Mushrooms

When I went to the farmer’s market, I saw a table with bowls and bowls of mushrooms.

Something about these bowls of mushrooms just draws me in.

Aren’t the baby portobellas cute?

Both from a foodie standpoint and a picture-making standpoint, I loved coming across this table.

It was fun to see all those glorious shrooms.

I could eat mushrooms raw, whole, and plain.

Just by themselves. Sometimes I crave them.


Sometimes I will marinate them and then eat them mixed into a salad.

Or marinated and on a sandwich like my Sweet & Sour Marinated Mushrooms

Not into raw or marinated mushrooms and prefer them cooked?

I hold the meat and add the ‘shrooms in Vegan Fajitas with Vegan Sweet Ginger-Lime-Cumin Dipping Sauce

You could also add or use tofu to the vegan fajitas if you’re not a big ‘shroom fan or want to bump up the protein content.

Or you can always tuck some of your favorite fungi into a Cheezy Vegetable Bake

Just toss them in with all the other veggies and bake…

…and voila.

The cheezy veggie bake is great for:

using up veggie odds and ends

for hiding/camouflaging vegetables if someone in your world doesn’t always like to eat or try their veggies

and also for those times when you think you have nothing to eat and nothing to work with in your cupboards/fridge/freezer, you can toss just about anything you have on hand in and pull a rabbit veggie bake out of your hat.

From my last post about the flat tire I had yesterday, thankfully Scott took it and had one new tire on and it was “only” $150.  Ugh. I’m trading the car in within the next 6 weeks!   Oh, the timing.

And some of you did have some life hands you lemons moments recently that you shared, but hopefully things are all better now.

Questions:

1. Do you like mushrooms?

My mother hates mushrooms so growing up, I was never exposed to them and assumed I hated them too.  Wrong! I  really enjoy the chewiness and density they have.  And I don’t eat them all that frequently, but I love grilled portobellas or shitakes.

I am not a fan of mushrooms in recipes such as mushrooms in soup or in sauces or spreads.  I prefer them whole and alone or as the star ingredient of a dish, like a grilled portobella.

And I despise canned or salty mushrooms.  Icky.

2. Fave way to eat or use them?

Plain and raw suits me but some people have to have their shrooms cooked.

Or just with a little marinade on them is great.

And I like them in salads and love the bites with mushrooms that have soaked up homemade vegan slaw salad dressing.

The mushrooms act as little sponge for the salad dressing, which for me, is perfect since I love sauces and dressings with a passion.

Mmm, good stuff.

Mushroom fan or not? It’s usually a love ’em or hate ’em food.

  2. I. LOVE. MUSHROOMS. When Ryan goes out of town, sometimes I’ll just saute a big plate of mushrooms up in olive oil and butter and have that for dinner!

  6. Those sure are some beauties! I’ve always LOVED mushrooms but I hate them raw. My favorite way to eat them is in soup, on a pizza, or in an omelet!

  7. I love mushrooms, especially marinated and grilled. So yummy. I am craving mushrooms right now!

  8. Pretty mushrooms! You just gave me an idea :) I have so many clients who eat lots of tuna, and so I have been trying to get people to add more diced veggies and use vegenaise to reduce tuna and increase veg intakes…mushrooms would be a perfect addition (or tuna substitution) due to their texture!

  9. big mushroom fan! sauteed in butter, added to eggs is my favorite way! And in stir frys also. I’m definitely into the cooked version as opposed to raw personally.

  10. I just recently started liking mushrooms, and like you, despise the canned kind. My favorite way I’ve had mushrooms was a Portabella Mushroom “Steak”. Delicious.

  13. Lately I have been craving mushrooms – mostly raw (either white or baby bella) or with a gluten-free stir fry sauce (and a bowlfull of other veggies). Love the pretty pictures!

  14. This post made me shudder a bit…I’m a little afraid of mushrooms! Just the idea that they’re a fungus freaks me out. Sometimes I like them raw but I absolutely can’t stand them cooked…unless they’re super thinly sliced on a pizza. I’m talking paper thin…so then i don’t have to taste it! I wish I liked them because there’s so many recipes that use mushrooms but I just can’t get into it!

  15. I love those mini white mushrooms too! I like them raw, but in a stir-fry with kale or bok choy or cabbage with oyster sauce and soy sauce is one of my staples.

  17. I LOVE mushrooms! I also prefer them raw to cooked… chopped and in a salad with a little vinaigrette is perfect for me!

    1. Yes, but I prefer them fresh and not overcooked to a slimy mess. I hated them as a kid because my mom used cheap canned mushrooms a lot that looked, tasted, and smelled awful.
    2. Probably a raw mushroom gravy created in the Vita-Mix.

  19. I love, love mushrooms, although recently I ordered the mushroom toast in a restaurant and I couldn’t stand the taste! Not sure what type of mushrooms they were, I didn’t recognise them, but I will be staying away from them in the future! Ick! :(

  21. I am definitely a mushroom fan! BUT I hate shiitake mushrooms and I hate canned mushrooms. I didn’t like shrooms until I was maybe 9 or 10 and then my mom introduced me to them and I fell in love. I love them in pasta sauces. They go SO well with a pasta sauce full of veggies and a little protein over pasta with basil and mozzarella. Mmmmm. I think that nostalgia probably also plays a role in why that is my favorite mushroom dish….

  22. I will eat mushrooms in stir fries, but in general, I’m not a big fan. Something about the texture just turns me off!

  23. I LOVE mushrooms – in fact, I just made some amazing Stuffed Portabello Caps for dinner last night! Caps are my favorite! I love to stuff them, of eat them grilled on a bun! YUM =)

  25. Hate, hate, hate. They taste meaty and they are so chewy when raw and slimy when cooked. Blech! My husband loves them, so thankfully he can be the one to expose them to our future kids. I was thinking about this when you were talking about beets. The reason I thought I hated them was because my mom HATES them, and that’s when I had realized I had never actually tried them before! I can’t wait until the farmer’s market, I really hope they have some there!
