I love kale and when it’s topped with big juicy strawberries and creamy avocado, even better.

I feel healthier just by looking at it.

Fruit in salads can sometimes be tricky to pull off sometimes, but here the sweet strawberries are a perfect contrast to the more bitter kale.

Even if you’re not a huge kale fan, there are so many wonderful textures and flavors in every bite you can’t help but like it. It’s filling, satisfying, and healthy.

The simple vinaigrette is made by blending strawberries with apple cider vinegar, honey, olive oil, salt and pepper. You can keep it vegan by using agave.

It’s sweet-yet-tangy from strawberries, honey, and apple cider vinegar, and it coats the kale perfectly.

If you prefer more savory dressings, reduce the honey and increase the salt and pepper. You could also blend in garlic or red onion.

You’ll have more vinaigrette than you’ll need for the salad and the extra portion will keep airtight in the fridge for a week.

I loved this salad and so my daughter. When I was blending up the vinaigrette she was a bit skeptical that strawberry salad dressing could be good.

Strawberry, Avocado, and Kale Salad with Strawberry-Apple Cider Vinaigrette

Yield: Serves 2 generously, or 4 modestly

Prep Time: 10 minutes

Cook Time: 0 minutes

Total Time: 10 minutes

Ingredients:

Salad
about 6 cups freshly torn kale leaves, with coarse stems and ribs removed
1 medium/large ripe Hass avocado, peeled, pitted and sliced thinly
1 cup fresh strawberries, halved

Strawberry-Apple Cider Vinaigrette
2 cups strawberries, whole with tops off (frozen okay and it's what I used)
1/4 cup apple cider vinegar
3 to 4 tablespoons honey, or to taste (agave may be substituted to keep vegan)
3 to 4 tablespoons olive oil
3/4 teaspoon salt, or to taste
3/4 teaspoon black pepper, or to taste
1 clove garlic and/or 2 tablespoons diced red onion, optionally add to create a more savory dressing (I didn't use either)

Directions:

  1. Salad - To a large bowl or platter, add all ingredients in the order listed; set aside.
  2. Strawberry-Apple Cider Vinaigrette - To the canister of a high-speed blender or food processor, add all ingredients in the order listed. Blend on high power until texture is as smooth as desired. Taste vinaigrette and tweak as necessary to taste. Drizzle over salad, toss to combine, and serve immediately. If you don't use all the vinaigrette, extra will keep airtight in the fridge for up to 1 week.

  1. This salad is so gorgeous…it’s almost too pretty to eat..but I’d manage!!! I love the dressing and can’t wait to try it…I’m not sure I’ve ever had strawberry dressing but I love strawberries so I can’t imagine not loving it. I’m getting another 12 inches of snow today so a fun summery looking salad might be just what we need.

    • Oh that is so much snow! It was 77F and sunny all weekend in San Diego so this salad doesn’t seem that summery but now that you put it that way with 12″ of snow, okay, I can see that now :)

  3. Another beautiful and very healthful salad! I’ve made a similar vinaigrette with strawberries and balsamic but it has been a long time. The acv sounds good –it has a little more zip to it. For some reason this salad seems so appropriate with Valentine’s Day coming up….gotta give it a try later this week!!

  4. YES. I am trying to get on the kale salad bandwagon…I love it IN things like smoothie, but notsomuch salad.
    However, fruit in salads is my “thang” so this might just get me right on board that train! Pinned!

  6. This is such a simple, yet elegant meal. Kale and I have had a love-hate relationship. Depending on the dish, I love it or hate it. The strawberry dressing looks like it would compliment the kale wonderfully. There’s a bag of kale sitting in my refrigerator. Looks like I’ll be whipping this salad up very soon.

  8. I love all your dressings. I really need to make them instead of just drool over them, because fat-free balsamic from the grocery store is just not cutting it anymore. Also? Strawberries and avocado are two things I would never think of pairing, but now I want to so bad!

    • And this one is pretty close to fat-free…the little bit of olive oil doesn’t count :) And it’s SO packed with flavor AND ounce of ounce using TJs frozen berries, this dressing was downright Cheap! You would loooooovee the avo/berry pairing knowing you!

    • Everyone’s been saying how summery this looks which reminds me that my 77F and sunny weather is pretty summery for most even though it does get into the 40s/50s at night but during the day, cannot complain :)

Tried the vinaigrette and it is delish!  I’m just starting to learn to like apple cider vinegar and this is a good start.  I did not have olive oil in my house so I used a Hazelnut oil I got from Vom Fass and I would suggest it.  It gives it a nice nutty touch.  I think I will add more next time I make this.  I love how simple and easy it is to make.  This is definitely going to be my go to when I make my salads!
