Vegan Gluten Free Cinnamon Raisin Banana Oatmeal Muffins

 Yesterday I had all these ripe bananas on my counter begging to be used.

This recipe does not need any specialty ingredients, you probably have everything on hand already.

It’s Vegan, Gluten-Free, Soy-Free, Tree-Nut Free, Seed-Free, and free from any complicated stand-mixers, Vita-Mixes, dehydrators.  In fact, one bowl, a fork and a spoon is all you need.

It takes 5 minutes to mix it, and 20 minutes to bake.  Then you’re done and you’ve impressed yourself and your family.  With very few dishes dirtied.  Gotta love it when that happens.


Vegan Gluten Free Cinnamon Raisin Banana Oatmeal Muffins

Makes One Dozen 3-Bite Muffins
1 large ripe banana, mashed
1/2 c dry oats
1/3 c brown sugar
1/2 c white sugar
1 heaping Tsp Cinnamon
1 heaping Tsp Vanilla Extract
1/2 tsp Baking Soda
1/3 c raisins (omit, or use other dried fruits, nuts, seeds, etc. as you prefer)

Mash the Banana with a Fork, add all remaining ingredients and stir to combine. Bake at 375F for 10 minutes, then turn oven temp down to 350F and bake for another 8 minutes, or until done and golden.

Note: If you want to reduce (or even omit) most of the sugar, feel free.  I like sugar though.
Note: There is no water, mylks/milks, or liquids added.  If you feel you need a splash of something, go for it.  A splash though, that’s it.


Mash the Banana with a Fork

Add everything else

Stir to Combine

Add mixture to muffin liners

Preheat your oven to 375F.  Let the mixture rest in the muffin liners on the counter while your oven is pre-heating as this will soften the oats a bit and give a nicer finished product, but not necessary to wait if you’re in a hurry.

Bake at 375F for 10 minutes and then I turned the temp down to 350F and baked for another 8 minutes

They’re Done!  Skylar loved them!

She had two of them, i.e. 6 bites, down the hatchet in record time!
Barely hardened on the outside, super gooey and warm in the middle.
And the brown sugar and banana drifted to the bottom.
 They’re like eating a bowl of carmelized, sugared oatmeal + banana bread,  in muffin form.  
 So good.  Omg.
The best of both worlds: cinny sugar oatmeal + banana bread…all in one!

If your family doesn’t happen to snarf these in one sitting, store in a sealed container.

I don’t think you’ll have to worry about leftovers.

Me = Popped a couple of my muffins before Scott and Skylar ate them all….haha!
Something fun/random = I have a pierced tongue.  I got it about 12 years ago and never took it out.  I have a clear-ish pink plastic barbell in it.  Don’t want to chip a tooth so I wear plastic!

2. Dress Up Clothes.  Did you play dress up when you were a kid?  What did you like to dress up as?
I did and ballerina, rock and roll star, doctor & nurse, and fairy princess all come to mind.  I don’t think I ever had cheerleader dress-up clothes.  In school, I was never a cheerleader, either.  I played volleyball, basketball, and ran track.

  2. These looked so yummy (and flourless!), i had to try!
    I gave it a shot tonight, and as I don’t own an oven I had to bake them in the microwave (that I can use as an oven – I think it’s called convection microwave?).
    Unfortunately, they remained too liquid (they didn’t “hold” together?), even if i baked them longer than required. Any idea why?


    • Jessica, you will never get the same results using a microwave as an oven. The way microwaves heat/cook are totally different than oven and in this case, it’s why you didn’t get the results you were looking for. Even if it’s a fancy/upgraded microwave, it’s still…a microwave. Bake them in the oven next time and they’ll work!

    the photo of baking power, did u add to this recipe or not. i didnt see you add this ingredient on the list. if so, how much did u add baking power to this recipe


    • From memory, no I did not. Forgive me that this post is two and a half years old and my memory is a bit fuzzy on them. Not sure why I even showed both baking soda & powder, but if you make them, you could add 1 tsp of baking powder in addition to the soda; that will give them more lift & rise. Either way, they are dense and not a ‘fluffy’ muffin so a little extra leavening can’t hurt.
