How’s your Saturday going?  I’m just dandy because I’m going to check out yoga at a new studio I found…woo-hooo!!!!!!  And, since I ran my lame & time-consuming errands during the week, I don’t have to do them Saturday so we’re going to head out to a park as a family and hopefully just have a nice hour or so together.  What are you up to?

Hip, hip, hooray for the Raw Vegan Dark Chocolate Coconut Snowballs from yesterday.  I loved the yummy comments.  Seriously, so easy.  I try to make all my recipes easy.  As I’ve regarding mentioned before my thoughts on recipes and to me what entails a good recipe, well time commitment and a short ingredient list are two key things, and the Dark Chocolate Coconut Snowballs deliver on both fronts.

So moving along to another recipe that delivers on the Easy but Delish Factor is Raw Vegan “Pasta” Noodles & Raw MarinaraGena inspired me to take my own stab at Raw Vegan “Spaghetti” here

Yesterday I recreated it but tweaked the sauce a smidge.

Here’s what I did this time:
Spiralize 1 or 2 zukes.  (If you’re curious about what spiralizer I use and the total 411 on it, check out this post, and the corresponding backlinks in it.  Here’s a tip…it’s 29.99 on AmazonGo get one, ’nuff said)

Then to make Averie’s Raw Marinara Sauce
1 Tomato
1 Deseeded Red Pepper
5 Baby Carrots
2 Tbsp Dried Basil (fresh is great but I didn’t have it)
1 Tsp Dried Oregano
Tiny pinch of salt or more to taste
Twist of Black Pepper
Optional: 1 Medjool date and/or 1 Tsp Agave and/or Stevia to taste (I used the date and 1 Tsp agave because remember your grandmother who added a dash of sugar to make the marinara sauce taste better?  Same premise here.)
Optional: Garlic, onions, mushrooms, 1-2 Tbsp EVOO or another oil such as flax or hemp.  If you use the drizzle-in-while-appliance-is-running method, that’s awesome.  As a VitaLover, I have a hard time with that because I don’t want red sauce spraying everywhere so I add at the beginning if I add it at all.

Combine All the Ingredients.

Grind, Blend, or Food Process your Ingredients into Red Sauce.

Leave it as chunky or as smooth as you like.

I like it fairly chunky.  Too smooth and I feel like I am either eating soup or baby food.  Neither of which I am that fond of.

And then top the Zuke Noodles with the Raw Marinara

Mix it up and voila, dinner is served.

The entire raw vegan homemade meal, including appliance cleanup, is a 15-20 minute deal.  Seriously.

Optional Add-In’s & Extras:
Mushrooms
Tofu Meatballs/Sausage
Nut/Bean “Burger” Pieces
Real Beef or Turkey Meatballs for that non-vegetarian in your life

I added in nothing extra because just this was dang good.

Just what the Raw Doctor ordered.  Because after the Red Marinara Sauce dinner, something Dark-n-Cool on the palate was lovely.

And there was also a Fresh Batch of Raw Vegan Chocolate Chip Cookie Dough Balls that I made and enjoyed.

  1. I really really enjoy those roasted potatoes… they look super pretty!

    As for reducing my eco footprint, I try to walk everywhere instead of driving. We always try to use public transportation as much as possible!! We have a hybrid car BUT it's still a car.. I actually wish we could go vehicle free but I have a 25 minute commute to work and no busses travel up that direction. Also, I eat local organic foods… the less it has to travel to get on my plate the better!!

  2. mmm the purple potaterrrss look soo good!! and wow I need to get some bouron vanilla extract..I just love TJs they have the most amazing products!

    I always bring my reusable bags to the grocery store and turn down plastic bags if I only bought a few items

    As far as being green goes: I recycle whenever possible, bring my own bags to the store, use eco-friendly cleaning products, and eat a plant-based diet. I am always looking for ways to be more green!

  5. I'm embarrassed to say I don't do TOO much that is eco friendly. I guess I use my reuseable TJs bags?? Haha. Your strawberry protein creation looks so yummy.

  6. Oh, I completely forgot to mention the food, haha. I love banana soft serve. I've had some frozen bananas in the freezer for awhile, meaning to make some. Its really good if you add some frozen pumpkin to it.

  7. Eco-friendly, eco-friendly..

    I use the cloth bags when I go shopping, or if its something little, I just stuff it in my purse (which I just got and is way bigger than my last one, and I'm loving it). Come to think of it, the purse it cloth (cotton) too. That's got to count for something, right? I also use reusable containers for lunch everyday (some are stainless steel, some are glass), and I have my own set of bamboo-ware, instead of using plastic forks every day. My cat uses wheat litter because we can flush it down the toilet instead of using plastic bags for the waste. Oh, and as someone else said, I do bring my coffee mug with me when I go to Starbucks (although it is usually for tea). I do wash my clothes in cold water, and I use an "eco-friendly" HE detergent. All of our appliances are Energy Star too, but that's just a coincidence…we live in an apartment, they aren't "ours". All of my bath products are "organic" or "natural", but thats really from a vegan standpoint, not an eco-standpoint.

  10. That would be awesome if you could get yourself a job teaching yoga! And a fancy new website? Girl, how do you do it ?!?

    By the by, I got my order from RFW, it had my cacao powder in it and wowie, is it potent! You sure don't have to use much and it will be perfect for these dark chocolate balls! I swear I felt like I had had three cups of coffee after I ate my cacao macaroons!

    Just got some of that bourbon vanilla in the alcohol-free version, yum!

    I swear sometimes my legs feel nailed to the floor when I try that pose. I have to get my legs in lotus before I can lift them up!

  13. I use Burt's Bees body wash and shampoo (much more eco-friendly). I try to buy local and be aware of where my food and other necessities are being shipped from. I wash all clothes in cold water. I bring my own bags everywhere! This embarrasses Mallard sometimes but I feel so much better knowing I am not using plastic bags.

  14. Yay for Averie! Love this post! I try to always bring my reusable bags and I bring my own mug to Starbucks whenever I go (usually about 1-2 times per week.) I do what I can. I'm also trying to switch over to all natural cleaning products, which is why I'm going to enter your latest giveaway right now!!!!
