Vegan Mexican Feast: Fajitas & Chocolate Wedding Cookies, Fear & Truth

Hi Bloggie Friends, how’s your day been so far?  Mine’s been awesome because I got together with a very special girl, who happens to be having a Birthday Today: Madeline of Greens and Jeans!!!!

We met at our usual hangout and I chugged sipped 2 large coffees.  And loved every second of it.

And Skylar was having an exceptionally awesome day in the life of a not-quite-3-year-old.  Meaning, she kept us entertained with make-believe food that she fed to us, intermixed with gnawing on wooden stir sticks (no slivers resulted, thankfully!), and Skylar’s great day allowed Madeline and I to gab and enjoy our little Birthday Edition of the Coffee Clutch.

I’m glad you all seemed to like the looks of my homemade Vegan Peanut Butter Chocolate Chip Protein Bars.

They’re No-Bake, No Special Appliances Required…


…No Gluten or Soy and they’re Vegan.

…And they taste great and they’re super easy.  Like 10 minutes and you’re done!  Which is key when you have a lil one around!

Today’s post is inspired by a Guest Post I did on Allie of Pimp My Protein Shake’s BlogAllie was off to Mexico and she wanted something Mexican-inspired for her readers, so I tried to deliver with a Mexican-Themed Feast, vegan style.


The Entree:
My Vegan Fajitas with Vegan Sweet Ginger-Lime-Cumin Dipping Sauce

And this is my Vegan Sweet Ginger-Cumin-Lime Dipping Sauce that blows the pants off Sour Cream!

The whole meal is Vegan, Gluten-Free, Mexican-Inspired, Ready in 15 minutes, and Awesome!  Again, here’s the Recipe!

And for an added touch, if you don’t want to use Follow Your Heart or store-bought vegan cheeze, and you want to make your own cheeze sauce in minutes, check out my Raw Vegan Cheezey SpreadYum!

Now that we have the Entree Covered, and the Cheezey Spread covered, it’s time for Dessert!  Which may or may not be my favorite part of the meal.

Averie’s high Raw Vegan Chocolate Mexican Wedding Cookies
1.5 cups shredded coconut (either unsweetened raw OR just sweetened regular coconut flakes from the grocery store, whatever suits you)
3/4 c agave (or maple syrup)
3/4 c cocoa powder (raw or not)
Dash Vanilla Extract
Optional: 1/4 c coconut oil (I used it and encourage it!)
Optional: 1/4 c chia seeds

Mix all the ingredients together by hand

Vegan Chocolate Heaven in the house

Transfer to a container for the freezer.

If you want to make the wedding cookies one-by-one, feel free to make golf-ball sized chocolate-cookies and then freeze.  You’ll yield approximately 15 cookies.

I was not feeling super inspired to create individual cookies.  Instead, I just scooped things out of the container with an ice cream scooper as needed when I raided went to the freezer.

I dug out a ball cookie. 

A Big Chunk Went Missing from the Container

Thick, rich, fudgy, sweet.  Fast-n-easy, no specialty appliances required, either.  Pretty much everything you’d want in a dessert.  And let’s not forgot those health benefits of coconut and coconut oil.  Everything from an immune system boost to increased healing.  So you can keep on convincing yourself why it’s good for you to eat this little dessert.  Just what the Vegan Doctor Ordered.  Or maybe you’re wanting to cash in on Vegan Thursdays, well here you go: dinner AND dessert, vegan style!

This is a very active pose.  As you are folded over your straight, strong front leg, make sure to keep your quads engaged, and your back leg strong and engaged, too.  Chin to shin.  Drop your neck.  No tension in the head, neck, and shoulders.  Looks like you’re just flopped over, but there’s alot more going on.  Enjoy the deep hamstring stretch!

Tip of the Day:  Breaking free from Fear!  My husband, Scott, does not read blogs.  He hardly reads mine, but he did stumble across an interesting post regarding blogger’s living in fear.  Basically, not blogging honestly and not speaking your full truth because you fear it or fear the backlash.  I admit, for safety reasons, I don’t provide exact details of my street address or anything, but do blog honestly.  Case in point, yesterday’s discussion of Mental ScriptsThank you to all who shared what your scripts and stories are, and whether you’d like to make changes or not.  I share openly my thoughts on everything from karma to mental scripts to my stance on eco-friendly choices to things that make me happy.

I don’t like to read blogs that are Debbie Downers day in and day out, but I also realize that people have real lives, real issues, real problems, and I think it’s wonderful they want to share, vent, communicate, and reach out to the bloggosphere and their readers for supportI like feeling like I am part of their support network by being a reader!  I admire them for posting exactly what they want, and for not living in fear of it!  I try to do the same and not live in fear of what people think!  

Couple Questions, and I know Shelley just asked this, too, but how much do you care in general what people think? I love what Sophia recently said about Truth and about Not Caring So Much!



And do you blog honestly and speak your deepest truth, 100% of the time?  Do you hold back little bits and pieces that you don’t think are fit for public knowledge for fear you’ll be harshly judged or scrutinized for it?  Have you ever posted something and had alot of backlash over it? 

For me, the answer to being scrutinized is yes as it pertains to mislabeling (accidentally, no one’s perfect!) whether a food is truly vegan or truly raw.  And earlier on in my blogging career I realized my sometimes dry and tongue-in-cheek humor doesn’t necessarily translate well over the airwaves compared to in person, so I toned it down a bit as to not ruffle any feathers.  How about you?  How honest are you?  How much do you share?  Can’t wait to read what you share with me here!
