100-calorie, portable, baked egg muffins that you can enjoy without worry! These healthy egg muffins are stuffed with protein, veggies, and cheese. The best kind of breakfast! Or snack. Or dinner.

What a great idea! I used leftover sauteed veggies that added some nice flavor. Instead of cooking spray I used coconut oil and had no issue with sticking to the pan.


Coat a muffin pan with cooking spray. Then, toss the veggies and fill each muffin cup with the mixture.


Crack the eggs into a measuring cup, season with salt and pepper, then whisk. Divide the eggs between the muffin cups and sprinkle with cheese.


Bake and allow muffins to cool.
