It’s hard to pick a favorite recipe or one favorite way to eat avocados. I love them anyway I can get them!! I eat them pretty much every single day with eggs for breakfast, so I guess I’ll have to go with that!
To be cliche, I love guacamole, but raw carob avocado pudding is quite good!

Oh! Another thing I love to do with avocados (when I’m being unhealthy) is to mash one up on top of a bagel then add salt, pepper and cayenne. So good!

I would really like to try making a chocolate-avocado mousse. Sounds so delicious and smooth.
For the past few years I’ve made it my mission to develop a good solid guacamole recipe. And I have, people love it, even the ones who don’t like guacamole.
But one of my more creative uses for avocados is avocado yogurt. It’s real easy and delicious (and could easily be converted to vegan). I take about 6 oz of greek yogurt and add mashed up avocado until I think it’s right, I usually use a whole one. Then I add my favorite sweetener and a little vanilla until it’s perfect. It’s a great after dinner snack.

I love eating a fabulously ripe avocado on nut crackers, sometimes with a little goat cheddar. Yum!
We don’t get a lot of fresh avocados in Kansas, but I love to have them on a sandwich or in guacamole! They are so yummy!
