"Cheater's" GuacamoleIt sounds like there are lots of guac fans in the house!  Glad you liked my 1 minute recipe.  Great for all you cheaters shortcut-loving cooks.

And I hope you all go out and party like rock stars for Cinco de MayoWhich probably means clearing out your Google Reader for many of you. That’s about as “rock star” as I get lately, too, since I’m usually working rather than going out.   My vacation is coming up though!

Questions:

1. Do you like salt?  Have you ever had fancy salt or sea salt?

I am not a fan of salt, at all. Sure, I like the way it tastes and yes I’ve had “fancy salt” in the past but…

2. Do you notice any effects after you consume salt?

I retain tons and tons of water when I eat salty foods.  No matter how much water I drink, and yes I drink lots of water, I have unquenchable thirst when I eat salt-containing or salty foods.  I keep drinking water to quench my thirst only to blow up like a balloon and it takes a good day or two for my body to really “process” the salt.

If I know I plan to eat what I am cooking or roasting and am not making it just for Scott and Skylar, then I won’t add salt to it and they can season their portions as they wish.

Ironically, after being together for 12 years and me doing all the cooking, Scott has lost 50 pounds and has lowered his blood pressure from the stratosphere down to more earthly levels and I attribute my mindful attitude toward salt at helping to reduce his blood pressure.

3. Are there any foods you just can’t “do”?

Some people can’t “do sugar” or have a hard time with portion control with carbs or need a higher protein diet or can’t do dairy, gluten, soy, tree nuts, and more.

For me, I need to be mindful of gluten and dairy consumption and also my salt consumption. 

I can do sugar and chocolate though!

  1. Everyone always thinks I’m insane when I say that I can’t stand salt. I just don’t like the taste of salty stuff. Blech. And I especially notice I get bloated when I eat too much sodium. Disliking salt doesn’t mean anything if you eat at a restaurant or any processed foods because they are packed full!

    My list of food intolerances grows seemingly every day, I can’t do gluten, xanthan gum, almonds, onion and seemingly quinoa lately. But for taste/texture reasons I can’t stand coconut, any kind of meat, and mushrooms.

    1. I cannot to xan gum either. At all! It throws my tummy for a major loop. Even the kind that’s GF, something about it…just not for me!

      1. I guess it’s good because it forces me to make my own gluten-free stuff, since so many include x gum!

  2. I’m a big salt lover, but also a salt snob. I don’t like or use regular table salt. Himalayan, Sea Salt, or Kosher salt only. I also use Kelp & Dulse granules to add a salty taste.

    If I happen to eat something that contains regular “table salt”, such as chips then I do notice some side effects. I retain water, my lips dry out and stay dry & cracked for 12 hours, and I feel an unquenchable thirst.

    I don’t do gluten. There are other foods that I don’t like, such as cooked cabbage or brussel sprouts ~Shudder~

  3. I think that you and I must have similar chemistry, because I’m the same way. Sugar is fine, but salt makes me feel bad/ dehydrated if I eat salty without a lot of water.
    I’m gluten free and don’t do meat or dairy either.

    The fancy salt looks interesting! I’ve seen all the different colors but I’ve never tried them. Wonder if you can taste the difference?

  4. I love salty sweet combos….avocado with banana and spices….mango, lime and salt….black vinegar, chili, and brown sugar. Thanks for this recipe…I am going to turn my fella onto it.

  5. 1. I like salt, but I rather use soy sauce, miso, or instant veggie broth, to add some flavor at the same time.
    2. I can handle salt in moderation, but I also get thirsty if I eat too much. I like sweets but also salty foods, to balance it out.
    3. I do have to watch my sugar intake, as it makes me incredibly thirsty, even worse than salt, actually. Kiwis, fresh pineapple, and rhubarb are also ‘watch out’ foods for me, they leave a weird burning feeling on my tongue.

My BF has actually gained a few pounds since we’ve met, but I do believe that his cholesterol is lower than before, as he eats much more veggies and less meat because of me. ;)

  6. I’ve been paying attention to my salt intake lately, becuase I think it was causing me to bloat a lot recently. I was eating a lot of pickled foods – kraut, okra, etc, and I cut those out and seem to be much better. I make my own pickles now, but kraut is kind of a pain. And I haven’t tried pickled okra yet, but I keep thinking I might.

    I was thinking about your guac at the store today – avos were 3 for $1! but I forgot to buy them. I wouldn’t call yours cheater’s at all – traditional guac is just avo, lime and salt, so most people should call their versions “too many ingredients” guac. ;)

  7. there’s nothing i can’t “do” but large quantities of fried foods and cheese are definite problems.

  8. I have always liked salt, however I have noticed that lately when I consume a good amount, I get way too thirsty too and I just can’t drink enough water!

    I love salt. I’ve always had low blood pressure and have been encouraged to eat salt through my life. I prefer sea salt or at least Kosher.
    When I get too much, I do indeed bloat up like a water buffalo, so I do have a limit. My hubby hates salt and peppers everything instead. I’m an equal opportunity kind of gal, though, so I like both.
    There really aren’t any foods that I can’t do. I’m a firm believer that there are no off-limit foods, that it’s more important to pay attention to what your body is telling you. Stop eating when you are full, and don’t eat if you’re not hungry. Crazy, I know. I do prefer all natural items, and stay away from the things I can’t pronounce.

  10. I love salt! My favorite is Real Salt, and not because my uncle owns that company, but it really is good. Salt makes me happy. Sugar on the other hand, makes me feel awful, but I still eat it because I have a major sweet tooth!

  11. heck yes I like salt!!! I have been realizing also that its NOT so bad for those who eat a veyr healthy diet with little processed foods. For as much as I workout, sweat anddrink water, I need those electrolytes and salt!!! I just sprinkled some on my kale chips tonight and it was DELISH! I am a bit more thirsty, but other than that nothng crazy! unless im at a restaurant where they LOAD the salt and I blow up lol but it goes away ;)
