  3. Okay, I admit it, my favorite comfort food(s) are pizza and coffee. I have been doing a vegan eating challenge, and my favorite healthy pizza is loaded with roasted veggies, mushrooms, kalmata olives, daiya cheese, and pine nuts:-)

  4. Ooooooh! I would love to win this book!!! With all the stress and challenges in my life at this point in time I am so in need of ideas for creative, yummy, gluten free, comforting meals. It would be such a gift to be the winner. After so many years of eating gluten free, its awesome to know that someone out there has created stuff that could take my cooking to the next level of down home inspiration and taste.

    When I am in some serious need of some comfort chow, I roast batch of kabocha squash chunks drizzled with olive oil and sea salt. And then I put the squash chunks in a nice large bowl and top it with a generous puddle of thick lemon-dill tahini dressing and eat while watching my favorite tv program. mmmmmm….
    Seriously yum. Seriously comforting. :) :)

  5. I had no idea a book like this existed but I LOVE IT! I have been trying to make vegan/gluten free meals and snacks at home but having some difficulties finding recipes that still taste amazing (picky fiance). My favorite comfort food is absolutely chocolate cake!

  13. I don’t think I could pick just one comfort food! But mac and cheese was always my favorite as a child. While I ate the blue box back then, but now I have to stick to gluten-free noodles and I have found some awesome dairy free sauces. Some are even soy-free too. Anything that makes my stomach feel good is fine by me!

  18. Plain old whole sweet potatoes are my favorite comfort foods and I can (and do!) eat them for breakfast, lunch, and supper. I usually pop them in one of those steamfresh microwave bags for a few minutes to get them soft, then stick them under the broiler for a few minutes to get the skins all black and crispy. YUM!

  19. My favorite comfort food is chocolate chip cookies! I’m still on the hunt for a really great gluten free cookie recipe, and am experimenting more and more with vegan recipes lately, too!

  20. One of my favorite comfort foods is Asian-flavored turkey burgers with a pile of rice. The burger recipe is one I took to college with me from home, and one of the very few I know by heart. (Yes, I make them that often.)

  23. As much as I love your baked goods, I must say you are the queen of savory vegan meals! My favorite comfort food is stuffing, candied yams, and mashed potatoes- not mushed together, but each one spiked on my fork to form the perfect bite!

  26. This vegan Mac and Cheez from VegNews is so comforting, and it’s almost perfect with just a few tweaks:

    *Use gluten free brown rice pasta, of course!
    *Take away all that margarine and add just a little olive oil instead.
    *Season sauce to taste, maybe adding more cayenne or mustard if you like, and add a bit of nooch (nutritional yeast) for extra awesomeness!
    *Use more sauce than you think the amount of pasta warrants – or use it for GF vegan potatoes au gratin, or add spinach for a great dip, or thin it out for an awesome soup!
    *Use homemade GF bread crumbs on top – save leftover ends of breads, homemade pizza crusts, focaccia, whatever, in the freezer until you need them for bread crumbs, Pulse them in the food processor with some sea salt and dried herbs and spices like basil, parsley, garlic, and pepper. Pulse in some sliced almonds until you have crumbs, then pulse in some olive oil. Voila, the best bread crumbs ever! Top your mac and cheez, stuffed mushrooms, vegan cassoulet, any kind of casserole, or anything you like!

  27. My favorite comfort foods are all the orange veggies – butternut squash, pumpkins, all the other winter squashes, sweet potatoes, carrots. If it’s full of beta carotene, it makes me happy, head to toe! I love them every which way. My favorite sweet potato methods are oven fries with cayenne and paprika, or baked up whole, mashed, and thrown in a vegan, GF burrito. I make GF flour tortillas, long grain brown rice with cilantro and oregano, refried black beans with plenty of cumin and chiles, and sweet potatoes, which I mash up with some cayenne, lime juice, and nooch. Roll ’em all up and serve with some homemade tomatillo salsa, and/or my favorite hot sauce, Alex’s Ugly Sauce. YUMS!

  28. Favorite comfort food is definitely mac and cheese. I sometimes blend tofu in to cut down on the cheese. You can’t even tell the difference!

  32. I LOOOVEEEE quinoa and lentils mixed with steamed broccoli, carrots, sweet potato, and green beans..or even another mix of multiple veggies. Protein powerhouse and full of good veggies :)

  35. Oh gosh, this book would be perfect for me right now. Not only am I (obviously) mostly vegan, but I’m going gluten-free right now to see how it helps my health issues. I’ve never gone out of my way to avoid gluten in the past, so this GF world is still somewhat new to me.

    My fave comfort food dish is probably a spicy curry. Unorthodox, I know :)

    my favorite comfort food is “if you ONLY knew i wasnt cookie dough”

    garbanzo beans
    dark cocoa powder
    vanilla extract
    (a bit of OJ or sugar free apple sauce if needed to blend more smoothly)

    process all until desired consistenecy.. tastes like chocolate cookie dough
    add nuts too if you wish or carob pieces.

  40. Mac & cheese…I’ve had it in many shapes and forms, from the scary fluorescent from a box stuff of my youth, vegan/gluten free, the make-your-heart-stop variety that uses five kinds of cheese (that recipe only comes out once a year during the holidays!) and everything in between.

I love no bake deserts and chocolate and I love coconut. So this recipe is perfect and easy. I recently made up a batch to enter into a recipe contest so I have some in the freezer right now. When ever I need that bite of sweet, guilt free, I can grab one and let it thaw for just about 5 minutes. Yum! Thanks Averie for all the gluten free ideas you help us with too.
