To a skillet, add the oils and chicken. Cook. Stir intermittently to crumble.


Add onion, hoisin sauce, soy sauce, rice wine vinegar, and chili garlic sauce. Stir to combine, and cook. Stir intermittently. Add garlic and ginger. Stir to combine, and cook.


Add water chestnuts, green onions, and salt and pepper, to taste. Cook. Taste filling and make any necessary flavor adjustments.


Spoon about 1/4 cup of the mixture into lettuce leaves to serve.
