1poundhamthinly sliced* (See Notes)
2teaspoonslight brown sugarpacked
1tablespoonsoy sauceI use Lite
1teaspoonfresh gingergrated (dried ground ginger or ginger paste may be substituted)
1teaspoongarlicminced
20-ouncecan pineapple slicesdrained with 2 tablespoons pineapple juice reserved** (See Notes)
12slicesSwiss cheese
3tablespoonsunsalted or salted buttermelted
1teaspoondried parsleyfinely topped fresh may be substituted
Instructions
Preheat the oven to 350°F and spray a 9x13 inch pan with nonstick cooking spray.
Cut the Hawaiian rolls in half horizontally and place the bottom half in the pan.
Evenly distribute and lay the ham over the bottom of the rolls; set aside.
Optionally, heat a grill pan or cast iron pan over medium high heat.*** (See Notes)
To a small bowl, add the 2 tablespoons reserved pineapple juice, brown sugar, soy sauce, ginger, and garlic.
Brush the marinade over the pineapple slices and optionally place them in the hot pan. Or simply add them over the top of the ham on the rolls. Reserve the remaining marinade.
Grill the pineapple for approximately 1 minute per side, or until it has grill marks.
Cut the rings in half, or as needed, and lay them over the ham.
Evenly distribute and layer the cheese over the pineapple.
Place the remaining half of the of the top rolls over the pineapple.
Add the melted butter and parsley to the reserved marinade.
Brush this buttery marinade mixture over the tops of the rolls.
Tent a piece of aluminum foil over the rolls and bake for 15 to 20 minutes, or until cheese is melted.
Remove the foil and bake an additional 5 minutes, or until lightly golden browned. Keep an eye on them. Serve the sliders immediately warm and fresh. Extra sliders will keep airtight in the fridge for up to 5 days, reheat gently in a toaster oven or microwave.
Notes
*I used Black Forest ham, but most any thinly sliced ham will work. I prefer to get ham at the deli counter in my grocery store but pre-packaged packets are okay. In theory if you have leftover ham from say a Honey Baked Ham, that would be fine.**Fresh pineapple may be used noting you will need a bit of supplemental pineapple juice (2 tablespoons) for the marinade.***You don't have to grill the pineapple but I find it adds an extra amount of great caramelization. If you're not grilling it, simply move on to making the marinade and then brush it over ungrilled pineapple.
