I going to wear that super slinky backless dress with a slit up to there that I got before I was pregnant with Skylar that’s now 5+ years old anyway?  And baby and kid stuff multiplies in the closets, I always donate or re-home that stuff!  And I “sneak” out some of Scott’s ugly shirts that he thinks he needs, but he doesn’t.  He never misses them anyway!  What do you donate?  Or, are you a pack-rat?  Do you come from a family of pack-rats?  I do, and perhaps the reason I am the total opposite!

3. Weekend Plans?  Anything fun or exciting going on?
I have a double dateThe Gym and Cardboard Boxes.

4. How many times do you wear your clothes before you wash them?
Gym clothes and socks, I wash every time.  Shorts that I wear for 2 hours and then take off, I don’t wash.  Tshirts, after every wear.  Jeans I wear til they are saggy then wash them.  Towels, I use two, maybe 3 times before I wash them.  I just have so much laundry but I think kids make laundry multiply but wondering if you repeat/re-use things before washing and how many times you re-use before it hits the wash?  

5. What do you all think of some scantily clad Photo Shoot pictures hitting the blog?  Everything’s covered but my top was off for some of my pictures.  I wore: a dress, a bikini, a small outfit, and then a skirt only

My new attitude on the blog is if you don’t like it, don’t read it.  Don’t leave hate mail behind, though, please.  Trust me, everything is super classy and well-done, I would never post something that would not be tasteful or embarrass me or Scott or Skylar,  but I am torn about which pictures to post.  Some of the most beautiful photos are the ones with the least attire.  Hmmm.  Suggestions?
