In case you don’t need a 10-inch cookie at once, what we didn’t eat for dessert the day I made it, I wrapped leftovers in plasticwrap in individually-portioned pieces and they were perfect snacks the next couple days. I actually loved it even more because the hot fudge soaked in, making it even more moist and chocolaty.

It’s such an easy, comforting dessert that’s perfect to pair with an easy dinner recipe like the Easy Pizza Bake I posted earlier in the week. For other great dinner and dessert ideas and pairings, check out the Zucchini-Crusted Buffalo Chicken Nuggets and the Easy Fresh Fruit Tart, a surefire way to keep your kids at the dinner table longer and work in extra veggies and fruit.

Chocolate Chip Skillet Cookie

I love making skillet cookies because when it comes to cookies, bigger is always better. It's a fast and easy goofproof recipe that's sure to be a hit. No mixer needed, no dough to chill, ready in 30 minutes, and family-friendly. My family adored this biggie-sized cookie that’s soft, chewy, buttery, loaded with chocolate chips, and the hot fudge and ice cream on top doesn’t hurt.

Yield: one 10-inch skillet cookie, serves about 8

Prep Time: 5 minutes

Cook Time: about 20 to 23 minutes

Total Time: about 30 minutes, for cooling

Ingredients:

  • one 17.5-ounce pouch Betty Crocker™ Chocolate Chip Cookie Mix
  • 1/2 cup (1 stick) unsalted butter, softened (as called for on cookie mix pouch)
  • 1 large egg (as called for on cookie mix pouch)
  • 1/3 cup semi-sweet chocolate chips, for sprinkling
  • hot fudge, for drizzling (homemade or storebought)
  • ice cream for serving, optional

Directions:

  1. Preheat oven to 350F and spray a 10-inch overproof skillet with cooking spray; set aside.
  2. To a medium bowl, add the cookie mix, butter, egg, and stir until a soft dough forms.
  3. Spread dough evenly in skillet, smoothing with a spatula or pressing with fingertips to flatten and cover bottom.
  4. Evenly sprinkle with the chocolate chips, pressing them down lightly with your fingertips.
  5. Bake about 20 to 23 minutes or until edges are light golden brown. Do not overbake; cookie will continue to cook once out of oven due to carryover cooking and is meant to be gooey. If you prefer more well-done cookies, bake a few minutes longer.
  6. Place skillet on top of a cooling rack and allow to cool for about 5 minutes before drizzling with hot fudge and optionally serving with ice cream. Cookie is best warm and fresh but will keep airtight for up to 4 days. I wrap leftovers in plasticwrap in individually-portioned pieces and heat for 5 to 10 seconds in the micro before serving for that just-baked taste.

  1. Skillet cookies are pretty much the best. You get to have your cookie, but don’t have to wait umpteen hours for dough to chill. Plus, the gooeyness (is that a word?) of the center is so happy!
Love this, even though I don’t think it would make it to the leftover stage. People in my house are very greedy.

  2. I think I like baking in my cast iron skillet more than sautéing in it. Love this cookie (shortcut and all)! Extra chips, fudge sauce and ice cream are perfect additions to dress it up☺

  3. My family likes to dig right into dessert. I mean fork into cake with no extra plates or cleanup necessary. We’re pretty serious about our dessert unless we’re with extended family or strangers; that could get awkward. I haven’t made a skillet cookie in a while, but I think the time has come to make your version!

  4. I adore my skillet and of course love chocolate chip cookies. So I can’t believe that I haven’t done this yet. I love warm gooeyness you get to enjoy just out of the oven.
    Yum!

    Pinned. Have a great weekend!

  12. I’ve never made a skillet cookie.  Shameful, right?  I love and preach how awesome my cast-iron is, too.  But, to be honest, I’m not particularly good about cleaning it, so my cookie would probably taste like curry or something.

  13. I also have never made a skillet cookie, although I may remedy that the next time I need a birthday dessert–oh wait, the next birthday is MINE! So I get to choose what I want! This just may be it …
