Add the diced potatoes and onions to a skillet. Sprinkle with thyme, rosemary, garlic, red pepper flakes, and salt. Cook, then add butter and stir. Bake, then remove the potatoes and set them aside.

In the same skillet, add butter, garlic, all the remaining herbs, and salt, then stir. Add the steak and cook, spooning the garlic butter mixture as it sears. Flip and sear on the other side, spooning the mixture. Allow it to rest.

Add the potatoes back to the skillet. Slice the steak, place it back into the skillet, sprinkle with Parmesan, and serve.
