  2. This vegan Mac and Cheez from VegNews is so comforting, and it’s almost perfect with just a few tweaks:

    *Use gluten free brown rice pasta, of course!
    *Take away all that margarine and add just a little olive oil instead.
    *Season sauce to taste, maybe adding more cayenne or mustard if you like, and add a bit of nooch (nutritional yeast) for extra awesomeness!
    *Use more sauce than you think the amount of pasta warrants – or use it for GF vegan potatoes au gratin, or add spinach for a great dip, or thin it out for an awesome soup!
    *Use homemade GF bread crumbs on top – save leftover ends of breads, homemade pizza crusts, focaccia, whatever, in the freezer until you need them for bread crumbs, Pulse them in the food processor with some sea salt and dried herbs and spices like basil, parsley, garlic, and pepper. Pulse in some sliced almonds until you have crumbs, then pulse in some olive oil. Voila, the best bread crumbs ever! Top your mac and cheez, stuffed mushrooms, vegan cassoulet, any kind of casserole, or anything you like!

  3. My favorite comfort foods are all the orange veggies – butternut squash, pumpkins, all the other winter squashes, sweet potatoes, carrots. If it’s full of beta carotene, it makes me happy, head to toe! I love them every which way. My favorite sweet potato methods are oven fries with cayenne and paprika, or baked up whole, mashed, and thrown in a vegan, GF burrito. I make GF flour tortillas, long grain brown rice with cilantro and oregano, refried black beans with plenty of cumin and chiles, and sweet potatoes, which I mash up with some cayenne, lime juice, and nooch. Roll ’em all up and serve with some homemade tomatillo salsa, and/or my favorite hot sauce, Alex’s Ugly Sauce. YUMS!

  4. Favorite comfort food is definitely mac and cheese. I sometimes blend tofu in to cut down on the cheese. You can’t even tell the difference!

  5. I think my favorite comfort food is chocolate. Ha. Does that count? Otherwise, tomato soup with buttered toast comes in a close second.
