Fiesta Food

Happy Cinco de Mayo!  Since I only live 10 miles from the Mexican border here in San Diego and the weather has been perfect this week (80s and low 90s and sunny!)…

…there has been lots of fiesta’ing going on already in my neighborhood all week.   Any excuse to party all week, right?

In honor of Cinco de Mayo, I thought it may be fun to include some of my must-have (or would-like-to-have) Fiesta Items:

Cute sundress

Stellar bag

Sex on the Beach

Don Julio

Vegan Fajitas with Vegan Sweet Ginger-Lime-Cumin Dipping Sauce

Chipotle Salsa Lentils with Mixed Vegetables

Vegan Quesadillas with Raw Vegan Cheezey Spread

Raw Taco Nut “Meat” Taco Salad

“Cheater’s” Guacamole

Chocolate Mexican Wedding Cookies

No Bake Toffee & Chocolate Chip Cookie Dough Bites

I think cookie dough and chocolate is a universal party favorite, right?

From my earlier post containing Coconut Oil Recipes, I’m glad you enjoyed seeing what I make with coconut oil and how I use it outside of cooking uses, too.  And you are all some coconut oil fans, aren’t you!  Fun to hear how you use coconut oil in your life.

1. Are you celebrating Cinco de Mayo?

After writing this post, I really wish I was going out and whooping it up but I am not.  I am working.  Thrilling.

2. What do you like to bring to parties, Mexican-themed or otherwise?

I love to bring liquor, desserts, and a good attitude.   With those three things, it’s bound to be a good party!

Oh, and a playlist that you can shake your booty to!

If you’re going out, enjoy your evening and remember to be safe!

P.S. Have you entered my Granola Giveaway yet?

  3. Much thanks for checking out my world.

  4. MMmmm…Mexican food is my favorite of all the cuisines! Thanks for sharing your favorites. Those vegan quesadillas look deeelish!

  5. Love all of your food in this post! I will definitely be having some “guac” tonight (aka cheaters guac like yours!) and I see a margarita in my future. For sure.

Usually for parties I like to bring guac, salsa and chips (because that is what I want to snack on!) or I’ll bring a salad and dessert for holidays since it seems like you can never have too many of those options.

  6. Happy Cinco!

Just got to OR after a whirlwind working visits to friends in Tucson (loved it)–trying to catch up a bit today.
I love coconut oil! And I love to bring salad, dessert, and things that I know the people I’m going to see will particularly appreciate.

  7. Great list of Fiesta must haves! I’m all about those quesadillas and guacamole! I’m not sure whether or not we’re going out to Mexican tonight. We have a fun weekend ahead and maybe just stay in and relax. What do I usually bring to a party? Great homemade dips/hummus or desserts

  8. We’ll be celebrating at our favorite Mexican joint :)
Love that sundress – very cute!

  9. your pics are making me hungry! We’re celebrating cinco de mayo as boy’s day here in hawaii. But every celebration could use some guacamole!

  10. What a cute sundress – I think I might need that ;-) I love love love fun little summer dresses. So comfy. Not doing anything special for the day. I went to spin class, does that count???

  11. I made my version of cheater guac, but that’s all I’m really doing for Cinco de Mayo this year.
I always like to bring salads to parties to ensure there’s some fresh veggies to eat. No meal’s complete without fresh veggies. Sometimes I’ll throw in a batch of my cookies too!

  12. I always bring veggies and dip to parties. Shocking, I know. :)

actually forgot about cinco de mayo this year. I probably won’t do anything. I did make some new cheeze though, so maybe I’ll make nachos to celebrate. We’ll see. I wish I could have a tecate or a corona. Maybe I’ll go get some tequila…you know the good mexican kind. :)

  13. I love your festive post. What cute items you chose! And the food looks so good and tempting! I posted about Cinco de Mayo outfits too. Any excuse for a new attire right? :)

  14. I am celebrating with an at-home made margarita (I hope). Also, looking at the fridge and pantry and trying to makeup dinner. For some reason, I only planned for two dinners this week (I normally plan at least 4). We might be having a sandwich fiesta. :)

  15. ohhhhh 90s is definitely getting too hot for my blood. just walked the dog in 95 here in the IE and was sweating BULLETS!

  16. Yep. Thrilling indeed ;) Great round up.

  17. Happy Cinco De Mayo!! We celebrated tonight with Margaritas and Tacos and it was just fantastic. :)

  19. I just made your guacamole, so good and so simple! Thanks!

  20. I usually work, I honestly have never celebrated on Cinco de Mayo!!! But this year I am on vacation in FL and we are having cervesa (sp) and eating guacamole. We are about to eat shrimp and fish tacos, yum!!! I will send love and good times!!!

  22. That is the hottest moo-moo dress ever! It would really go with your coloring too.

For Cinco de Mayo I went on a quest. There is one Chipotle in the UK. I went there and got chips and guac. Woo, epic!

  23. there’s really no cinco-de-mayo-ing going on around here. i think i saw ONE bar in town with a sign saying come celebrate…we’re just too far from the mexican border, up here in southern ontario. oh, how i would love to be in SD!!! *sigh!*
i take a veg platter or fruit plate to parties (ie no cooking involved) or i take a dessert like brownies or cookies (those i WILL make from scratch!)
well, since you missed partying today, you better have a drink in aruba in honour!
    have a great eve, averie!

  24. Love the cheater’s guacamole. I didn’t get to celebrate cinco de mayo very much today, so your recipes made me feel at least part of it all. They look so yummy. Love the sundress, gotta be Victoria’s Secret.
