Combine the dry rub ingredients. Score the skin side of the chicken, coat it with the spice rub, and refrigerate. Sear the chicken skin-side down, then set aside.


Saute the onions, red pepper, and optional serrano in olive oil, followed by the garlic. Add the lemon zest, lemon juice, cumin, thyme, broth, and wine, then stir.


Add the chicken back. Then, add the feta, cherry tomatoes, olives, and bake. Meanwhile, boil the pasta.


Remove the chicken. Mash the feta, tomatoes, and vegetables together to form a sauce. Add the pasta and toss before adding the chicken. Then, bake and serve.
