As well as for anyone looking for a fast, easy, no mixer dessert that’s a guaranteed hit.

Peanut butter is incorporated three ways – in the dough, with Reese’s Pieces, and with peanut butter cups.

And if that was enough I broke out some fun chocolate and orange sprinkles because sprinkles make everything better. If you don’t impulse buy and hoard seasonal sprinkles at Target like I do, use regular chocolate jimmies.

The pie is a spinoff on one I made a few years back that’s been a reader favorite over the years. It uses my go-to blondie recipe that’s so easy.

The cookie pie is slightly crisp around the edges and buttery soft and chewy in the center.

There’s lots of texture from the sprinkles, the crunchy Reese’s Pieces shells, and it’s exploding with bigtime peanut butter flavor. It’s just irresistible.

Loaded Peanut Butter Cookie Pie

Calling all peanut butter lovers, this pie is for you. As well as for anyone looking for a fast, easy, no mixer dessert that’s a guaranteed hit. Peanut butter is incorporated three ways – in the dough, with Reese’s Pieces, and with peanut butter cups plus there are sprinkles. The cookie pie is slightly crisp around the edges and buttery soft and chewy in the center. There’s lots of texture from the sprinkles, the crunchy Reese’s Pieces shells, and it’s exploding with bigtime peanut butter flavor.

Ingredients:

  • 1/2 cup unsalted butter (1 stick), melted
  • 1 large egg
  • 1 cup light brown sugar, packed
  • 1 tablespoon vanilla extract
  • heaping 1/3 cup creamy peanut butter
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt, or to taste
  • 1/2 cup brown and orange fall-themed sprinkles (substitute with chocolate jimmies)
  • 1/2 cup Reese’s Pieces, plus more for sprinkling
  • about 10 to 12 miniature peanut butter cups, unwrapped

Directions:

  1. Preheat oven to 350F, spray a 9-inch glass pie plate with cooking spray; set aside.
  2. To a large, microwave-safe bowl add the butter and heat on high power to melt, about 1 minute.
  3. Wait momentarily before adding the egg so you don’t scramble it. Add the egg, brown sugar, vanilla, and whisk until smooth.
  4. Add the peanut butter and stir to combine.
  5. Add the flour, salt, and stir until just combined, don’t overmix.
  6. Add the sprinkles and stir to combine.
  7. Add the Reese’s Pieces and stir to combine.
  8. Turn batter out into prepared pan, smooth the top lightly with a spatula, and add the peanut butter cups, evenly spaced over the surface. Push them down so that they’re flush with the dough.
  9. Evenly sprinkle 1 to 2 tablespoons of extra Reese’s Pieces over the surface for visual appeal, lightly tapping them down.
  10. Bake for about 26 to 29 minutes, or until center is set and a toothpick inserted in the center comes out clean or with a few moist crumbs, but no batter. Allow pie to cool on a wire rack for at least 30 minutes before slicing and serving. Pie will keep airtight at room temp for up to 1 week.

  1. Halloween is right around the corner and this would be the perfect party pie! Our street has an annual garage party and while this has given me an idea on what to take, I haven’t thought much about what I’m going to be.

    • I love that you’re actually getting dressed up! And yes this is perfect for a garage party!

    • Joan Jett and Rex Kwon Do took this incredible PB cookie pie to the garage party. It did disappear (which is always a good sign because there was probably enough food for the entire subdivision)! Axl Rose and Slash from across the street definitely took us all in the costume department.

  5. Guilty of being a holiday sprinkle impulse buyer, and yet I always think I need more! :) This is the ultimate peanut butter cookie pie – so much deliciousness in one place! I have your Peanut Butter Comfort cookbook and have enjoyed many of the recipes. This is another peanut butter recipe to add to the arsenal!

  8. We make cookie pie for my kids every year on their birthday. My daughter requested peanutbutter this year, this recipe fits that order perfectly. She loved it!

  9. I saw this pin and thought it would be a fun family reunion activity for my youngster prebreakfast camp to make together for a hiking treat later that day. I want to use to pizza pans and triple the recipie so there will be more room for ten pair of little hands to pat it out and decorate. (five each pan) Then it could be cut up in reasonable squares later for dispersal. How thick does the batter need to be in the pan to avoid burning or crumbly cookies? It looks so good.

    • If you triple the recipe, the thickness of the batter won’t change; you’ll just have a lot more of it to be divided among more pans. I have only made the recipe as written so can’t make suggestions beyond that.
