Ingredients
4poundsfrozen tater tots
1poundlean ground beefI used 85%
one 1.25-ounce package taco seasoningI used reduced-sodium
1 ½cupsshredded Mexican cheese blend
1Roma tomatodiced for garnishing
fresh cilantrofor garnishing
optional sour creamblack olives, green onions, shredded lettuce, guacamole, taco sauce, salsa, ketchup etc. for garnishing
Instructions
Place tater tots on a sheet pan and bake according to package directions until as done and crisped as desired. Keep oven on and set temp to 425F.
While tater tots bake, to a large skillet add the ground beef and cook over medium-high heat until done. Crumble beef as it cooks to ensure even cooking.
Add the taco seasoning and stir to combine.
Transfer cooked tater tots to an oven-proof skillet, spray with cooking spray, and arrange tots in a single flat layer.
Top with the ground beef in the center, sprinkle with the cheese, and bake for about 10 minutes, or until cheese is melted.
Garnish with tomato, cilantro, any optional items, and serve immediately. Tot-chos are best warm and fresh.
