Happy Hump Day.  How has this week been for you so far?  I am flying solo today, Scott’s back on the road, but just for a day trip and then no more trips for at least 2 weeks so that’s great!

I really, sincerely wanna thank everyone for your supportive and reassuring comments from yesterday’s post about the but how do you get your protein comments I’ve been having.  Your kind words both in the comments section and in private emails mean the world to me and I feel so loved and cared about from you all.   I want to sincerely thank you!  Muah!!!

Ok let’s talk about food!!!

I know I’ve been hypin’ up the spiralized food like a used car salesman is hawkin’ hot cars, but really, I swear I feel like I am eating pasta when I eat my spiralized zuke noodles so I am just happy as a pig in shizzle about it.  Maybe I’ve been gluten free for too long or somethin’, but I Am A Believer, praise the Paderno.  Check out the zuke noods tossed with asparagus, carrots, and cukes.

I tossed it up a Thai-inspired Peanut Sauce.  This recipe was approximately 1/4 c P.B., juice of half an orange, 2 Tbsp Raw ACV, 1 Tbsp Sesame Oil, 2 Tbsp Agave, 2 Tbsp Maple Syrup, 1 tsp ground ginger, Couple cracks ‘o Black Peppah all in the Vita-Mix

Ingredients in blender to make Thai-inspired Peanut Sauce

And in a bowl for drinking for later….it’s really quite supurb if I do pat myself on the back, and you may just wanna drink it.

And it’s all pooled up by the zuke noods.  Slurp, slurp.

I’m switchin’ it up to have you feast your eyes on a raw vegan dessert I made.   I’m callin’ it Raw Vegan Cinnamon Apple Crumble.  The recipe just kinda came to me as I was out for a run.  In retrospect, there are other spices like nutmeg or cardamom, or maple syrup in place of agave, that would work really well too.

But here goes what I did…

Into the VitaGrinder went 1/2 c dry oats, ground for 10 seconds.  Then added 1/3 c almond flour (or just 1/3 c almonds and grind) and ground for 10 more seconds to blend.

Blended oats and almond flour in blender

Then, added 3 large medjools and a drizzle of agave and in 30 seconds I had my crust.

I smooshed about 2/3rd’s of the crust mixture as best I could into the bottom of a small square Gladware container, just to give ya portion perspective.  This is not a big dessert by any means.

Blended mixture pressed into clear container

Peeled & sliced one apple and laid it on top the crust

Peeled and sliced apples over blended crust mixture in clear container

Sprinkled cinnamon and a drizzle of agave over the top

Sliced apples drizzled with agave and sprinkled with cinnamon

Then took the remaining 1/3rd of the crust mixture that was still hangin’ out in the Vita canister and added another 1/4 c oats, ‘nuther drizzle of agave, dash more of cinnamon, & 2 Tbsp brown sugar (omit if you wanna be totally raw and just roll with the agave action).  Now you’ve got your Sweet Crumbly Topping.

Another squeeze o’ the agave bottle optional.  Can anything really ever be too sweet?  I think not.  Squeeze away.

And I had a solid 1/2 to 3/4 c of leftover crumble topping which I put into a bowl.  This will be great over fruit, nanna softserve, or just to munch on.

This is how Ms. Crumble was lookin’ after 8 hours in the fridge

Things got crunk up in herre when I put Ms. Crumble on top of the Nanna Softserve from the day before.  And added a very un-vegan slab ‘o Cool Whip for Scott.

Hope you enjoy the fall season with a raw vegan apple crumble….num!  Tell me what you like to make now that fall is comin’ around?

  1. You have a wonderful attitude towards life Averie – and it's certainly infectious!

I'm grateful for all the obvious stuff – food, water, health etc.

But most of all I'm grateful for the people in my life who keep me sane, know me and love me unconditionally, push me to be the best I can be, support me, care for me, and inspire me to live and love my beautiful life.

It's a very small handful but I go for quality over quantity :)

  2. FF- I didnt know you had a dehydrator, thank you for telling me…now we can swap dehyd recipes :)

Deb- go unwrap your damn Magic Box. Pronto!

Anne-thanks for sayin hi :) and on the other post too :)

Alisa-Yes, it is and thank you for your email before, sorry havent had a chance to reply.

PeaceandPB-You're welcome and it's so important to have gratitude, thanks for all who have replied to this question!

Hayley-no worries girl, when ever you have time, you've got momma in da house. And glad you think the yoga pose is beautiful :) I can't believe u didnt see the dehyd comin'. Guess Im full o surprises :)

MammaW- Well, I am nearly 5'11" so my leggies are kinda long already but thank you, longer is better :)

Glad you like my snapshot idea :) And I am gonna juice this week…ugh. I hate the freakin cleanup!! But I will make pulp crackers no problemo. I am also gonna make kale chips which is probably easier than juicing first :)

  3. Sooooo cool! What a fun raw foodie toy! I have a second hand Mr. Coffee dehydrator and it is no Excalibur, let me tell you. I want to make crackers from juice pulp! Please do that for me (yes that means you have to wash that juicer!) so I can see how to do it.

That yoga pose makes your legs look insanely long!

I definitely am careful to be grateful AND say thank you too. Sometimes I think we don't realize how powerful saying something out loud can be – to actually tell some one THANK YOU for something they've done for you, given you, etc. I really like the snap shot idea, I'm going to remember that.

  4. Oh my holy mother of all beans…how did I NOT see that coming?! Up until now I've had all the kitchen gadgets you have or recently purchased, but now that I've seen the dehydrator I'm thinking, "oooooh!!!!" Then again I do eat cooked foods so my husband would flip if I bought one. I think this is perfect for you though and I can't wait to see all the recipes you make! So far you're off to a great start. :)

I love the last part of your post about gratitude – I try to remind myself every single day how fortunate I am to have this life. Every time I think about whining or complaining I remember all the things I'm lucky for. Thanks for the reminder… :)

AWESOME yoga pose…that is truly beautiful!! If I could do a backbend (without coming up from the floor) I'd be ecstatic.

I promise to respond to your email as soon as I can! It's been busy with my mom here..

  5. Oh gosh, I'm envious of your dehydrator!! Your goodies look FABULOUS!

Thanks for the gratitude post. I am very grateful to have a loving family, and to have all four of my grandparents still with me. It is so wonderful to share their energy and wisdom :-)

  6. What timing- I have an excalibur sittiIng in a box awaiting the new kitchen unveiling! I can't wait!

I'm grateful to have a loving family and friends and a body that while imperfect, sure works pretty good at what it's supposed to do. Also, I'm tremendously grateful for the ability to enjoy a rich, full life in all the any ways I can.

That's a nice question to ask your readers.
    Deb

  7. That dehydrator is so cool! I wish I had one to make dried apple rings instead of buying them so much. And those raw cookies look amazing. Wow!

I'm grateful for my quiet apartment, a loving family even if they're far away, and the opportunity to have a major and take classes I actually like! :)

  8. I'm so excited for you! I couldn't live without my Excalibur! You made quick use of it, that's for sure!

Glad you were able to focus on all of the blessings you have. So glad you have so many : )

Here's to many fun, exciting, dehydrating, loving, yoga-filled days!

I myself am grateful that the decisions that change my life for the better are up to me.

  9. Oh and Kimberly hon, welcome back. I am so glad you and your hubs were able to get away for the first time alone, ever, since your kids. I have only used a babysitter twice in nearly 3 years…let's just say I'm an attachment parent and the thought of 4 hours away from my little girl is foreign (some days I wish it weren't a foreign concept…ya know, those days) so I can only imagine how special a trip ALONE was. After you become a parent, you're never alone are you, for good or bad, someone always needs mommy :) Hugs mama!

  10. VG and Girl on Raw-Yes, I am already lovin it and I am already so glad I got the 9 tray. To run that thing for hours on end only with 5 trays goin' seems ridic. I can already tell I need to "Batch cook" and load up those shelves! BTW are your excaliburs noisy? I didnt realize the fan is sooo loud. Wow. Hopefully you see this :)

InsideDancin' I would love to hook you up with some goodies! Glad you like the looks of things…I'm loving creating things lately soooo much, so it's been awesome! I am grateful for my blog friends too :)

Kelly-Welcome sweetie, and wow, that was an undertaking reading 60 posts or what not. Thank you!!!! I'm flattered! And so glad you're enjoying the blog…it's only gettin better and better and more fun for me so stay tuned, and yeah, the raw vegan brownies I think are hands down the most decadent food on the blog. Raw or not, vegan or not, they are rich and delicious! Thanks for not lurking as anon and sayin hi, it means alot!!! That way I know people are actually reading :)

  11. Holy Cow!! An Excalibur!! You ARE blessed:) Those cookies look like fresh baked chocolate chip cookies. Yum!

I am thankful for my family and having a vacation last week. I am trying to hang on to that feeling as long as I can:)

Love your back bend. I just got a Yoga Journal magazine and it has some poses to help work toward the wheel pose. My arms are still not strong enough, but I'm workin' on it.

  12. yea… send me one of those dehydrators!

I am totally loving your blog. In true type A style I basically went back and read every entry after discovering it last week (that's me commenting somewhere on the chia seed giveaway post) thank goodness you are a fairly new blog.

Can't wait to try that brownie batter fabulousness :)

  13. Good reminder on the gratitude Averie. After a crap day I sometimes remind myself before I goto sleep, what I am GRATEFUL for.

Good to see you got the 9 tray with timer. Lots of people go for the 5 tray as they think they won't use it, but my you will! I also bought the same one. Hey you should buy Kristen's Raw Dehydrator E book! :)

  14. You are killing me with your gadgets and fab recipes! Those cookies sound amazing…and the fruit?! Ack. If you want to move to Scotland, and set up a cafe…we can be business partners. You create, I taste-test. Sounds perfect to me :D

I am grateful to have a roof over my head, technology, my blog friends…and… I will come back to this!
