Yummmmmmmmy!!!!! So without further ado, here’s The Pure 2 Raw Twins’ Guest Post.  Stay tuned for another separate, fun post for me coming right up!

We were honored when Averie asked us to do a guest post while she is away on vacation.
Here is a quick introduction of who we are.
We are the Pure2Raw Twins from www.pure2raw.com. We are two best friends who happen to be twin sisters. We both are high raw vegans who eat gluten free, peanut free, corn free, and soy free. Our blog is our journey through finding balance and good health through this ‘so called’ life as well owning own our business.  Our bakery is called Twin Cakes Bakery, which is a gluten free, vegan, peanut free bakery, plus have our Pure2Raw product line.  Pure2raw is where we love to share our passion for fitness, health, plus baking and unbaking away in the kitchen : ) We enjoy running and our newest passion is yoga. Averie has been very inspirational to us both!

Today we are going to share one of our favorite classics:
Mac-n-Cheese

Yep here is a never fail, 20 minute recipe that we hope it will become a staple in your kitchen.  We know a lot of people (like us) that can’t eat this or that for whatever reason miss childhood classics, so here is our remake of one with a healthy twist!!
 Pure2raw Twins Recipe:
One Pot Gluten Free Vegan Mac-n-Cheese

Serves 2-3

Step 1:

  • 2 cups water
  • 1 cup quinoa

In small saucepan over high heat bring the water to a boil. Once boiling and quinoa and return to a boil. Then reduce heat to low and let simmer for 15 minutes
 *There might be some water left over, but that is okay.
Remove from heat and pour the quinoa into a bowl and set aside.
Step 2: The cheezy sauce

  • Ingredients:
  • ¾ cup coconut milk
  • 3 tbsp nutritional yeast
  • 2 tbsp tahini
  • 2 tbsp arrowroot
  • 1 tsp lemon juice
  • ½ tsp salt
  • ¼ tsp garlic powder

 Using the same pot that the quinoa was in, place it back on the stovetop over medium heat and add coconut milk and tahini. Whisk together. The tahini will melt into the milk. Then add remaining ingredients and whisk. Raise the heat to be medium high. It will start to thicken, takes about 1-2 minutes. Once it starts getting thick pour the quinoa back in the pot and stir till well combined.

 And you done. : )

 Have fun and add your favorite seasonings, we added a pinch of smoked paprika and 1 tsp parsley.

    My memory is only good for quirky things. I remember more about people than I do about things. Which is why microbiology is so tough for me! GAH!

    You hate garlic? I love it! But only cooked, of course. As for me, I can't stand raw watercress or dulse! ACK! Cringe-inducing.

    So wild- love the treats and the scale idea- once I get my own kitchen a scale will be my second purchase- after a vitamix!

  4. Smoothies have been a come-and-go thing for me. I also like to chew on stuff!
    I have a great long-term memory but not such a good short term memory. I remember things from when I was a toddler!

    Hmm random fact: I can cross one eye and keep one straight. It really freaks people out

  5. I wanna meet up with you, Madeline, and Skylar!! (Im pouting!!!). Honestly, so jealous you two get to do that but really happy for ya! :)

    LOVE those hand painted bags.. they will be great to take grocery shopping! :)

    My memory is pretty good. But I do have to pay attention more these days than when I was younger…

  7. I have a terrible memory, which really gets me in trouble sometimes! If somebody (say, one of my 150 high school students) tells me something I have to write it down immediately or there is no hope!

    I really like smoothies quite a bit. I have an hour long commute to work every morning, so my green monster is the perfect way for me to get in veggies and healthy fat first thing in the morning. And it's easy to take in the car! On the weekends, though, I crave a breakfast that I can chew:)

    Glad you had such as fun coffee date…and I love the tshirts! Can't wait to see Skylar model it.

  8. so fun that you and madeline meet up so often! I bet its so nice to just chat and relax and bring Skylar along!! I hope she is feeling beter! look at all that swag you got! so awesome…I love smoothies, but I have to put the right ingredients in them orthey just act like water and do NOTHING for my hunger. Instead of almond mikl, I have been using skim or soy milk with mroe carbs and protein to help with that! that smoothie sounds awesome!!
    i love my kitchen scale for measuring single serving sizes of meats and such. I also love it for baking purposes!

    hmm quirky traits?? I HAVE to sleep with a fan on at all times, even in the dead of winter. I cannot fall asleep without that humming noise. It is such a problem because I take my fan with me everywhere!!! I have thought about hypno therapy for it!!

  9. I have an EXCELLENT memory. I am really good at memorizing stuff and always did well on test with it. I am terrible at math, so it all evens out. :)

    And we OVER-use our kitchen scale – use it for everything!! My hubby even weighs out his mixed drinks and orange juice..lol.

  11. I still can't believe you hate garlic! I can remember the dumbest things, but almost anything that is actually important for me to remember just slides right out of my head! As always it was great seeing you today! Skylar also managed to get "I'm so sexy" stuck in my head for the rest of the afternoon…

  12. Memory?? Ha! Mine is shot. I used to tell my children that it's all because I lost brain cells with every placenta. ;-) LOL! (they just laugh and tell me it's because I'm old)

    Quirky? I hate shoes. Okay, what I mean is, I love to "look" at all kinds of fashionable shoes, but wearing shoes is like torture! ;-)

  13. My favorite yoga pose ever! Mainly because it was such a huge accomplishment for me to figure it out – it's not so much about strength as finding that balance sweet spot!

    Hmm…quirky…I hate catsup/ketchup SO much. I love barbecue sauce, love tomatoes, love mustard…just hate catsup!

  14. I LOVE my kitchen scale. For dates it is perfect because dates are so different in size and juiciness. It is also a nice trick to figure out how many nutrients you are getting. I do that from time to time, I don't worry too much about calories.

    I love banana-blueberry smoothies. I drink green smoothies daily for breakfast. I use several cups of greens, a fresh banana, frozen mango and/or berries, and some hemp protein or seeds. I use water to liquify it usually.

    My husband is allergic to garlic so I never use it. I don't miss it at all! I used to think I was fussy with food but it turns out I like almost all raw foods, it was the foods that are bad for me that I disliked. Glad I figured it out.

    Can't think of much quirky right now. I suppose it's a bit quirky that my dog has more jackets that I do!

  15. I have an awful memory and do not like smoothies. But I do like–no, love–my kitchen scale. It makes everything perfect. Once you use it for baking, you never go bake. And I've never had problems with oatmeal being too watery or too dry since figuring out how many grams of water I like. Perfection.
