Merry Christmas to everyone who celebrates!!!!!!!!!!!!!!!!!!  I wish you a blessed day, a happy day, a time to just be with your loved ones.  I hope you can take time to reflect upon Chritmas’ past, and create new memories going forward as you cherish special times with your families and friends on Christmas Day today!

We’ve had a great day!  And it’s only just past 10am!  Santa made his way all the way to Aruba, can you believe it??!!  And what did he bring?  Other than the $150 airline fee for an international overweight baggage fee…but hey, some things are just non-negotiable like gifts for good little girls!

Stack of wrapped Christmas presents

Well, he brought a Bear

White Teddy Bear sitting in chair

And some Markers, Crayons, and Art Project Supplies

Young girl unwrapping presents

Young girl wearing pink unwrapping presents

And Dr. Seuss books

And Dress Up Clothes For the American Girl Bitty Baby that she already opened

And Princess-Themed markers and a coloring book

Skylar absolutely relished every single second of Christmas Morning!  She will be 3 years on February 2nd, so such a magical little age for Santa and the Magic of Christmas.

One of the best things about becoming a mother is reliving my own childhood, but through my child’s eyes.  I am both a little girl as I recall the Christmas mornings when Santa brought me Barbie Dream Cars and Esprit sweaters…

...and I am this little girl’s mother.

Young girl standing playing with a toy

A girl at heart, able to feel the wonder of the season, and mother to a little girl who feels the magic of Santa.

Woman smiling watching young girl unwrapping presents

That’s the beauty of parenthood and I was once that girl who said, “I’m never having kids.”  Now, I am that woman who says, “Oh My God, Thank You for this Gift.  This child, this journey, this blessing, Thank You.”

And to me, that’s what Christmas is all about.

Sorry about the shameless plugs.  Really, I am!

So let’s move onto a little grub…
Friday I made a Stir Fry with this Mix I picked up.  Bami Mix.  And it was about just over 2 bucks in American dollars.  What a deal.

Bami Mix in package

Bami?  What’s in it?  It was a mix of cabbage, carrots, red, yellow, and green peppers, and white onions.  That I threw in a sautee pan and let wilt for a few minutes.

Bami mix in saute pan

Then I added some Italian Salad dressing.  About 1/4 c worth.

Bottle of Wishbone House Italian Salad Dressing

Bimi Mix with Dressing

And a dash of cumin and a dash of the trusty Ginger I brought from home

Hand holding ground cumin and ginger containers

A dash to me is about 1/2 Tsp each.  Your mileage may vary.

Bimi Mix topped with cumin and ginger

Stir and simmer for a couple more mintues and add some nuked rice.  You could of course make rice and add it. I chose not to, I’m on vacay and the fact I am cooking at all is about all I can handle.

And no meal would be complete without a kale saladKale, sugar snap peas, brock, cauli, & cukes.

This was a great vegan dinner!  It took less than 15 minutes to make.  It was flavorful, healthy, simple and good.  A crowd family-pleaser!

Tip of the Day:

Did Santa or your loved ones, relatives, or friends bring you any gifts this holiday season?  Did you like what you received?  What do you do when you’re opening a gift in front of someone and you’re not super fond of what they gave you?  A too big track jacket in split pea soup green or the notorious Ugly Christmas Sweater?  Do you smile, be gracious, and just know that you’re either going to try to return it or just re-gift it?  Or donate it to someone who could use it?

Speaking of re-gifting….do you?  What have you re-gifted?  I’ve re-gifted baby & children’s clothes.  There was a time when Skylar received so many little tiny baby clothes and there was no way she was ever going to wear the same thing twice, so rather than cutting the tags off, I saved the extra outfits in a drawer and when I go to baby showers, if I know the woman is having a girl, I happen to have a stash of little girls’ baby clothes!  Now watch, no one will invite me to their baby shower for fear of a re-gifted outfit (but they weren’t worn, I promise)! Tell me about gifts your received or gave, regifting, to regift or not to regift?

  1. I want to buy some delicious sun warrior protein powder and make overnight oats so i can FINALLY see what you're always raving about :)

  2. Yoga helps a person a lot concerning his health. Just enjoy and keep your mind from anxiety and problems. Learn Yoga and feel life naturally.

  3. I've just recently purchased Gluten Free products from Bob's Red Mill. I also buy Goats Milk Protein among other items. This $50 would be perfect, I've been wanting to try the Larabars!

  4. I like the thing that you *hid*, oh, stored in the freezer. Oatmeal overload!!

Here are my oatmeal favorite recipes!!

    Oatmeal Waffles recipe – yum!

    1 1/2 C. quick oats
    1/2 C. whole wheat flour
    1 t. soda
    1 t. sugar – Combine
    1/2 t. salt
2 C. buttermilk ** (can add 2 t. applecider vinegar to regular low fat milk)
    2 eggs
    2 T. melted margarine
    Combine, Add to dry ingredients

Cook in waffle iron. (You don't need to oil the waffle
iron, due to the melted margarine in the recipe.) Try it!

I typically make a double batch, store them in the fridge
    and away they vanish…

    Oatmeal Pancakes

    1 1/2 C. Quick Oats
2 C. Milk …..Pour milk over oats and let stand for 2 minutes.

    1/3 C. Oil
    2 eggs beaten …..Add

    3/4 C. All Purpose Flour
    2 T. sugar
    2 1/2 t. baking powder
1 t. salt ……Add, then get out your pan/griddle, and make the pancakes.

I typically make a double batch (double all ingredients), because these don't last
    very long, either…

Turkey Meatloaf – 350 degrees 45 min to 1 hour
    1 – 1 1/2 lb ground Turkey
1 small onion – cut into small pieces
    1 – 1 1/2 C. Oatmeal
    1 egg or egg white
1/2 C to 1 C either, BBQ sauce or Ketchup or plain

Mix together, place into greased loaf dish. Placed into oven
at 350 degrees. Cook for 45 minutes to an hour. Let cool
for 5 – 10 minutes. Can be used for sandwiches, if there
are any leftovers! Or for next day lunch.

I'll buy a 48 ounce pack of ground turkey at HEB or Walmart
and make Turkey Burgers, then with the rest of the turkey,
make the turkey loaf. Incidently, I use the SAME ingredients
for making my Turkey Burgers with the exception of leaving
out the BBQ sauce. YUM! Hubby likes the Turkey loaf, because
regular ground beef gives him a bit of tummy upset, and son likes
the Turkey burgers because of the onions in the burgers.
I like them, because it tastes good, and it cleans up easy!

  60. you said it perfectly. i feel that one can get even a better workout without weights (look at your yoga! ) but she wanted them, so i just gave it to her. and re: that person in the office blabbering on about what works your abs teh best, total body exercises, this makes it burn the best…all while i was quiet..yeah, i don't know how long she has been working out, but i guess taking an intense fitness class makes her an expert and me not so much. i get the feeling that when i'm around she feels like she has to try to show me (not like she has to, i can't do some stuff) but i get that feeling. my philosophy is always ALWAYS saying when i don't know. never trying to make myself an expert on anything..ALWAYS coming to everything as a student, nothing more.
