And speaking of Rainbows, I am excited because Pride in San Diego is in mid-July which will be here before I know it.  It’s such a fun weekend!

From my last post Knock It Out & Pileups, it seems that most of you dislike the feeling of letting tasks and chores accumulate and pile up as much as I do.  It seems to invoke stress and anxiety in most of us when there’s more tasks and items to accomplish than time in which to do them.  But, such is life and the best we can do is try to remain calm.

I’m glad you’ve been knocking out some items from your to-do list lately, though.

Questions:

1. Do you try to eat the rainbow?

Plants have so many vitamins, nutrients, minerals, and trace elements in them and I just feel so much better when I am eating an abundance of fresh, mostly raw, fruits and veggies.  I can just feel the goodness entering my cells.

If I am low on eating my rainbow-colored foods and am eating more, ahem white or brown foods, I definitely feel a difference in my energy, moods, and just the overall vibe and am reminded to get back to eating more rainbow-colored foods.

2. What rainbow-colored food or recipe have you enjoyed lately? What color is your favorite to eat?

I think reds and greens are my favorite colors to eat.  From juicy red fruits like strawberries and watermelon to red pepper and tomatoes, reds rock.

Greens are probably the most beneficial color for our bodies, in my opinion.  Everything from greens leafies, lettuces, kale, chards, cucumbers, broccoli, peas, green beans, sugar snap peas, peapods, and so many more; the green family is probably the biggest and the best for us.

3. Any non-rainbow colored foods or recipes you’ve enjoyed lately?

  1. Hmmm. Either green or orange are my favorite–mangoes (the skin AND the inside, woo woo) + sweet potatoes are tied ;)

  2. Similar to you, when I think of rainbow meals I think of red and greens and yellows, too: tomatoes, fresh raw corn sliced off the corn and finely chopped basil all together in a lovely bowl. Mmm, summer rainbow salad!

  3. haha, this is a very fun and creative post, averie – nice job!
    i love salad beasts/throw everything but the kitchen sink in a bowl-type salads, so they end up pretty colourful. i likely eat a lot of reds and greens for fruit and veg favourite picks….
    cereals are mostly white! that is to me what your “brown” is to you! :)
    i betcha it’s as warm as san diego here today – lovin’ it!

    I eat very colorfully – especially my greens. it’s funny, some of my photo galleries (ts + fg, etc) when you look at them all at once there is a lot of green! :)

  5. These look delicious! I need to go get some bananas so I can try those blueberry banana oat cakes! I love colorful recipes! It’s so much more fun to eat when your food looks so pretty.

  6. I don’t think I follow the food rainbow, I just eat whatever seems delicious to me! I do think I try to be generous with a variety of colours, but I do eat a lot of green!

  7. I don’t attempt to eat the rainbow every day, but there are some days when I do! Strawberries, sweet potatoes or carrots, bananas, romaine and spinach and blueberries — I eat those things most days! I do love brown foods too — chocolate, peanut butter, those are staples!

  8. Haha, I love that brown is a color in your rainbow! I definitely eat that color everyday :) But I do try to eat all the other colors as well.

  9. I definitely feel the difference also. My favorites are red also, especially with all the fresh fruit lately. And purple beets, grapes, and sweet potatoes (well I haven’t tried those yet but I’m sure I’d love them).

  10. yes, i’m definitely always trying to eat the rainbow ~ purple cabbage, red bell peppers, green olives, white fennel, red beets, just to name a few! and yes, i definitely don’t always succeed with eating rainbow colors, i tend to eat a whole lotta brown {chocolate!} for one ;) ;) all in moderation, all in moderation. . .

  11. I like to eat a big salad for lunch that incorporates as many colors of the rainbow as possible. I call it a bucket salad because it is usually enormous. :) But I agree that I always feel more energetic if I eat colorful foods.

  12. I always end up throwing everything in the fridge in my salads so they turn out pretty rainbowy! Lately I have been loving blueberries though and those oat cakes look like a great breakfast or post-yoga snack :)

  13. Ah, my favorite way to eat the rainbow would HAVE to be roasting all sorts of vegetables together. Not only are they delicious and healthy but they look beautiful and pick up the flavors of each other so well. My perfect mix?
    Yellow squash, zucchini, red tomatoes, red peppers, green peppers, and eggplant.

    Yellow, green, red, purple… all colors I love, and even more, all I love to eat!!

  14. I love this! I always try and incorporate color in all my dishes, like tons of different veggies :) I really love green foods right now like grapes, spinach, kiwi etc..but also red like watermelon and strawberries and raspberries! Summer fruits for sure!
