Cooking With Trader Joe’s Cookbook Giveaway

Yesterday I mentioned that I am one of the contributing authors in the new Cooking With Trader Joe’s Cookbook: Easy Lunch Boxes, which was just released this week.
And I’m giving away a copy of the book for one lucky reader.
The book is the brainchild of author Kelly Lester, mom of three, avid Trader Joe’s fan, and creator of the ingenious EasyLunchbox System. Kelly and the book’s co-authors share their stories, favorite recipes, and time-saving tips to make lunch-packing madness a thing of the past.
Here is one of the recipes I contributed
Holy Frittata: Spinach and Red Pepper Frittata
There are over 80 recipes for easy-to-prepare meals and snacks that will appeal to both kids and adults, such as Holy Fritatta!, Mangia Muffins, Work it out Veggie Wraps, Ham and Cheese Hug-a-bles, All Thai’d Up at the Office, Reuben Pasta Salad, Guyana Finish That Rice, Slap Yo Mama Vegan Burger, Caprese Heaven, Husband-Tested Chicken, Cauli-fornia Dreamin’ Pizza, Salad You’ll Swim Upstream for, Pasta-tively Delicious, and many more.
Nutritional information is provided throughout and the book includes gluten-free, vegan, vegetarian, and kid-friendly chapters, as well as substitution ideas for nut, dye, and other allergies.
And like the other books in the Cooking With Trader Joe’s Cookbook series, the ingredients are wholesome, no-fuss, and come from Trader Joe’s, but can be substituted with products and ingredients from other grocery stores in case you’re not fortunate enough to have a TJ’s in your area.
My fabulous friend and photographer, Marla Meridith, did an amazing job with the photography and the book includes gorgeous full-color photos for every recipe.
When I pack lunches, I generally like the food to have crunch, texture, or have an accompanying sauce or dip. Here are some items that I’ve made recently that I enjoy tossing into lunches:

Cheese and Crackers with Roasted Grapes and Balsamic Reduction
Banana Bread with Vanilla Browned Butter Glaze
Tempeh and Cucumbers on a Stick with Brown Sugar Balsamic Reduction Dip (vegan, GF if GF tempeh is used)
Rosemary Chipotle Roasted Almonds (vegan, GF)

I love Trader Joe’s! Ever since I moved from California, I miss their variety of tasty and affordable products. Some of my favorites are the frozen meals: palak paneer, spinach pesto pizza, and plain tart fro-yo. They are the ONLY place I know to sell tubs of plain tart fro-yo, and it is so good and healthy!

My favorite cookbook is my 1941 edition of The Boston Cooking School Cookbook handed down to me by my mother…I may not make any recipes from it but I treasure it just the same!
I have fond memories of my mom making many meals from The Joy of Cooking. I was delighted when I finally got my own copy.

I LOVE tj’s ginger cashew almond granola, its definitely one of a kind. Also a big fan of the mango chutney but definitely plan to try averie’s reciepe out!

One of my favorite cookbooks of all time has to be Julia Child’s Master the Art of French Cooking! The recipes are classic and absolutely delicious!!
It’s almost impossible to choose just a couple of favorites from Trader Joe’s, but we do love their bacon ends and pieces, their Orange Cream Soda and their beer batter Vidalia onion rings.
I LOVE Trader Joe’s! Every time I have new foods to share to friends, I am like a walking advertisement for them! =) So many favorites it’s hard to pick, but my new obsession is honey roasted almond slices & nonfat greek frozen yogurt. Chocolate almond spread, chocolate powerberries, & Joe Joe’s = Choco YUM!

So many favorites from Trader Joe’s, but the primo has to be the honey sesame almonds. I put them on top of my fruit and yogurt and they give a wonderful crunch and protein kick!
Just for the heck of it, my favorite cookbook is Mark Bittman’s How to Cook Everything (I think that’s the title)–the recipes always work.

3. Frozen, microwavable spinach and artichoke dip…. Seriously so good.
My favorite snack to include in packed lunches this time of year is apple chips. They are healthy, crunchy, and scream fall!

I could use this for some new lunch ideas…I pretty much eat a PB sandwich and apple every day at work! I love it but could branch out!
I am so excited! They are finally opening a Trader Joes in my area by the end of next year. I love the tomato less corn salsa. I add it to quinoa, beans and avacado for a lovely salad.

I love basically ALL trader joe’s products..but to pick just a couple, I’ll go with their almond butter (roasted and unsalted) and their cocoa almond butter spread! SO good!

my favorite tj’s products! wasabi nori snax, that great gf pasta that’s only $1.39 a bag, lentil curls, spicy hummus.
Leftover lasagna is a great lunch.
This might sound odd, but a staple to pack in my lunch is flavored yogurt mixed with a little quinoa . It kinda reminds me of rice pudding.
I love trader joes potstickers, almonds, chocolate covered espresso beans, peanut butter, chocolate covered banana slices…..the list goes on.
I love to pack muffins, jicama slices, nuts, salads, turkey, and crackers with all sorts of dips. I also love the good ‘ol tradition of PB & J!!!!!

Love going to TJ’s. A couple of my favorites there are the pad thai, the bibimbap, the potstickers, and their bbq chicken pizza!
I love TJ’s. I used to have one 5 min from home but now I have to drive 2 hours. But it’s worth every mile. I have many favorites. But tonight we had the tzsaziki with grilled chicken. YUM! And their coffee…. Aaahhh. The best!

Some of my favorite TJ’s products are the dried mango, banana chips, and coconut cream!
We just got a trader joes in the Knoxville area and I am over the moon happy to have it. I like the frozen bananas with chocolate covering(Monkey something). I also like to buy the fresh salsa which would be awesome with the lunch box fritatta. I mostly pack my son a veggie “subway” sandwich with lettuce, olives, green pepper, onions and pickles, but this gets old sometimes. We always pack ice water and sometimes a homemade vegan muffin which could be banana, pumpkin, sweet potato or zucchini (whatever I have in the house).
My FAVORITE cookbook of all time is my 1937 Household Searchlight. I grew up with it, my mom got it as a new bride is 1942, so by the time I was born in 1956, it was well used and worn. Made cream puff the first time at age 13 with that book. Flash forward to 1987, I am at a huge flea market and guess what I stumble acroos? For $5.00, in perfect condition, the very same book. I snapped it up immediately! Thanks for a chance to win

I love all of Trader Joe’s cheeses!! I just tried the creamy Toscano cheese dusted with cinnamon. Mmmmmmmm.
My favorite thing to pack in my lunch is leftovers. Whatever I make the night before gets packed up for lunch the next day!
My lunches always include something crunchy. One of my favorites is the Apple Sticks from TJ’s. I also like doing a pasta, veggie, protein combination for the main part of the meal.

Man I would love this cookbook! My favorite Tj’s products are: milk (I don’t know what it is but there milk tastes 100x better than any other milk I’ve had!), Meatless Meatballs (I never thought I’d get to experience a Subway meatball sandwich again until I found these!), and their Nuts About Raspberries Trek Mix is my all time favorite!
I have so many Trader Joe’s fav products. Been shopping there since the 80’s in LA! How about – organic basil, mozzarella chess in olive oil and herbs, mochi, crunchy choco chip cookies, choco covered espresso beans, wine, wine and more wine – Hungarian wine too!, mango sorbet, used to have hemp chips, the low fat crunchy cheetos things, flowers, salmon,,,,list goes on and on…thank you for being there Trader Joes! When I lived in Mn in the 90’s a friend would sent me a trader joes care package!
I’m not sure I could (or would want to) live without TJ’s Roasted Garlic hummus! I also love their “Monkey Business” trail mix, and my mom is addicted to the White Cheddar Corn Puffs :)

One of my favorite TJ’s items is the frozen garlic naan. I’m also a fan of their organic, fair trade coffee.

Every single work day for lunch I go to Trader (I work in the same plaza) and pick up one of their salads. It makes me excited for lunch and I know EXACTLY how many calories i’m eating, which helps in losing weight. I simple can’t pick a favorite, but I especially adore the curry chicken salad and side salad combo, the southwestern salad, the mediterannean pasta salad and the walnut and balsamic salad. Yum!!!

A few of my favorite TJs products are the Greek honey yogurt, the chocolate covered potato chips, and the frozen potstickers.
My daughter likes when I pack a whole salad bar in one container: lettuce, cukes, black olives, carrots, sliced turkey, sliced ham and shredded cheese with a small container of ranch dressing on the side.
I’m so happy that we’re finally getting a Trader Joe’s here in southern Oregon. I’d love the cookbook now that we can go to Trader Joe’s whenever we want! :)
Its hard to pick just two favs from TJs, but the first one that comes to mind are the Dark Chocolate Mini Peanut Butter Cups… and their Nonfat Vanilla Greek Yogurt :)
Averie, you made it really hard to decide: I don’t have just a couple of favorite TJ’s products. I love the whole TJ’s :) OK, If I have to choose, that would be dried fruits and berries: fantastic! Beers and wine selection. What? That’s a product too, right? :) Frozen panna cotta, do they still sell it? And then everything else… But more than that I want that book because it’s made by bloggers, because you contributed to it, and it’s precious… :)

I love to make my own trail mix using the half salted , roasted almonds, dried cranberries, chocolate chips and banana chips! My kids eat it up! We also love to munch on Strawberry Yogurt O’s as a snack too!

Some favorite Trader Joe’s products: lucques olives, frozen artichoke hearts, frozen mac n cheese, dye-free gummies, organic surfboard tortilla chips, organic carrot juice, stroopwafels (waffle cookies with maple syrup).
Our TJ’s just opened in August, so I am so happy about that – and, my daughter just started Kindergarten last week, so this would be perfect timing!

One of our favorite lunch box items is low-sodium turkey and provolone cheese roll-ups paired with sliced persian cucumbers. My daughter also loves the seaweed snack in her lunch box.
I have 2 favorite cookbooks: “Taste of Home” and “Looney Spoons”
I look through my other cookbooks but always end up with something from Taste of Home.
And Looney Spoons has easy, healthy recipes, but also lots of fun cartoons and nutritional facts throughout the book that make it much more than just a cookbook.

My favorite TJ item is the reduced fat cilantro dressing found in the produce department. Also, their part-skim string cheese; I take it with me whenever I travel.

The first cookbook I ever really received or Bought was the Susan Branch “Heart Of the Home” cookbook. Since it is the one that started me off on my love of cookbooks that is why I love it so much. I have made a number of items from this book and from the others of Susan Branch that I have bought since that first one.
As for food items from Trader Joe’s we love their Italian Meatballs that are in the freezer section. We also love the Chicken Potstickers.
String cheese is one of my favorite quick-pack lunch items. Especially since cheese tastes better at room temperature.
I love slice having TJ’s sliced Persian cucumbers (or English cucumbers), sliced tomatoes, flatbread and a selection of hummus flavors for lunch (and snacks). And, maybe a slice of TJ’s Blondie Bar with a cup of coffee. :-)

I love using those little divided containers for my lunch. Perfect size! When menu planning, I always buy extra chicken breast and make a batch of chicken salad for my lunches. I usually put it in a small low carb tortilla. It makes a quick and filling lunch!
PS. . .Trader Joe’s JUST opened here in Plano, TX last week! I am so glad. I have missed them since we moved here from California!

One of my fave cookbooks is my 1960s Better Homes & Gardens classic red and white cookbook. Great recipes in there!
LOVE TJ’s and am fortunate to have one close by. Their mini cinnamon and raisin bagels and cream cheese have replaced cupcakes for the school parties (the kids love it!), and we love the soups, especially the roasted red pepper and butternut squash. I miss the vegetarian chili soup they used to make!!

I’m all about hummus these days. I buy my hummus from the local farmer’s market, but I love to eat it with Trader Joe’s naan bread (whole wheat).
Favorite Trader Joe Products: Almond meal. I use this instead of flour when I make parmesan chicken or peanut butter cookies and it is delicious! I also love the lemon curd and sea salt carmel sauce! I use these two lovely items constantly as fillings in cakes — white cake with lemon curd, or chocolate cake with carmel sauce…absolutely delicious.
Oh I need this so bad. My lunches are straight 1982 style, sandwich chips cookies fruit. YAWN! This would be so perfect!

I’m a big Trader Joe’s fan! I buy most of my panty staples there (oils, flour, sugar, honey, oats, rice, stock, etc) b/c the price is right & its good quality. Some of my favorites from there are the white wine Dijon mustard, Meyer lemon cookie thins, gummy candies, New Zealand Organic white cheddar cheese, andouille chicken sausage, and of course many of their wines. I could go on & on!
Favorite cookbook has to be anything primal!
Avocado is by far my favorite lunch time ingredient. I mash it up and put it on sandwiches and wraps or leave it diced and mix it with canned chicken or tuna. Delicious!

I love cooking with the famous TJ’s Two Buck Chuck which I learned about when I was living a couple years in CA. We got a TJ’s after I moved back to NC but it’s a 2 1/2 hour drive from me. I still like to stock up on several TJ favorites when I get to go there including the wine, which is $3 here and also their sliced candied ginger and cashew butter among other things.

I love Trader Joe’s! It’s hard choosing what I love the most, but I die for their fleur de sel caramel sauce, the peppermint Jo-Jo’s during the holidays, their guacamole, and I love packing their Thai chicken wraps in my lunch sometimes. It’s so delicious!
I love TJs cookie butter…my favorite cookbook is Great Food Fast by Martha. This is a brilliant idea for a cookbook!!!!!!
I don’t even know where to begin for my favorite TJ’s foods…
Dried banana
Frozen Veggies and Fruit
8 veggie salad
Sweet apple chicken sausages
Dark Chocolate anything (especially with Cookie Butter)
Mango Black Tea
Cat Cookies
Corn salsa
Sweet potato and falafel chips
The list goes on and on…
I prob shouldn’t get into the wine (TJ’s blanc de blanc is the best 5$ wine around) or there won’t be room for anyone else to comment : )

I love to pack a mix of raisins/Craisins in lunches! Desperately could use new ideas though! This book looks great!

I think my favorite cookbook of all time is the Vegan Slow Cooker by Kathy Hestor. The recipes are so simple yet SO packed with flavor and wholesome goodness… my favorite things I’ve ever cooked have come out of there. And the leftovers make amazing lunches! You should totally check it out. The vegan philly (with seitan added) is amazing, along with the pumpkin or garlic sauce lasagna. There’s even recipes for breads and oats made in it.

I love packing yogurt into lunches…I have one every day at work! I think I might need to branch out and try new things, so I would love to win this cookbook. It looks awesome!

I love anything in the chocolate-covered isle of TJ’s! I also love the chocolate, rock sugar, and coffee grinder. Plus any of the tea or trek mixes…everything!

My kids love any kind of meatballs in their lunch. They don’t mind eating them cold. I’ve made Asian ones, Italian ones, Greek ones.
I like pita bread with hummus and cucumbers. I also pack grapes for something sweet.

I love so many products from trader joes its hard to choose. Their black bean and quinoa infused tortilla chips, roasted garlic hummus, pumpkin butter, and dark chocolate powerberries are some of my favorites!

I love to pack greek yogurt with cantaloupe, blueberries and almonds. I love it so much I’ve been known to bring the entire cantaloupe…
