TGIF, woo-hoo!!!!  I’m excited for the weekend!  No big plans or anything, but just spending time with my two fave peeps, Scott & Skylar, is all I really want to do.  The simple things, you know.

But you know me well enough to know I am not going to go on and on about veggies, when there’s dessert to talk about!

You may remember a few weeks back I posted the Raw Vegan Chocolate Coconut Snowballs recipe.

Well, it was sooo popular and I had so many people write in to me to tell me how much they loved them and how easy, fast, and delish the recipe is.

You’re thinking, why mess with a good thing?  Well, I couldn’t help myself and decided to make one tweak.  I made it dark.  Dark Chocolate that is.

Averie’s Raw Vegan Dark Chocolate Coconut Snowballs are here:
1.5 cups shredded coconut
3/4 c maple syrup (or agave to be preserve true raw status if you care)
3/4 c  Dark Cocoa Powder (I used Hershey’s Special Dark and it’s not technically raw but find what suits your lifestyle & needs online if needed)
Dash Vanilla Extract
Optional: 1/4 c coconut oil (I used it and encourage it!)
Optional: 1/4 c chia seeds (did not use it in today’s blend)

Combine all the ingredients in a bowl & mix together by hand

Remove and put into a freeze-able container.  Freeze til solid…

….Remove from freezer…

….and dig in!  Here’s a ball.

There could not be a simpler or darker dessert than that.

Or wait, maybe there could be something darker.  I whipped up a batch of Dark Chocolate Macaroons.

 And sent some off to a Birthday Girl.

And some to a Beautiful Pea.

Dinner you ask?  Veggies, rabbit food?  I’ve got another massaged kale salad with brock, cauli, cukes, and tomatoes.  Dressed with my Homemade (Broccoli) Slaw Dressing.  Apparently the Pea Household got in on the action, too.

And there was a salad with cukes, carrots, peppers, and some roasted sweet potato fries.  This one I dressed with OJ, agave, and cracked black.

For dessert I dug into double decker dark balls (TWSS).  Silly kids, the vegan dark chocolate coconut snowballs that you need to go make, now!

Flashback Friday Pictures in honor of Miss Janetha I’ve got a couple I could scrounge up.  As I’ve mentioned before, I don’t have anything older than 4 years or so saved on memory stick.  Everything else is on actual 4 x 6’s and I don’t have time to convert things.  I’d rather spend my free time in the kitch or with my fam.

But here were some hot air balloons that used to drop down into the private canyon behind our San Diego house so low that I swear, sometimes I thought they would just drop in for dinner.  Literally.

And here were two puppies my dog, Britney, had.   The breed is papillon and they were only days old here.  They were literally the size of hamsters when they were born.   Too cute!

 Yoga Today is Supta Virasana (Reclining Hero Pose).  Great for runners or anyone who just wants to get in for a deep quad stretch.  Love this pose for that!
