I love cheese. There’s not a kind I don’t like. Blue, brie, cheddar, gouda, gorgonzola, goat, mozzarella, parmesan, pecorino, swiss, and more. I’m a fan of it all.

I’m also a huge fan of appetizers-as-my-dinner and when there’s cheese involved I have no willpower.

These layered cheese slices are as easy as it gets. There’s a layer of doctored up cream cheese with a dash of hot sauce, chopped Fisher Pecan Halves, and dried cranberries in between cheddar slices. The hot sauce adds flavor but doesn’t make it spicy while the pecans and berries add crunch and chewiness.

Layered Cheese Slices

These layered cheese slices are as easy as it gets. No-bake and can be made in advance. There’s a layer of doctored up cream cheese with a dash of hot sauce, chopped Fisher Pecan Halves, and dried cranberries in between cheddar slices. The hot sauce adds flavor but doesn’t make it spicy while the pecans and berries add crunch and chewiness. Everyone loves this goofproof recipe that’s eye-catching and it’s perfect for parties or game days.

Ingredients  

  • one 8-ounce package old-fashioned brick-style cream cheese, very well softened
  • ½ teaspoon hot pepper sauce, or to taste (i.e. Tabasco)
  • ¼ teaspoon salt, or to taste
  • ¼ teaspoon pepper, or to taste
  • heaping 1/4 cup Fisher Pecan Halves, finely chopped
  • heaping 1/4 cup dried cranberries, finely chopped
  • two 8-ounce packages deli-style sharp cheddar cheese slices, about 3 inches square; I prefer sharp or extra-sharp cheddar
  • assorted crackers, for serving

Instructions 

  • To a large bowl, add the cream cheese, hot pepper sauce, salt and pepper to taste, and stir to combine.
  • Add the pecans, cranberries, and stir to combine.
  • On a 12-inch square of aluminum foil, place two slices of cheese side by side. Spread with about 3 tablespoons of the cream cheese mixture, leaving a bare 1/8-inch margin.
  • Top with two cheese slices.
  • Repeat layering process 4 or 5 times, or until cream cheese mixture has been used. (You’ll have a few slices of cheese remaining that can be saved for another use.)
  • Fold foil around cheese and seal tightly. Refrigerate for 8 hours or overnight. 
  • Before slicing, peel back the foil, cut in half lengthwise and then widthwise into 1/4-inch slices (approximately 24 slices). Serve with crackers. Extra slices will keep in the fridge for up to 4 days. Recipe can be made up to 2 days in advance of an event.

  1. This is brillant…I love cheese.  I’ve never seen anything like this I’m thinking sundried tomatoes or olives mixed in…this is so happening for the superbowl.

    1. Yay, LMK if you make it! And yes it would be great with olives, sundried tomatoes, I could see some figs or dried apricots, really you can go any direction with the dried fruits/nuts!

  3. Very creative recipe! You know how I feel about cheese, and even so I still think this looks great!

    By the way, I made a second batch of the soup this morning!  You should feel very special, because I used the LAST of my frozen garden tomatoes for it!   Half a cabbage, a bag of frozen pepper strips and a bag of frozen broccoli (added after cooking so they don’t disintegrate!)  Already excited for dinner!

    1. Glad you’re loving the soup! And for you to remake something, I know you definitely love it! I haven’t had that issue with the broccoli too much but I keep my florets a bit on the larger side and yes, definitely add towards the end. I have never tried with frozen, only fresh. I think frozen may be more prone to disintegrating whereas fresh can withstand some rapid boiling for awhile.

  4. I love appetizers as meals too, and I could definitely make a meal of this!  We are big cheese lovers in this house!  I can’t think of a better game day food.  

  5. I think we must share taste buds.  I bought a white cheddar cranberry cheese for a cheese board at Christmas and loved it.  This looks like a fun (and easy!) party idea with a good combination of flavors.  

  6. I don’t think I’d necessarily need crackers to enjoy this! This would be great for the neighborhood super bowl party. I could assemble it in the am, send it over with Jon, make my half time appearance and then sneak back to my quiet house!

    1. I knew this would be perfect for our neighborhood party–most of it was gone by half time. Jon really loved it too (we had to try some with brunch)! Nuts and cranberries go so well with sharp cheddar and the layers look nice– like mini cream cheese sandwiches.

    1. I don’t have to be trapped in snow to crave cheese! I wish that was the case though since it never snows in San Diego….but I still crave cheese :) Darn!
