Easiest Chinese Fried Rice Recipe

If you’ve ever wanted to learn how to make fried rice, this recipe will help you in no time. I’m not sure why but I have very few rice dishes on my site.

Time to change that with this easy, one-skillet recipe that’s ready in 20 minutes and better than takeout. You’ll never be tempted again to eat rice from a flimsy white takeout container after trying homemade.

The chicken is moist and juicy and there are green onions, garlic, sesame oil, and soy sauce for layers of flavor.

My favorites are the bits of scrambled eggs. Fried rice just isn’t fried rice without those coveted bits of eggs that I go searching for and devour those little treasures first.

It’s such an easy and healthy weeknight dinner you can whip up in no time and the leftovers are great for lunches!

What’s in Chicken Fried Rice? 

For this Chinese chicken fried rice recipe, you’ll need: 

  • Oil (both sesame and vegetable) 
  • Chicken breasts 
  • Frozen peas and carrots 
  • Green onions 
  • Garlic
  • Eggs
  • Cooked rice
  • Low-sodium soy sauce

How to Make Fried Rice

To make this chicken fried rice recipe, you’ll first add the oils and diced chicken to a large skillet. Cook the chicken over medium-high heat for about 5 minutes, or until no longer pink inside. Remove the chicken to a plate while you stir-fry the veggies. 

To the same skillet, add the peas, carrots, and green onions. Once softened, add the garlic. 

Push the veggies to one side of the skillet, and scramble the eggs on the other side. Add the chicken back to the pan, followed by the rice. Drizzle everything with soy sauce and cook until everything is heated through.

Can I Add Different Veggies? 

Of course! Stir-fried rice is a great clean out the fridge meal. Just note that different veggies have different cook times, so you may need to adjust the recipe slightly.

Tips for Making Homemade Fried Rice

To save time if you don’t have leftover rice on hand or don’t want to cook a batch, use two pouches of ready-to-serve rice. Works like a charm. 

If cooking the rice yourself, I highly recommend making it the day before or adding slightly less water than you normally would. You want the rice to be a little dry so it soaks up the soy sauce (but not crunchy, though!). 

I don’t even bother thawing the frozen peas and carrot blend that’s mixed into the rice. You can add the veggies straight to the skillet!

Easy Better-Than-Takeout Chicken Fried Rice

Easy Better-Than-Takeout Chicken Fried Rice

This easy, one-skillet recipe is ready in 20 minutes and better than takeout. You’ll never be tempted again to eat rice from a flimsy white takeout container after trying homemade.

Ingredients

  • 2 tablespoons sesame oil
  • 2 tablespoons canola or vegetable oil
  • 3/4 to 1 pound boneless skinless chicken breasts, diced into 1/2-inch pieces
  • 1 1/2 cups frozen peas and diced carrots blend (I don’t thaw and use straight from the freezer)
  • 3 green onions, trimmed and sliced into thin rounds
  • 2 to 3 garlic cloves, finely minced
  • 3 large eggs, lightly beaten
  • 4 cups cooked rice (I use white, long-grain or brown may be substituted. To save time use two 8.8-ounce pouches cooked and ready-to-serve rice)
  • 3 to 4 tablespoons low-sodium soy sauce
  • salt and pepper, optional and to taste

Instructions

    1. To a large non-stick skillet or wok, add the oils, chicken, and cook over medium-high heat for about 3 to 5 minutes, flipping intermittently so all sides cook evenly. Cooking time will vary based on thickness of chicken breasts and sizes of pieces.
    2. Remove chicken with a slotted spoon (allow oils and cooking juices from chicken to remain in skillet) and place chicken on a plate; set aside.
    3. Add the peas, carrots, green onions, and cook for about 2 minutes, or until vegetables begin to soften, stir intermittently.
    4. Add the garlic and cook for 1 minute, stir intermittently.
    5. Push vegetables to one side of the skillet, add the eggs to the other side, and cook to scramble, stirring as necessary.
    6. Add the chicken, rice, evenly drizzle with soy sauce, optional salt and pepper, and stir to combine. Cook for about 2 minutes, or until chicken is reheated through.

Notes

Recipe is best warm and fresh but will keep airtight in the fridge for up to 5 days or in the freezer for up to 4 months. Reheat gently as desired.

  2. This is delicious fried rice and so easy to make. I added a small, sweet opinion because I like a little onion in my fried rice but otherwise followed the recipe as written. My husband is getting home late tonight… I ate SO much of this rice, because I could not stop myself; that I had to make another batch within an hour to make sure there was enought for him. I typically make him 2 meals- one for now, one for lunch tomorrow. I guarantee he  is going to ask me to have this in the fridge at all times. He loves leftover Chinese. Eats the rice for days.   12. First time making it and it turned out ok! 4 cups seems like a lot of rice though, is it really 4 cups? It ended up making plenty leftovers so that’s good. Maybe next time I’ll try 2 cups since I was the only one eating. And I can definitely do better at cooking the chicken. 😂😂 it didn’t turn out super tasty but I like the idea of it cooking in sesame oil. Thanks!!

  17. Instead of peas / frozen veg . I use fresh asparagus,carrots,broccoli, and snow peas ! Otherwise followed directions. Love it … easy and good.

    1. It really depends if you’re making it as a side, as the main, how big of appetites you’re feeding, etc. so it’s hard to really put an exact gram or cup measurement on a “serving” since that can vary. Sometimes you want a lot! Sometimes you want a couple bites.

      I would guess a cup and a half to two cups, give or take, as a main.

  18. I’ve made this a few times now, and it’s quickly becoming one of my go to meals. Yum!!! I did make one change after the first time making it, in that I didn’t use the frozen veggies directly from the freezer. Instead, I put them in a strainer and ran them under cool water for about 30 seconds. I find that this gives them a better texture. Also, for the next time I make this, I might throw my chicken in a marinate first.

  23. I usually don’t leave a lot of reviews online, but after making this, I had to say how absolutely AMAZING it is! I absolutely loathe cooking – making dinner every day is the name of my existence – but this was so easy and phenomenally delicious! And it’s totally customizable by changing up the veggies. I used peas and carrots, typical for chicken fried rice, but I also added frozen corn… I feel green beans or mushrooms would work well too, something to try next time. And I love that since I’m making it, I have total control of the sodium content – add just enough soy sauce to make it flavourful without getting the salt overload you’d get from a restaurant. This is going to be my new favourite meal to make.

  25. I made this last night for my 5-person family. I used Kroger-brand pure sesame oil and Kikkomen less-sodium soy sauce in this recipe. I actually made a double batch, thinking we’d have plenty of leftovers for the next day but NOPE! Every grain of rice gone save a small container I had to hide so I’d have lunch at work. This turned out every bit as good as advertised, super easy, and dead cheap to make. It’s a new family favorite!

  32. I have made this recipe a few times and it has been popular and completely finished off each time it was made. My son told me he would be skipping dinner yesterday until he heard that I was making this.The recipe is quite versatile. I usually cut up leftover chicken in to bags in my freezer to make in other recipes. I have replaced the 1st step of the recipe with this and it still turns out amazing. I also don’t generally have green onions so substitute either a regular or sweet onion instead and it has also turned out awesome. I used leftover parboiled white rice last time I made it and this time used leftover basmati rice and it again turned out awesome to the last bite.

  33. i did’nt think you could use sesame oil to fry with ,,,,I always thought it to be to delicate of an oil and that it should be added at the end of the recipe for fried rice to season it once the pan is removed from the heat ….try it some time Thanks for your recipes

    1. I really don’t listen to that advice personally although I have read the same thing many times over the years. I just add the oils together at the beginning and it’s just fine for me. Although maybe a chemist would disagree, in reality it works just fine for me.

    1. It would be GF if you use GF soy sauce which you would probably need to order on Amazon, not commonly stocked in grocery stores. However, ask the person you’re cooking this for is regular soy sauce is ok for them, since it may be, and that would be the only item that has trace gluten in it.

  42. I do the same basic recipe for years, except I use some thinly sliced fresh or pickled ginger in the mix. I also marinade my chicken first in soysauce and sesame oil and a little five-spice.

I’ve been craving chicken fried rice but staying at home has made it impossible to get take out.  I’m not a cook and have rarely tried to make much more than breakfast and PBJ’s. But…This recipe was super easy and it tastes amazing.   51. I just made this recipe and it is delicious! I used my giant wok so the only step I did differently was placed the cooked veggies in another bowl while I cooked the eggs in the wok. I just dumped them back in after my eggs were soft scrambled, gave it a quick mix, and continued with the recipe.   60. After cooking and removing chicken as described, add cold pre-cooked rice to remaining oils in pan. Flatten into single layer and Do. Not. Stir. When bottom of rice is golden/brown, flip and fry other side. Then follow recipe w veggies, eggs, final mix w soy sauce. This is chicken FRIED rice.   66. Good recipe but fresh cooked rice will not work. I actually waited 3 hours after I cooked my rice to make this recipe. Also would recommend stir frying the rice with butter prior to adding it to the veggies.

    1. I make it all the time with fresh cooked rice and others do too. It does work. Maybe it’s not ‘as perfect’ as if you wait a bit but sometimes there just isn’t the time to wait.

      I have never added butter to the rice in this dish. Everyone has their own method for doing things though of course.

For a quick meal it works well. I would recommend it and it had a great flavor. Would be happy to amend my rating if there is a way to do so.

  78. I made it, kinda, with the stuff in my fridge at the end of the month. I used flavoured rice, tossed a bit of Chicken soup stock in when I cooked it. Added a bit of powdered ginger and used a dash or two of chinese five spice. Regular onions, and no eggs because I hate the things. :)I have a problem with recipes, they never get made as directed (unless it’s baking…). Very nice base recipe.   81. Fantastic! Can’t to try it with different meats and fish and veggies! I only had one tbsp of sesame oil so used peanut oil for the second tbsp. Also, next time I will use a skillet rather than my wok. It made it difficult to scoot the veggies over to fry/scramble the eggs. I used tamari sauce since we eat gluten free. Also used brown rice. So delicious. I made it ahead of time for dinner and my husband and I are devouring it for lunch!

  106. Excellent recipe, very classic and easy to modify to suit your personal tastes. I do fresh cooked jasmine rice, and add teriyaki and hoisin. Going for something maybe a little closer to tepanyaki. I’ll definitely be looking into some of the modifications other commenters have mentioned. This works great as a weekly meal prep item and keeps extremely well in Tupperware in the fridge. IMO, like many one – pot recipes, this actually improves with a little time for the flavors to mingle.

Well it’s expensive and I’m sure loaded with a bunch of stuff they don’t need. This was so easy. I used Jasmine Success Rice and followed the recipe exactly-even investing in some sesame oil. So glad I did because my son remarked that the kitchen smelled like a Chinese restaurant – which was a good sign I was headed for success. This turned out so great and everyone had seconds.   117. Easy prep, I took it a bit further than the recipe called for though. A triple portion, I used a medley – with red and yellow peppers, wax and green beans, broccoli, baby corn, and carrots.Instead of day old rice or pouched rice, you can also make fresh rice – slightly firm, drain and then put on a cookie sheet tossed in the freezer for about 20 minutes, and microwave for 3 after removal. This will quickly dry them out enough so that the grains don’t stick together!I also cooked a chopped clove of garlic in the chicken ahead of the other ingredients. Teriyaki sauce over the top and a splash of Ponzu,and I left my roommates astounded and my date satisfied ;)

    1. I think both – similar to a restaurant version AND healthier since it’s not drowning in oil. If your rice wasn’t brown then yes probably adding more soy sauce is necessary. All ingredients, etc. vary so always add to taste.

  131. My sister and mom gave this recipe a nine out of ten! It was quite the hit!! The chicken part of the recipe was amazing–it tasted just like how it is in restaurant, but with high quality breast chicken! Yum yum!
    To make it a bit healthier than the restaurant version, I used reduced sodium soy sauce, organic unrefined sesame oil, and organic brown basmati rice.

    I also added green onion to the recipe, and in the future, I might add bean sprouts and mushrooms!

    1. I simmered fresh, diced carrots for 3-5 minutes, al dente. Removed from heat, added the frozen peas (corn?) to thaw and partially cook them. Meanwhile, continued main dish. Drained peas and carrots. Added to main dish per recipe. Worked perfectly. Veggies were firm and not mushy. Note, I used leftover corn on the cob instead of frozen corn, yum!

  134. I made this and it was good and pretty easy. I don’t like microwave rice and always make mine in a rice cooker. Unfortunately, I mis-read the recipe. I measured 4 cups of uncooked Jasmine rice, cooked it in the rice cooker, and added it all to the other ingredients. Since rice swells up when cooked, I had too much rice. It was still good, just too much rice in proportion to the other ingredients. Totally my own fault!

    1. It doesn’t have the same smoke point as canola or veg oil and I would use those if possible.

I added traditional mixed froze veggies (corn, string bean, peas, carrots) and used 1/2 brown rice 1/2 jasmine. Note – when I do this again (and I will!) I would microwave the pre-cooked rice in the pouch per instructions first and then put in wok. I also added some pickled ginger and mixed it in at the end. Delicious. (We may make a longer version and marinate the chicken first) But this was a great, quick dinner for three with a leftovers portion. Love it!

The sesame oil was a great addition, and the frozen peas and carrots a great time saver.
