Vegan Banana Nut Muffins (Gluten/Soy-Free)

Scott bought a mere eight very large and very ripe bananas that all need to get used up, like before they even left the grocery store.

But since they’re ours now, I needed to whip up something using them.  So here’s a quick, easy, vegan muffin recipe for you!

 Blend first two ingredients, the cashews & flax seeds.

Then add everything else and blend it together with whatever appliance floats your muffy-makin’ boat.  Mine was the VitaMuffyMaker.

Batter Up

Pour into Muffin Tins

Bake at 350F for 18-24 minutes (mine were gooey at 18 mins and I took out at 20 mins for that smidge underbaked goodness I go for)

Voila, 8 little Vegan Banana Nut Muffins

Enjoy!  Great for lunches, kid snacks, breakfast with a slather of nut butter on top, you name it, suuuuper easy and as always vegan, gluten & soy-free with no additional oil added.

Vegan Banana Nut Muffins (Gluten-Free, Soy-Free)

Recipe Yields 8 Small to Medium Muffins
1/4 c raw cashews (didn’t soak them)
1/4 c flax seeds
1 Large Banana
1/3 c almond meal (or 1/3 c whole almonds that you grind)
1/3 c brown sugar
2 Tbsp Agave
1 Tsp Cinnamon
Optional: 1-2 Medjool Dates (I used one date)
Optional: Add 2 Tbsp Cocoa or Carob Powder
Optional: Add 1/4 c shredded coconut

Optional: Add 1/4 dried fruit like raisins, cranberries, blueberries, gogi berries, etc.

  3. Chex Mix of any kind is like crack! I couldn't live without my blender despite the fact that its leaky. The chex mix would be a good option for when I'm with my more conventional eating family members.

My mini food processor has to be my favorite kitchen appliance right now. it seems like i constantly am whipping up things in it and its a cinch to clean as well!! double love:) second would be my vitamix (i have an OLDie but a goodie) and third would be my greenstar juicer because its harder to clean than these other two!

    i can't wait to try the choc chip cookies – but i WONT be making the puppy chow! I have had it in my past and know that to make it is DANGEROUS for me – i could eat the ENTIRE bowl its so damn good. so off limits haha…

  8. Hello my friend! Favorite appliance…? I am hoping that it is going to be a Vita-mixer. Keep your fingers crossed that I can talk hubby into it, or should this just be a ask for forgiveness after the fact. I'll let you know.
    Yesterday I spent the raining afternoon in the kitchen pretending to be Averie mixing up many of her amazing creations and cooking a few of my own. I am happy to report that my fig is full of yummy's. Thanks Averie for all the ideas.

    Next time we have Broc I will be giving ACV a try. I could use a new way to eat broc. Its getting a little old raw and plain.

    Gaahh.

    And my fave appliance besides the vita-mix, is probably an immersion blender, when I am too lazy to get my vita-mix off the top of the fridge. it's perfect for blending up soups and stuff.

  11. Our house overflows with appliances and their attachments, BUT I don't have a pressure cooker and I would really love to have one with all of the beans I cook. I'm trying to stay away from using canned beans, but I kind of resent the amount of time and planning it requires to make them from dried.

  12. I've made raw cookie dough soft serve. It is even better this time of year with the addition of pomegranate. I got the idea from the Purely Decadent Dairy-free flavor.

    I also make raw versions of traditional chex mix and that broccoli salad. I think Kate from "Jon and Kate plus 8" makes a cooked version of your PB chocolate Chex mix for her kids on the show. Gotta love that stuff.

  13. Ok Averie, I made the chocolate chip cookie balls and they are one of the best (if not the best) raw desserts I've ever had! Seriously, if I eat them all in the next hour, I'm blaming you! :P I added a blob of coconut oil to the raw chocolate chips, which I thought would help it freeze, but instead, prevented it from freezing past a fudgey texture. I had to make due with fudge swirled cookie balls instead. Such trials and tribulations, eh? Thank you! :) -Eve

  14. ohh I have a broccoli salad recipe I make that used white vinegar…hmm I am now very intrigued to find out how different it would be with the apple cider vinegar!

    I love all your posts Averie, but I think this one is my fav.. vegan "puppy chow" (which i grew up on) AND sweet potato fries.. AMAZING. LOVE it.
