I lived in Italy for a year, and I learned many, many quick pasta dishes that can fill the bill for any meal. Pasta has been my “go-to” meal in one form or another ever since.

If I need to make a meal in a snap, I go with a cheese quesadilla. Sorry I don’t have a link, but there’s not much to the “recipe.” Brush a flour tortilla with oil, put it in a large skillet, cover it with shredded cheese, cover it with another tortilla, brush the second tortilla with oil, then flip it after a few minutes to warm the second tortilla and make sure the cheese is melted. Cut it into quarters with kitchen shears. Quick, and while it’s cooking, there’s just enough time to toss together a salad.

When I’m in a crunch I like to whip up boxed mac and cheese and throw in veggies and grilled chicken.

although it’s not sweet, it’s dang easy and tasty, baked garbanzo beans. Rinse and drain a can of beans into a 9×9, douse with olive oil, salt and cumin (and lemon juice if you’d like). Bake at 375 for 20-30 minutes stirring every 10 minutes.

I love grilled cheese sandwiches. They’re awesome for when you want to have something to eat real quick. Just butter the bread and put the buttered sides out so that they can fry. Put a piece of cheese in the middle so it melts while the bread fries. Flip until browned. I like grilled cheese best with italian bread and american cheese. Great, now I’m hungry. >.<

Taco dip. In a electric skillet put a layer of cream cheese. Followed by layers of bean=less chili and shredded cheese. Add a packet of taco seasoning and heat on med-low until cheese is melted. Grab some tortilla chips and enjoy.

My favorite quick recipe is butterscotch haystacks…pretty much just melt butterscotch chips, fold in cornflakes (or pretzels, or chow mein noodles), and drop mounds of them on a sheet to set up.
