If you’re a fan of classic mojitos, you ought to give this pomegranate version a try!

Both pomegranate juice and pomegranate arils (seeds) are used to brighten up the classic drink which traditionally is made with just lime juice, mint, simple syrup, club soda, and white rum. 

This would be the perfect Thanksgiving or Christmas pomegranate cocktail! I also have a Pomegranate Punch recipe that’s great for the holidays or any type of celebration or get-together since it makes a batch.

Ingredients in a Pomegranate Mojito

For this easy mojito cocktail with pomegranate, you’ll need:  

  • Mint leaves
  • Lime juice
  • Simple syrup
  • Lime wedges
  • Pomegranate juice
  • White rum
  • Crushed ice
  • Club soda
  • Mint sprig, for garnishing
  • Lime wedge, for garnishing
  • Pomegranate arils, for garnishing

What Kind of Alcohol is in a Mojito? 

Mojitos are usually made with rum, specifically white rum. Don’t use spiced rum for this recipe, as you don’t want to overwhelm the tart lime and pomegranate flavors. 

What Is Simple Syrup? 

Simple syrup is simply a mixture of 1 part sugar to 1 part water, heated or boiled together until the sugar dissolves, less than 2 minutes usually. 

I suggest making the simple syrup with 1/2 cup granulated sugar combined with 1/2 cup water. You will have extra, but it keeps for ages in the fridge and you can use it for future cocktails.

How to Make a Pomegranate Mojito

This is a quick and easy pomegranate juice cocktail to prepare. The recipe is for a single cocktail, but I’ll give instructions later in this post on how to make a batch cocktail as well. 

  1. Begin by adding the mint leaves, lime juice, simple syrup, and lime wedges to a highball cocktail glass and muddle to release the flavor of the mint and limes.
  2. Pour in the pomegranate juice into the glass, add the ice, rum, and stir before topping off with club soda.
  3. Garnish with a mint sprig, lime wedges, pom arils, and enjoy!

Mojito Pitcher Instructions  

If you want to make a big batch of this cocktail recipe to serve to multiple guests, I suggest preparing the drink in a big pitcher.  Instead of measuring the ingredients in ounces, measure them in “parts” to scale up the recipe as desired. 

Here’s how to make a batch cocktail with this recipe: 

  1. Add the mint leaves, lime juice, simple syrup, and lime wedges to a pitcher and muddle to release the flavor of the mint and limes. You can use the end of a wooden spoon to do this! 
  2. Add the pomegranate juice. 
  3. Add the rum. 
  4. Store the pitcher in the fridge until ready to serve. Do NOT add the ice to the pitcher; as it melts it will water down the cocktail. 
  5. When ready to enjoy, fill individual glasses with crushed ice. Add the rum mixture and top off the glass with club soda.

Mocktail Option

To make a mocktail, omit the rum and add an additional ½ ounce of pomegranate juice and fill the rest with club soda.

Tips for the Best Pomegranate Mojitos

Lime juice: Always use freshly squeezed lime juice, never bottled, for the best taste.

Ice: It’s important to add the ice before the rum since liquor is usually kept at room temperature and pouring it over the ice helps to cool it down.

Muddling: If you don’t have a muddler, the handle of a wooden spoon usually works pretty well or you can slap and roll the mint between your palms to release the flavor.

Ingredients  

  • 8 mint leaves
  • 1 ounce lime juice
  • ½ ounce simple syrup*, See Notes
  • 1 or 2 lime wedges
  • 1 ounce pomegranate juice
  • 1½ ounces white rum
  • Crushed ice, as needed
  • Club soda, as needed
  • Mint sprig, for garnishing
  • Lime wedge, for garnishing
  • Pomegranate arils, for garnishing

Instructions 

  • Add the mint leaves, lime juice, simple syrup, and lime wedges to a highball cocktail glass and muddle to release the flavor of the mint and limes. Tip - If you don’t have a muddler, the handle of a wooden spoon usually works pretty well or you can slap and roll the mint between your palms to release the flavor.
  • Pour in the pomegranate juice.
  • Fill the glass all the way to the top with crushed ice and add the rum. Stir with a bar spoon.
  • Top off with club soda and garnish with a mint sprig, lime wedge, and pomegranate arils. Add a straw next to the mint garnish and enjoy immediately.

Notes

*Simple syrup is simply a mixture of 1 part sugar to 1 part water, heated or boiled together until the sugar dissolves, less than 2 minutes usually.  I suggest making the simple syrup with 1/2 cup granulated sugar combined with 1/2 cup water.
