Ooooooh! I would love to win this book!!! With all the stress and challenges in my life at this point in time I am so in need of ideas for creative, yummy, gluten free, comforting meals. It would be such a gift to be the winner. After so many years of eating gluten free, its awesome to know that someone out there has created stuff that could take my cooking to the next level of down home inspiration and taste.
When I am in some serious need of some comfort chow, I roast batch of kabocha squash chunks drizzled with olive oil and sea salt. And then I put the squash chunks in a nice large bowl and top it with a generous puddle of thick lemon-dill tahini dressing and eat while watching my favorite tv program. mmmmmm….

I had no idea a book like this existed but I LOVE IT! I have been trying to make vegan/gluten free meals and snacks at home but having some difficulties finding recipes that still taste amazing (picky fiance). My favorite comfort food is absolutely chocolate cake!
