Summer Fresh

I hope your Monday has been going well.  Mine has been busy!

Moving along to all the green and fresh food I’ve been eating.

I didn’t actually eat the entire grocer’s case of green produce and plants.  Yet.

But I have been grooving on steamed edamame.

Sometimes plain is good as well as sprinkling them on salads.

Other times I sprinkle stevia on them or nooch (I get both from iHerb and use code AVE630 to save $5)

Or sometimes I dip them in vegan slaw dressing

I’ve been going to town on nontoxic raw green beans

And I’ve had many trips to TJ’s recently where I usually buy some sort of fresh produce

Coffee, Coconut Milk, and Chili Lime Spiced Nuts with other produce purchases

The Hummus and the Wall of Dips trip where watermelon was also in full force

And clearly I have my priories straight with this recent stash from the weekend.

After all that fresh produce consumption, I needed some chocolate chips to balance out my diet.

There’s only so many plants a girl can crunch before it’s all about the chocolate.  Just sayin.

Speaking of chocolate, thanks for the compliments on the Chocolate Chip Cookie Dough & Marshmallow Stuffed Rice Krispie Bars from my last post.

Foodgawker liked them.  Small miracles.

I hope you make them.  Super easy and so good.  How could cookie dough, marshmallows, and chocolate not be good though?  Really.

2. What fresh summer foods have you been enjoying?

There is so much great, fresh produce in the grocery stores and farmers markets right now!

My eyes are bigger than my stomach!

I have to remind myself about what we can comfortably consume before it spoils or trying to scramble and use things up before they go bad but there is just so much!

Cherries, watermelon, peaches, nectarines, pineapple, mangoes, avocados, and so much more.  I love this time of year!  I wish we could save and bottle this time of year for say January.

  1. I love watermelon! It is so refreshing.. I love to eat vegetables but I’m not really a vegetarian.. I want to make cookies now looking at this blog full of deliciousness!! all are so yummy!!
