The tot-chos are easy, ready in no time, and are perfect for parties of all kinds including Cinco de Mayo or game day parties. I know hungry fans would love digging into these.

And this isn’t the healthiest or most well-balanced dinner idea, but on a night you’re craving some warm, cheesy, carby, comfort food and plan to curl up on the couch to catch up on your favorite shows, these are a perfect. No shame in admitting I have those nights.

Ingredients for Totchos 

This recipe for totchos is so easy but so good and calls for  just a handful of ingredients. The crispy tater tots are the perfect layering food for the juicy ground beef, melted cheese, and cool fresh tomatoes! 

Here’s what you’ll need to make loaded tatchos: 

  • Frozen tater tots
  • Ground beef
  • Taco seasoning 
  • Shredded Mexican cheese blend 
  • Tomato 
  • Cilantro 
  • Favorite nacho toppings

How to Make Totchos

Once the tater tots have been baked to crispy perfection, you can load them up with as many toppings as you’d like! Here’s an overview of the beef totchos recipe: 

  1. Place tater tots on a sheet pan and bake according to package directions until as done and crisped as desired. Keep oven on and set temp to 425F.
  2. While tater tots bake, to a large skillet add the ground beef and cook over medium-high heat until done. 
  3. Add the taco seasoning and stir to combine.
  4. Transfer cooked tater tots to an oven-proof skillet, spray with cooking spray, and arrange tots in a flat layer.
  5. Top with the ground beef in the center, sprinkle with the cheese, and bake until cheese is melted.
  6. Garnish with tomato, cilantro, plus any additional toppings you’d like.

I kept these beef totchos pretty basic because my daughter isn’t quite the condiments queen that I am, but if you want to jazz them up, feel free to add:

  • Sour cream
  • Black olives
  • Green onions
  • Shredded lettuce
  • Guacamole
  • Taco sauce
  • Salsa

Can This Recipe Be Made in Advance? 

No, this is one recipe that’s best eaten fresh from the oven. Over time the tater tots will become soggy from all the toppings, so I don’t recommend making the dish ahead of time. 

Can I Keep This Recipe Vegetarian? 

Of course! You could use seasoned black beans in place of the ground beef, or use a vegan ground beef substitute that you like.

Tips for Making Tater Tot Nachos 

You’ll need frozen tater tots to make this recipe. 

Cook the tater tots according to package instructions and THEN add the toppings. If you add the toppings and try to cook the dish all together, the tater tots won’t crisp up. 

As I said before, you can add as many toppings to your beef totchos as you’d like!

Ingredients

  • 4 pounds frozen tater tots
  • 1 pound lean ground beef (I used 85%)
  • one 1.25-ounce package taco seasoning (I used reduced-sodium)
  • 1 1/2 cups shredded Mexican cheese blend
  • 1 Roma tomato, diced for garnishing
  • fresh cilantro, for garnishing
  • optional sour cream, black olives, green onions, shredded lettuce, guacamole, taco sauce, salsa, ketchup etc. for garnishing

Instructions

  1. Place tater tots on a sheet pan and bake according to package directions until as done and crisped as desired. Keep oven on and set temp to 425F.
  2. While tater tots bake, to a large skillet add the ground beef and cook over medium-high heat until done. Crumble beef as it cooks to ensure even cooking.
  3. Add the taco seasoning and stir to combine.
  4. Transfer cooked tater tots to an oven-proof skillet, spray with cooking spray, and arrange tots in a single flat layer.
  5. Top with the ground beef in the center, sprinkle with the cheese, and bake for about 10 minutes, or until cheese is melted.
  6. Garnish with tomato, cilantro, any optional items, and serve immediately. Tot-chos are best warm and fresh.
