Yummmmmmmmy!!!!! So without further ado, here’s The Pure 2 Raw Twins’ Guest Post.  Stay tuned for another separate, fun post for me coming right up!
We were honored when Averie asked us to do a guest post while she is away on vacation.
Here is a quick introduction of who we are.
We are the Pure2Raw Twins from We are two best friends who happen to be twin sisters. We both are high raw vegans who eat gluten free, peanut free, corn free, and soy free. Our blog is our journey through finding balance and good health through this ‘so called’ life as well owning own our business.  Our bakery is called Twin Cakes Bakery, which is a gluten free, vegan, peanut free bakery, plus have our Pure2Raw product line.  Pure2raw is where we love to share our passion for fitness, health, plus baking and unbaking away in the kitchen : ) We enjoy running and our newest passion is yoga. Averie has been very inspirational to us both!

Today we are going to share one of our favorite classics:

Yep here is a never fail, 20 minute recipe that we hope it will become a staple in your kitchen.  We know a lot of people (like us) that can’t eat this or that for whatever reason miss childhood classics, so here is our remake of one with a healthy twist!!
 Pure2raw Twins Recipe:
One Pot Gluten Free Vegan Mac-n-Cheese

Serves 2-3

Step 1:

  • 2 cups water
  • 1 cup quinoa

In small saucepan over high heat bring the water to a boil. Once boiling and quinoa and return to a boil. Then reduce heat to low and let simmer for 15 minutes
 *There might be some water left over, but that is okay.
Remove from heat and pour the quinoa into a bowl and set aside.
Step 2: The cheezy sauce

  • Ingredients:
  • ¾ cup coconut milk
  • 3 tbsp nutritional yeast
  • 2 tbsp tahini
  • 2 tbsp arrowroot
  • 1 tsp lemon juice
  • ½ tsp salt
  • ¼ tsp garlic powder

 Using the same pot that the quinoa was in, place it back on the stovetop over medium heat and add coconut milk and tahini. Whisk together. The tahini will melt into the milk. Then add remaining ingredients and whisk. Raise the heat to be medium high. It will start to thicken, takes about 1-2 minutes. Once it starts getting thick pour the quinoa back in the pot and stir till well combined.

 And you done. : )

 Have fun and add your favorite seasonings, we added a pinch of smoked paprika and 1 tsp parsley.

I was so shocked that you didn't have any torani syrup in your recipe- whAT!!?? you say they aren't vegan or raw (or even real 'food'?) ha ha guess not. :-) Your smoothie recipe is awesome looking. I wish I could stand there with you and have you watch me sprinkle on the gums so that you are no longer scurrrred of them. I don't blame you either btw. If I have several bad experiences, buh bye to the new recipe!

    In some ways, I have a good memory. I can often remember exactly where something is located if I placed it there, which makes it helpful to track things down. BUT I can't remember people's names or time lines to save my life. 8th birthday? No memory. So-and-so's kid's name? Cutie or lil' one.

  7. Aah it makes me so happy you and Madeline brought me up for a brief few minutes! Uhh I totally miss the AZ sunshine. I can see it illuminating from these outdoor pictures! This is going to be such a great opportunity for me, I KNOW, but I cannot help but miss the west coast. Really.

    Before I started making protein ice cream at home like on a daily basis.. heh heh… I used to make a combination of frozen banana+frozen strawberry+ protein powder all the time. So simple but so good! Usually only a splash of water too, and it ends up perfect. The banana is the key ingredient! What a perfect food right?

    Aahh Averie- college life. It's already getting to me. So crazy around here! Thanks for your "worldy" compliment! I even feel a little bit more grown up! And naturally a lot more mature than some of my fellow classmates. But I already knew that. :( No worthwhile boys yet.

    You hate garlic? I've grown (since blogging actually) to hate onion and salt. Which… at a culinary school, are two most used/prominent ingredients. Oh well.

  11. You went and sidetracked me with this post. The Voratious Vegan did it to me too. I was attempting to just drop you a note but got drawn in dispite my resolve to not go reading blogs today! Vegan Thursday found me at Whole Foods after 9pm,very hungry after a late meeting. I ended up having an Amy's Kitchen veggie loaf entree microwaved right then and there. So I actually ended up have Vegan food on a Thursday! Love supported headstand! Your smoothie sounds delicious. One of my favorite's is making a healthy strawberry "milkshake". Frozen strawberries, choice of milk drink (vanilla flavored the best) and some agave. Yumm! My memory abilities change from day to day hour to hour. Sometimes it's amazing, other's (like right now) not so. I had to make bullet point notes as I read your blog to remember what all to reply too! Eagerly awating "All Things Oats"!
    And wanted to let you know you and your raw bars (I made them earlier this week) were highlighted in a recent post on my blog.

    Since I started yoga completely on my own, I actually never learned how to do a headstand. When I went to my first class a few weeks ago, I was so disappointed that I didn't know how. Well, I've been practicing against the wall, and then against the couch, and I think I'll be ready to go on my own soon! Yes, I'm excited!

  15. Your Blueberry Smoothie sounds REALLY good.

    In my book Kitchen scale is a MUST. I love mind and I use it all the time.. everything is measured.

    I made Vegan-Gluten Free Banana Nut Muffins which they turned out awesome… I used a regular recipe and converted it and it worked out great (I was worried it would waste of ingredients)..

    So I finally decided to move.. my new address is

    Oh and as far as memory goes.. I have a pretty good memory… i.e. I was in Paris in 02, I went back with my husband and I could remember everything like back of my hand. But I have to admit when it came to subject in college I always did better in classes that had euqtions and numbers… I never did good in Bio, histroy type classes.

    My favorite smoothie is basically a green monster protein smoothie, spinach, banana , peanutbutter, almond milk and vanilla protein powder!!!

  20. I loooove my food scale too! It is so useful for a ton of recipes, especially foreign ones! I love coffee girl dates…a cafe, whether it be in winter or summer, is one of my favorite places to be =)

    It is crystal clear where your daughter gets her liveliness from — you two are cut from the same (lovely) cloth!

  23. Ahhhh, Girl time, so fun isn't it. I don't get enough of that sometimes. Did Skylar have her TJ's cheesy puffs with her?? Did Barbie eat any, probably not after all she is Barbie!
    Memory: Very bad :( Two kids doesn't help that. It does feel wicked sharp after caffeine though!
    Smoothies: I could give or take 'em. I much prefer the chew too! I do make my ice blended drinks, though they usually accommodate a mini meal.

    And yes, I have a great memory for some things. If it has to do with things I'm passionate about: politics, activism, veganism, feminism, history, horses, books, YES, I can remember it all.

    If it has to do with things I don't care too much about, like math, or basic common sense facts like don't put liquid dish soap in the dish washer….no, I'm not so good.

  25. Yummy smoothie! Oh I too would definitely need a kitchen scale, I have measuring jugs and cups but I would prefer a nice small scale.

    I have an excellent memory, and very often people rely on me to remember things for them. In my previous job, my employer used to tell me that it was even dangerous, as he had the tendency to count on me too much and not making the effort to remember himself, and he forgot everything :-)

  26. Yay, I'm glad you've got a scale. I had to buy a cup measurer because you guys in the US work in cups whereas we always use scales.

    I'm not a fan of smoothies and for some reason they never agree with my system.

    I have a great memory for people and a not so great memory for facts. Nevermind!

  27. oh those mommy and me shirts are too cute! i wish i hadn't gotten rid of my kitchen scale bc it would come in handy in all the fun recipes i want to try now! but that scale was janky anyways, maybe it's time for an upgrade :)

    I have been wanting a kitchen scale let us know how it goes. (but I am sure SURE I would use it to measure my yarn fiber when I spin yarn as opposed to measuring dates. I am a bit of this and that kinda cook…haha

    I too have pretty good memory…and yes, my multi tasking has to be at a minimum…but I can't read things and memorize them…I am a total audio person. if i hear it, OR if it's connected to a jingle…it's in the brain for life.

    garlic…really! no garlic and onions for you huh? I could live off the two, but raw onions make me burpy haha TMI for sure!

    My memory use to get me in trouble because I would remember everyone's embarrassing stories lol. Well actually that's not true in all cases. I have a hard time remembering faces and I'm working on remembering names. I just get to excited and lost in meeting new people that I totally forget to remember their name–uh that would help! lol

    By the way… SKYLAR IS SOOOO FREAKING CUTE!!! Even if she did keep you awake last night lol. But I'm glad that you got some quality girl time–those work wonders, seriously.

    That yoga pose!!! That's how my grandpa taught me how to do headstands. He use to go up to the mountains in Colombia (that's where he lives) and practice yoga there. It's funny because he has a very large stomach but if you punch it, it's rock hard. I think it has to do with the yoga breathing and being at such a high altitude. Imagine how amazing that is though. My grandpa can't climb the mountains anymore but he can still do his headstands. Anyway, such a peaceful pose :)

    Smoothies……yum! I just had one for dinner. Slim pickings around here Raw wise. I am almost out of hemp protein powder so I best get some before even my smoothie options are gone!

    I try to keep my memory up. My grandmother is so obsessed with not getting old. She plays bridge, sudoku and gets books from the library that help build up your memory. She's 89 and still travels around the world. That's my goal!

    No garlic? OMG! I couldn't live without it!! That is quirky : ) My random fact, I can only eat bananas by themselves. I HATE them n smoothies or anything else, yuck! Weird, I know.

    Random fact about me: I have very small feet for my height. I'm almost 5'9'' and wear a size 6 1/2 shoe and I love shoes!

  39. I always ignored smoothies in the past because I thought they were a waste of calories. I wanted to chew my day's calories, not gulp them down in one slurp. Strangely though, these days I've been REALLY into the idea of smoothies, esp. ones made from recipes like the one you listed here. I'm also not a psycho about calories anymore! That helps. :)

    The food scale is something I couldn't live without when I was counting calories because it helped me get my portions just right. Again, these days not worried about calories, but kitchen scales are so great for getting recipe measurements just right w/o getting every measuring cup dirty!

  41. I LOVE smoothies. Strawberry-banana or some kind of tropical fruit with blueberries (mango, pineapple, orange, or some combo) are my favorites – with spinach of course ;)

  43. The kitchen scale sounds like such a great tool. Sorry that Skylar's sick! But you're such a good mommy to get up with her :) I hope I can't be a mother that kind some day! I swear by zinc tablets when I'm sick, and I know there are some fun flavored ones out there…

    Quirky pretty much defines me, lol, so I hardly know where to begin! Probably my biggest foodie quirk is my deep, extreme, serious hatred of tomatoes. I LOATHE THEM!

    wanted to say I am ok with plastic that is recycled and BPA-free. when you have health issues, it is hard not to want to eliminate anything that might be causing sickness. i get it about the kids though. i am trying to buy stuff for my due-any-day-now-niece that is at least BPA free.

    i am so happy that you got a kitchen scale. i always use one for baking and cooking and often get so confused with the volumetric measurement of the states so i am much better when it coems to the scales.

  48. Heh…I have a finicky memory. Sometimes I can memorize exact passages, long quotes, and technical explanations…but other times I'm borderline ADD.

    I love post workout protein shakes, or, when I'm not going to wake up the roomies, a smoothie to go along with my breakfast. I can't have a meal that's just a smoothie though. I need chew!

    It's funny though…when I make green smoothies, I never add much fruit–maybe a small handful of strawberries or blueberries. But I almost always add cucumber or zucchini! Takes the bitterness right out of any green and makes things thicker.

    The best trick I ever heard for smoothies and shakes is to add a bit of xanthan and guar gum. It makes them super thick and creamy.

    My memory is only good for quirky things. I remember more about people than I do about things. Which is why microbiology is so tough for me! GAH!

    You hate garlic? I love it! But only cooked, of course. As for me, I can't stand raw watercress or dulse! ACK! Cringe-inducing.

    I have a great long-term memory but not such a good short term memory. I remember things from when I was a toddler!

  55. I have a terrible memory, which really gets me in trouble sometimes! If somebody (say, one of my 150 high school students) tells me something I have to write it down immediately or there is no hope!

    I really like smoothies quite a bit. I have an hour long commute to work every morning, so my green monster is the perfect way for me to get in veggies and healthy fat first thing in the morning. And it's easy to take in the car! On the weekends, though, I crave a breakfast that I can chew:)

    Glad you had such as fun coffee date…and I love the tshirts! Can't wait to see Skylar model it.

  56. so fun that you and madeline meet up so often! I bet its so nice to just chat and relax and bring Skylar along!! I hope she is feeling beter! look at all that swag you got! so awesome…I love smoothies, but I have to put the right ingredients in them orthey just act like water and do NOTHING for my hunger. Instead of almond mikl, I have been using skim or soy milk with mroe carbs and protein to help with that! that smoothie sounds awesome!!
    i love my kitchen scale for measuring single serving sizes of meats and such. I also love it for baking purposes!

    hmm quirky traits?? I HAVE to sleep with a fan on at all times, even in the dead of winter. I cannot fall asleep without that humming noise. It is such a problem because I take my fan with me everywhere!!! I have thought about hypno therapy for it!!

  57. I have an EXCELLENT memory. I am really good at memorizing stuff and always did well on test with it. I am terrible at math, so it all evens out. :)

  62. I LOVE my kitchen scale. For dates it is perfect because dates are so different in size and juiciness. It is also a nice trick to figure out how many nutrients you are getting. I do that from time to time, I don't worry too much about calories.

    I love banana-blueberry smoothies. I drink green smoothies daily for breakfast. I use several cups of greens, a fresh banana, frozen mango and/or berries, and some hemp protein or seeds. I use water to liquify it usually.

    My husband is allergic to garlic so I never use it. I don't miss it at all! I used to think I was fussy with food but it turns out I like almost all raw foods, it was the foods that are bad for me that I disliked. Glad I figured it out.

    Can't think of much quirky right now. I suppose it's a bit quirky that my dog has more jackets that I do!

  63. I have an awful memory and do not like smoothies. But I do like–no, love–my kitchen scale. It makes everything perfect. Once you use it for baking, you never go bake. And I've never had problems with oatmeal being too watery or too dry since figuring out how many grams of water I like. Perfection.
