Hi Friends!  How is your week going so far?  My “weekend” is coming to a close and it’s back to work on Wednesday for me.  I did some grocery shopping and I found a 5 pound bag of Gala apples for $3.99.  That would be 80 cents per pound.  That would be insanely cheap for anyone who doesn’t realize the major apple score.  It’s the little deals in life that I get excited about.  So with all my apples, I made a snack for Skylar and I.  Snacks around here must be fast, easy, and cheap.  This one fits the bill.

1 Minute GF Vegan Apple Crumble
1 apple
cinnamon 
1/4 c dry oats
1/4 c brown sugar
Splash of water
Optional: Dash of vanilla extract

Slice the apple and sprinkle with cinnamon (or cinnamon & sugar)

Sliced apple pieces sprinkled with cinnamon

Mix the oats, brown sugar, and vanilla extract with a splash of water

Dollop the oat mixture on top of the apples

Microwave for 45-60 seconds, or to desired level of doneness

Let it cool for a minute and dig in!  Warm, tasty, comforting, a taste of fall.  
Homemade without the work or fuss of a real apple crumble.

Dessert:  Raw Vegan Apple Crumble

If you have more than 1 minute to spare for an apple crumble, try this raw/no-bake version.   Still only takes about 15 minutes, tops, from start to finish.  You can also double to recipe to bring to a fall party and impress the guests.  A few readers told me they made this last year for Thanksgiving in lieu of traditional apple pie and it was a hit with guests with diverse dietary paths, not just the raw vegan crowd.

Questions
1. Do you pay attention to the price of produce?  Or do you just buy it no matter what?
When I was younger, I had no concept that 80 cents for a pound of apples was insanely cheap or that 4.99 for a pound of grapes is fiscal usury.  I just bought them.  And I confess to getting to the checkout lane and after the checker put grapes on the scale, I have indeed bought some $12 bags of grapes before.  Sad but true.  Live and learn.  

These days I do pay attention to prices and won’t buy an $8 pineapple or a $5 tiny tub of raspberries but whether romaine lettuce is 99 cents a bunch or 2.19 a bunch, it’s a non-negotiable purchase and I buy it anyway.

2. Do you like crumbles, crisps, and cobblers?
I am not really sure that the technical difference is although I know my friend google would tell me.  Anything with brown sugar + oats = a crumble or a crisp in my book!   Anyway I love them all.  Peach cobbler, apple crisps/crumbles, all great to me.

Any combination of fruit + oats + sugar, butter and oils optional, in any baking (oven or microwave) or unbaking/raw format is perfect for me.

3. Do you have any favorite tricks, tips, or ideas for something you make that’s super fast and easy, and you love it?
I also have a recipe for “banana crowns” that helps to use those overripe bananas that multiply on your countertop

And I also make peanut butter “sandwiches” using zucchini, squash, or cucumber rounds.

Who needs Gluten-containing bread? Way better to eat fresh veggies than gluten and bread!
