I recently received these two knives from Big Kitchen

Mercer Renaissance Forged Riveted Hollow Edge Santoku Knife, 7 Inch

and

Mercer Renaissance Forged Riveted Chef’s Knife, 8 Inch

If there’s one piece of kitchen equipment that is mandatory, it’s a good knife.

Trying to cook, chop, slice ‘n dice, and simply be productive and efficient in the kitchen is impossible without a proper knife. Lightweight, flimsy, and dull knives are intolerable and I won’t use them.

When I am in the kitchen, I tend to put one (big) knife in my hand and keep it there until everything is chopped, sliced, minced, quartered, cut, and ready. Paring knives and smaller knives have their place, but I prefer bigger knives, in general.

Don’t be scared of the Big Guns.

…Not a day goes by where I don’t have my knife and cutting board out and in use. Repeat x17 times. Before noon on most days.

These Mercer knives are built solidly, feel nice in my hands, are heavy enough but not too heavy, and most importantly, they get the chopping job done.

It was a wedding present from my cheap-o brother… I think the set of 12 (including 6 “steak” knives) ran something like $30. They function, but we have to sharpen and hone them weekly. I’m just waiting for a knife to break and then it’ll be time to get a “real” set.

  44. My favorite knife is currently a knife that’s been with my family for as long as I’ve been old enough to be trusted with a knife in the kitchen. The name brand has even been rubbed off, but the knife still cuts true each time it gets sharpened by hand.

  45. Oh my! I really need a knife! I do not have a favorite knife because I only have steak knives that are as old as dirt! I get by using them, but believe me I would love to win these! My old steak knives have been ok, but these would be GREAT!

Funny story actually… I got suckered into buying a knife set at Kroger (of all places…the horror! I am so embarrassed to admit this!) during a demo. The knives could literally chop into ANYTHING. That, or the salesman was a pro! haha. Anyway, I would LOVE a beautiful knife!

  52. My best knives are from Pampered Chef. I know, not on your radar, but they were a gift and considering what I had prior, they are pretty amazing. I use them almost daily.

  59. My current favorite is a Wusthof Classic 6″ chef’s knife. I didn’t think I’d like it because I was worried it would be too small, but it’s perfect for me. :)

  60. We needed better knifes so when I saw a deal on a Tom Douglas by Pinzon Wenger 10-Inch Butcher Knife and bought it. Despite the ugly, cheap looking handle it’s actually a pretty good knife that kind of looks like a machete. We use it for everything.

  61. I love good kitchen knives but only have one good one since my (then) 12 year old son decided to play ninja knives with my other two good ones and nicked them. *sigh. I makes a lot of different kinds of salads so this is mostly how it is used, but also use onion and garlic in most dishes and it will chop them nicely too.

  120. Haha I can’t tell you how many random experiments like weird soups have come from “well, the knife’s already out…” The knife I rely on most is an 8 inch chef’s knife I bought when I first went back to school and needed something for the food science lab.

  130. Ummmmm, I currently loathe each and everyone of my dull knives and have been on the lookout for some new ones! These look perfect!

  131. I use my basic cheapo chefs knife daily, and some things are tough to get through. I’m looking at you, spaghetti squash! These knives look like they would halve a squash in mere seconds!
