Decadent 7 Layer Brownies

These are some seriously decadent brownies and are definitely in my top 5 brownie recipes of all time. 

That is high praise, but they deserve it because of the incredibly soft and fudgy texture along with all the goodies piled on top.

They are incredibly rich, decadent, so fudgy in the interior, with slighly chewy edges, and they are the brownie equivalent of a quarter-pounder. One brownie felt like it could weigh a quarter pound in my hand but I’m not complaining.

They are just perfectly baked, which for me is a touch underbaked, so they are super moist and gooey. I would rather have nothing than a dry brownie and these are the opposite of dry.

Even though there is coconut, they aren’t overly coconutty which is good if you have people who aren’t the biggest fans of it.

The chocolate chips and butterscotch or peanut butter chips, along with the toffee bits, and sweetened condensed milk, all melt and congeal together to form a top layer that is both soft and gooey but retains a bit of perfect texture to sink your teeth into.

The M&Ms add extra chocolate oomph, texture, and a visual pop of color that lures everyone in. 

I loved, loved, loved these brownies. I also love seven layer bars and this was a hybrid better than I imagined it could be. My daughter was legitimately sad when the pan was finished and kept talking about these for days after.

They remind me of the brownie-meets-seven-layer-bar equivalent of these Loaded M&M Oreo Cookie Bars, which were on the cover of Taste of Home magazine a few years back.

What’s in the Magic Brownie Bars? 

Here are the components of this 7 layer dessert: 

  • The Brownies (I used a boxed brownie mix for once) 
  • Coconut
  • Chocolate Chips
  • Butterscotch or Peanut Butter Chips
  • Toffee Bits
  • Sweetened Condensed Milk 
  • M&M’s

How to Make Magic Brownie Bars

The 7 layer brownies truly are a cinch to make! First, prepare the brownies according to the instructions on the box. 

Since all brownie mixes vary in what they call for in mixing up the batter in terms of the number of eggs, and amount of water and oil, go by what your box of mix says, but bake it in a 9×9-inch pan until the brownies are about 90% done, whatever time that means on the clock.

For me that was 30 minutes in a 325F oven. If you’re baking in a 350F oven because that’s what your mix says to do, you may bake for less than 30 minutes to get to that 90% done point.

Then, pile on the toppings and return the brownies to the oven for another 30 minutes. Add the M&M’s near the end so they don’t crack or bleed in to the topping. That’s it!

Can I Use Different Toppings? 

The sky is the limit, so feel free to swap or exchange some of the add-ins to include white chocolate chips, pecans, walnuts, mini peanut butter cups, diced candy bars like Snickers or Milky Way, or whatever floats your brownie boat.

What Box Brownie Mix Should I Use? 

For the first time ever, I used a box of Ghirardelli Dark Chocolate Premium Brownie Mix. I have to say I am an ultimate believer in it after this first use.

I recently read an article comparing about 15 brands of boxed mixes and this one was hands down the clear winner in blind taste tests and I can totally see why.

Can I Make the Brownies From Scratch?

Of course! If you want to make scratch brownies, I would use the brownie base from these Loaded Oreo Cream Cheese Brownies and bake it in a 9×9-inch pan.

Tips for Making 7 Layer Brownies

The magic brownie bars are super easy, but it’s impossible to cover every possible baking combination, permutation, and situation with every possible mix out there.

So just remember to bake until they’re 90% done, add the toppings, and bake in a 325F oven for another 20 minutes or so before adding the M&M’s. 

Read over the Notes below the recipe for other tips and reminders before you make these because I want these to turn out as perfectly for you as they did for me. You may never want another brownie recipe in your life after these.

Loaded Seven Layer Brownies

Ingredients  

  • one 20-ounce box brownie mix, plus ingredients called for to make the brownies
  • 1 cup sweetened shredded coconut
  • ½ cup semi-sweet chocolate chips
  • ½ cup butterscotch or peanut butter chips
  • ½ cup toffee bits
  • about 3/4 of a 14-ounce can sweetened condensed milk
  • ½ cup M&Ms

Instructions 

  • Please read over the baking notes below for tips before beginning the recipe.
  • Preheat oven to 325F (or 350F is that's what's called for on your box of brownie mix), line a 9x9-inch pan with foil for easier cleanup, spray with cooking spray; set aside.
  • Mix up the brownie batter according to the ingredients called for on the package (egg(s), oil, water), turn the batter out into prepared pan, and bake for about 30 minutes, or until brownies are about 90% cooked through, but not completely since they are going back into the oven again for approximately 30 more minutes.
  • Evenly sprinkle the brownies with the coconut, chocolate chips, butterscotch or peanut butter chips, toffee bits, and evenly drizzle with sweetened condensed milk.
  • Return the pan to the oven, turn oven temp to 325F if it wasn't already there, and bake for about 20 minutes, or until the top is becoming lightly golden browned and the sweetened condensed milk is not pooling.
  • Return the pan from the oven, even sprinkle with the M&Ms, and bake for about 5 to 10 more minutes, or until the top is as golden browned and set as desired.
  • Cool brownies in the pan for at least 2 hours before slicing and serving.

Notes

  1. I made the brownies using Ghirardelli Dark Chocolate Premium Brownie Mix. The mix calls for only 1 egg and a ratio of water/oil that is not typical for boxed brownie mixes. Additionally, the brownies bake at 325F rather than 350F, also not common. I loved this mix for these brownies and highly recommend using it.
  2. If you select a brownie mix or make brownies from scratch that are supposed bake at 350F, you may not need to bake them for quite as long initially since it's a hotter oven by 25 degrees.
  3. After adding the coconut and various baking chips, if you weren't already baking at 325F, make sure to turn the oven down to 325F so the coconut doesn't burn.
  4. The M&Ms are added in the final 5 to 10 minutes of baking so that they don't crack or bleed excessively since extended heat exposure can wreak havoc on them.
  5. Storage: Brownies will keep airtight at room temp for up to 1 week and in the freezer for up to 4 months.
